4 cups Easy Mac and Cheese, recipe follows
8 slices country white bread, buttered
4 slices American cheese
8 slices thick-cut smoked bacon, cooked
2 Roma tomatoes, sliced into 1/4-inch slices, optional
Hot sauce, such as Frank's, optional
8 ounces elbow macaroni
Kosher salt
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
3 cups milk
8 ounce processed cheese, such as Velveeta
1 1/2 cups shredded sharp yellow Cheddar
Splash hot sauce, or pinch of cayenne
Freshly ground black pepper

Steps:

  • Evenly spread the Easy Mac and Cheese in an 8-inch square baking dish. Cover the dish with plastic wrap and refrigerate until firm, about 1 hour. Cut the mac and cheese into 4 equal-size squares.
  • Preheat a griddle over medium-low heat. Place each mac and cheese square on a slice of bread, top with 1 slice American cheese and 2 slices bacon. Top with a second piece of bread and griddle the sandwich until golden and warm, about 4 minutes per side. Repeat with the remaining ingredients. Serve.
  • For the adults, toss the tomatoes in some hot sauce and add on top of the bacon before griddling your sandwich.
  • Cook the macaroni in a large pot of boiling salted water to al dente and drain.
  • Melt the butter in a medium saucepot over medium heat. Whisk in the flour and stir for a couple of minutes, making sure it's free of lumps and the flour taste is cooked out. Stir in the milk, bring to a simmer and cook over medium-low until thickened, about 5 minutes. Stir in the processed cheese and Cheddar until melted, add the hot sauce and fold in the macaroni. Sprinkle with salt and pepper.

1 pizza dough (or ready-made pizza crust)
8 ounces smoked mozzarella cheese, cut into 1/4 thick slices
4 cups arugula leaves, packed (it seems like a lot now, but it gets wilted down during the cooking process)
8 slices prosciutto
1/3 cup goat cheese, crumbled
2 tablespoons lemon juice (about 1 lemon)
1/4 cup extra virgin olive oil

Steps:

  • Preheat grill. Brush grates with vegetable or corn oil.
  • In a small bowl, whisk together the 2T lemon juice and extra virgin olive oil. Place arugula leaves into a large bowl, and dress it with the lemon vinaigrette. Toss to mix well. Set aside. [I know it may seem like a lot of arugula at this point, but it will wilt down during the cooking process.].
  • Roll out pizza dough according to your recipe or store bought instructions. Once the grill is hot (you can hold your hands an inch over the grates for no more than 2 or 3seconds), carefully place the pizza dough onto the grill. Grill for about two minutes on one side. The pizza dough will also immediately puff up. Flip the pizza dough onto the other side and grill for another two minutes. Remove from grill onto a cookie sheet with tongs. Close the lid of the grill to retain its heat. [If you are using a ready-made pizza crust, cook it for two minutes on each side to get the grill marks and flavor.].
  • Place slices of smoked mozzarella around top of the pizza crust. And then in this order, spread all of the arugula leaves around, layer with prosciutto slices, and top with crumbled goat cheese.
  • Place the cookie sheet onto the grill and close the lid. [This allows for the toppings to cook without burning the pizza crust.] Cook for about five minutes, or until the cheese has melted, the arugula has wilted, and the prosciutto has crisped up a little. Carefully remove the cookie sheet from the grill. Using tongs, slide pizza onto a cutting board. Using a sharp knife or pizza slicer, slice the pizza and enjoy!

For the sauce:
1/2 cup mayonnaise
3 tablespoons sour cream
3 tablespoons roughly chopped fresh basil (or chives, parsley, mint)
1 scallion (white and green parts), trimmed and roughly chopped
1 garlic clove, quartered
1/2 teaspoon Worcestershire sauce
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
For the burgers:
1 1/4 pounds 80% lean ground beef
1 tablespoon vegetable oil
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 cup shredded mozzarella cheese
4 hamburger buns
1 tomato, cored, thinly sliced, and lightly salted
2 tablespoons grated Parmesan cheese

Steps:

  • To make the sauce: Place the mayonnaise, sour cream, basil, scallion, garlic, Worcestershire sauce, salt, and pepper in the bowl of a food processor and puree until creamy and pale green. Transfer to a small bowl, cover with plastic wrap, and refrigerate until you are ready to use it.
  • To make the burgers: Heat a charcoal or gas grill to medium-high. Divide the ground beef into 4 equal pieces and gently form into patties. Use your thumb to make a small indentation in the middle of each burger (this is so the burger grills flat and doesn't contract and puff up on the grill). Brush both sides of the burgers with the oil and then season with salt and pepper.
  • Place the burgers on the grill and cook until they have grill marks, about 4 minutes. Flip the burgers, cook 2 minutes longer, and then top each with about 1 tablespoon of the mozzarella. Cook the burgers 2 more minutes for medium-rare doneness and remove from the grill. Place the buns on the grill, cut side down, and lightly toast, 30 seconds to 1 minute.
  • Set a burger on each bottom bun half. Top with a salted tomato slice. Spread 1 tablespoon of the garlic-herb sauce on the top bun half, sprinkle with Parmesan, cover the burger, and serve with more sauce on the side for dipping.
