TUSCAN HALIBUT WITH GRILLED PEPPERS AND OLIVES



Tuscan Halibut with Grilled Peppers and Olives image

4 (6 to 7 oz.) halibut fish fillets
2 tablespoons extra-virgin olive oil, divided
1/2 teaspoon Kosher or sea salt
1/2 teaspoon freshly ground black pepper
2 red bell peppers, cut lengthwise into 6 thick strips
2 yellow bell peppers, cut lengthwise into 6 thick strips
1 cup quartered Lindsay® Pimiento Stuffed Spanish Manzanilla Olives

Steps:

  • Heat grill to medium-high heat. Arrange fish on a rimmed baking sheet; brush 1 tablespoon of the oil over both sides of fish. Sprinkle salt and pepper over fish.
  • In a small bowl, toss pepper strips with remaining olive oil to coat. Grill peppers turning once, until light grill marks appear, about 2 minutes per side. Transfer to a platter or rimmed baking sheet and keep warm.
  • Grill fish on covered grill 3 minutes per side or until fish is opaque in center. Arrange peppers on four warmed dinner plates. Place fish over peppers; top with olives.

HALIBUT WITH TUSCAN BEANS AND ENDIVE

4 tablespoons extra-virgin olive oil
2 heads endive, quartered lengthwise
1 teaspoon sugar
1 small red onion, thinly sliced
1/2 cup prepared roasted peppers, drained and roughly chopped
1 clove garlic, roughly chopped
1 15-ounce can cannellini beans, drained and rinsed
1 cup low-sodium chicken broth
1 small sprig rosemary, chopped
4 6-ounce halibut fillets, with skin
Kosher salt and freshly ground pepper
1 handful fresh parsley, torn

Steps:

  • Heat 2 tablespoons olive oil in a medium skillet over medium heat. Add the endive quarters, sprinkle with sugar and cook, tossing a couple of times, until lightly browned, about 2 minutes. Add the red onion, peppers and garlic and cook until the endive is wilted, about 2 more minutes. Raise the heat to high, add the beans, broth and rosemary and continue cooking, mashing some of the beans with a spoon to thicken the sauce slightly, 2 to 3 minutes.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Season the halibut fillets with salt and pepper; place skin-side up in the pan and cook until golden, about 4 minutes. Turn and cook until firm but still translucent in the center, 4 more minutes.
  • Place the halibut fillets in 4 shallow bowls and spoon the beans and endive on top. Garnish with parsley. Photograph by Antonis Achiellos

I love Italian and I love Halibut so decided to join the two in marriage. It turned out delicious, so decided to share it with you, my "zaar" friends. It's simple and delicious. I miss living in Seattle mostly for all the fresh fish and seafood, but don't miss the grey!!

3/4 cup dry white wine (like chardonnay, drink the rest with dinner)
4 halibut fillets
3/4 cup extra-virgin olive oil
3 tablespoons italian seasoning
1 tablespoon fresh Italian parsley
2 tablespoons chopped fresh basil leaves
1/3 cup finely chopped shallot
2 minced garlic cloves
1/2 cup grated parmesan cheese

Steps:

  • Place halibut fillets in white wine and marinate for ~20 minutes.
  • Mix the olive oil, Italian seasoning, parsley, basil shallots, garlic and Parmesan cheese together in a bowl.
  • Coat the halibut with the herb mixture and place fish on oil sprayed oven tray. Place in 450F oven for ~14-16 minutes, or until fish is opaque. (Can also be cooked on medium on a grill.).

2 (4 ounce) halibut fillets
6 scallops
6 peeled and deveined jumbo shrimp, tail still attached
⅓ cup dry white wine
2 tablespoons melted butter
1 tablespoon lemon juice
½ teaspoon seafood seasoning, such as Old Bay™
1 teaspoon minced garlic
Salt and pepper to taste
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange the halibut, scallops, and shrimp in an oven-safe, glass baking dish. Drizzle with wine, butter, and lemon juice. Sprinkle with the seasoning and garlic. Season to taste with salt and pepper.
  • Bake in preheated oven until the halibut has turned white, and is flaky, 10 to 12 minutes. Sprinkle with parsley just before serving.
