8 slices monterey jack cheese (about 5 ounces total)
4 slices ham (thin slices)
8 teaspoons sour cream
8 corn tortillas
1 (8 ounce) can tomato sauce
1/2 cup picante sauce

Steps:

  • Cut each slice of ham into four pieces.
  • Place 1 slice of cheese, 2 squares of ham, and 1 teaspoon of sour cream on 1 of the tortillas. Fold in half, then in half again (should be shaped like a wedge). Repeat with remaining cheese, ham, sour cream, and tortillas.
  • Arrange "turnovers" in a shallow greased baking dish. In a small bowl combine tomato sauce and picante sauce. Pour over tortillas.
  • Bake at 350 degrees for about 20 minutes.

For that fast Dessert, so easy and absolutely deelish! This is something you can make with any Canned Fruit Pie Filling you like, Apple, Blueberry or Cherry!

flour tortillas (one per person)
cinnamon, mixed with sugar
canned fruit pie filling
butter for frying
cool whip for topping

Steps:

  • 1. Select the type of canned fruit pie filling you want, I used Apple, but you can use Blueberry or Cherry too! 1 Flour Tortilla per person
  • 2. Place at least two tablespoons of canned fruit pie filling on one half of the flour tortilla, fold over other half. Make sure not to overfill with fruit pie filling, you don't want it spilling out. Melt at least two tablespoons of butter in your frying pan,on Medium heat.
  • 3. Place the turnover in the melted butter, then quickly turn over, now the buttered side is up, shake on your cinnamon/sugar, fry till its a nice brown, turn over and now shake the cinnamon/sugar on the other side and fry till it a nice brown. Place on serving plate and top with a dollop of cool whip.

TURNOVERS:
4 flour tortillas
3 large granny smith apples, diced (peeled if you prefer)
1 c chopped or sliced almonds
1/2 c chopped pecans
1/4 c sugar
2 Tbsp agave nectar
stevia to taste
1 Tbsp butter
1/2 lemon, squeezed
1 tsp cinnamon
1/4 tsp salt
ICING:
3 Tbsp powdered sugar
1/2 tsp vanilla extract
enough milk to create icing consistency

Steps:

  • 1. Preheat over to 400 degrees.
  • 2. Melt butter in large skillet, then add apples and lemon juice.
  • 3. Cook for 5-7 minutes to tenderize, then add nuts, sugar, agave, stevia, cinnamon, and salt.
  • 4. Continue cooking, adding a few TB of water as needed to make it close to a "pie filling" consistency.
  • 5. Place 1/4 filling mixture onto tortilla and fold in half. Make 4 turnovers and place on greased baking sheet.
  • 6. Spray the tops of turnovers with oil or baste lightly with butter.
  • 7. Bake for 8-10 minutes until lightly browned.
  • 8. While turnovers are baking, prepare the icing by mixing powdered sugar, vanilla & milk in small bowl.
  • 9. Allow to cool for a few minutes before drizzling icing over the tops. Serve warm.

EASY CRISPY TACO TURNOVERS

These are pretty easy, tasty and are a great appetizer or snack before the football games start, or you could even add beans/rice and Margaritas for a meal! For a more South-of-the-Border taste, add some diced Jalapeno peppers or green chilies before frying these. ;)

1 lb lean ground beef (can use ground turkey if you like)
1/2 cup chopped onion
1 clove garlic, minced or pressed (optional)
1 teaspoon salt
1/2 teaspoon chili powder (I like mine spicy and use a little more)
2 cups shredded monterey jack cheese (or cheese of your choice)
1 cup diced tomato
1 cup diced jalapenos or 1 cup green chili (optional)
4 large wheat flour tortillas
oil, for frying

Steps:

  • Brown together the ground beef or turkey, onion and garlic in a heavy frying pan over medium heat, until meat looses pinkness.
  • Add salt and chili powder to meat, mixing well.
  • Put 1/2 cup of the ground beef filling, 1/2 cup of cheese, and 1/2 cup of tomatoes onto one half of each tortilla adding your jalapeno/green chilies now if you want to use them.
  • Fold the other half of tortilla over and press to remove any air pockets.
  • Heat oil in pan to medium high, and when hot, place filled tortillas into the pan 1 or 2 at a time, size of pan permitting.
  • Saute over medium high heat until golden brown on each side, approximately 45 seconds per side.
  • Remove and place on paper towels to remove any excess oil.
  • Cut into wedges and serve!
