Nonstick cooking spray, for the baking pan
One 28-ounce bag frozen french fries
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1 1/2 cups beef broth
2 tablespoons heavy cream
2 cups shredded mozzarella

Steps:

  • Preheat the oven to 425 degrees F (or the temperature indicated on the package of french fries). Spray a large rimmed baking pan with cooking spray.
  • Spread the fries in the pan in a single layer and spray with cooking spray. Sprinkle with salt and pepper. Bake according to the package directions or until very crispy.
  • Meanwhile, melt the butter in a small saucepan over medium heat. Add the flour, garlic powder, onion powder and paprika and cook, stirring, 1 minute. Slowly add the broth while whisking constantly and occasionally stirring with a rubber spatula, making sure to get into the edges of the pan, until all of the broth has been incorporated. Add the cream and increase the heat to medium-high to bring to a rapid simmer. Simmer, stirring often, until slightly thickened, about 5 minutes. Season with salt and pepper to taste.
  • Transfer half of the fries to a small rimmed baking pan or oven-safe platter. Top with half of the cheese, then add the remaining fries and the rest of the cheese. Return to the oven and bake until the cheese is melted, about 5 minutes. Drizzle the fries with some of the gravy. Serve immediately.

1 1/2 lbs. (about 2 medium) turnips
12 oz. (about 1 medium) russet potato
1/3 cup shredded reduced-fat cheddar cheese
1/3 cup chicken or turkey gravy
Optional seasonings: salt and black pepper
Optional topping: chopped chives

Steps:

  • Preheat oven to 425 degrees. Spray 2 baking sheets with nonstick spray.
  • Cut turnips and potato into fry-shaped spears, and evenly place on baking sheets. Bake for 15 minutes.
  • Flip spears. Bake until tender and crispy, about 15 more minutes.
  • Closely arrange spears on the center of the sheets. Top with cheese and bake until melted, about 3 minutes.
  • Heat gravy in a microwave-safe bowl in the microwave or a small nonstick pot on the stove.
  • Serve fries with gravy for dipping.

CRISPY TURNIP 'FRIES'

My daughters and I are on a low-carb diet and were looking for something to curb our 'French fry' cravings. I've heard that turnips can be made into some great 'fries.' I experimented with it and came up with this. You can add whatever spices you'd like.

3 pounds turnips
1 tablespoon vegetable oil
⅓ cup grated Parmesan cheese
1 teaspoon garlic salt
1 teaspoon paprika
1 teaspoon onion powder

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a piece of aluminum foil and lightly grease.
  • Peel the turnips, and cut into French fry-sized sticks, about 1/3 by 4 inches. Place into a large bowl, and toss with the vegetable oil to coat. Place the Parmesan cheese, garlic salt, paprika, onion powder in a resealable plastic bag, and shake to mix. Place the oiled turnips into the bag, and shake until evenly coated with the spices. Spread out onto the prepared baking sheet.
  • Bake in preheated oven until the outside is crispy, and the inside is tender, about 20 minutes. Serve immediately.
