This recipe has fewer calories because of the ground turkey and amazing flavor! It is a little spicy, but our family enjoys it this way. Because it has so much flavor, you cannot even tell it's not ground beef. It tastes great as a topping on baked potatoes as well as tacos. Enjoy!

1 ½ tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried oregano
¼ teaspoon cayenne pepper
1 (12 ounce) package ground turkey
½ cup water
1 tablespoon cider vinegar
1 ½ teaspoons brown sugar

Steps:

  • Mix chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano, and cayenne together in a small bowl.
  • Cook turkey in a large nonstick skillet over medium heat, stirring to break up clumps, until no longer pink, 3 to 5 minutes. Stir in chili powder mixture and water. Reduce heat and simmer, stirring occasionally, until most of the liquid has been absorbed, about 10 minutes.
  • Stir cider vinegar and brown sugar into the skillet. Simmer until flavors combine, 3 to 4 minutes. Transfer to a serving bowl.

After buying a supersized package of ground turkey, I made this spicy taco turkey meat loaf using what I had on hand. It's now become a family favorite! I serve it for tailgating parties and it's delicious the next day for sandwiches. —Holly Battiste, Barrington, New Jersey

2 large eggs, lightly beaten
1 cup cooked brown rice
1 medium onion, grated
1/2 cup shredded Monterey Jack cheese
1/4 cup dry bread crumbs
1/4 cup grated Romano cheese
1/4 cup tomato sauce
1 envelope taco seasoning
2 garlic cloves, minced
1/2 teaspoon pepper
3 pounds ground turkey
TOPPING:
1 cup tomato sauce
1/2 cup shredded Monterey Jack cheese
1/4 cup grated Romano cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 10 ingredients. Add turkey; mix lightly but thoroughly. Shape into two 7-1/2 x 4-1/2-in. loaves. Place in a greased shallow baking pan., Bake 1 hour. Mix together topping ingredients; spread over loaves. Bake until a thermometer reads 165°, 10-15 minutes longer. Let stand 10 minutes before slicing., Freeze option: Bake meat loaves without sauce. Securely wrap and freeze cooled meat loaves in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaves and place in a greased shallow baking pan. Prepare topping as directed; spread over meat loaves. Reheat meat loaf in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°. Let stand 10 minutes before slicing.

I make this at least 4 times a month. We get our ground turkey in bulk at Costco in the 4 pack. This recipe is for one pack, but we usually double it since I use it for taco salads, while my husband throws it in a tortilla for a snack. IF YOU DON'T LIKE SPICY....change out the Rotel's variety to the the mild or the Mexican (tomatoes, lime, and cilantro) style. This is a basic recipe, so play with the spices and the Rotels for the taste you like. Ours never tastes the same, since some times we want the meat more spicy, and not so much others.

1 (1 1/4 lb) package ground turkey
1 onion, diced
2 -3 garlic cloves, minced
1 (14 ounce) can tomatoes and green chilies, like Original Rotel
1 (14 ounce) can tomatoes and habaneros, like Hot Rotel
1 teaspoon oregano
1/2 teaspoon dried cilantro
1 teaspoon chili powder, more to taste
1/2 teaspoon Mexican chili powder
1/2 teaspoon paprika
1 teaspoon ground cumin, more to taste
1/2 teaspoon salt, more to taste
1/4 teaspoon white pepper, can use black if you don't have white on hand
1/2 cup dark beer

Steps:

  • In a skillet, add the meat and onions -- NO OIL. Brown the meat until almost no more pink, then add the garlic and finish cooking.
  • Drain the meat in a colander, and rinse with water.
  • Return the meat to the skillet and add the remaining ingredients. Stir together and let simmer until the beer cooks down.
  • Taste after it reduces by about half, and adjust the seasoning to taste.
  • Serve as tacos or on a salad, or store in the fridge or freezer until ready to use.

1/2 yellow pepper
1/2 red pepper
1 chipotle chile in adobo
1/4 cup red onion
4 garlic cloves
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon black pepper
1 lb ground turkey
1/4 cup sour cream
1/4 cup cream cheese
1/4 cup cilantro

Steps:

  • Chop jalapeno, peppers and onion.
  • Mix jalapeno, peppers and onion with minced garlic, turkey, chili, cumin and black pepper.
  • Heat skillet to high and cook turkey mixture until no longer pink.
  • Remove skillet from heat and stir in sour cream, cream cheese and cilantro.

Before Cooking:
1/2 tbsp garlic salt
1 tsp taco seasoning
1 tbsp chopped onions (dried)
1/4 tsp cayenne pepper
Pepper to taste
After Cooking:
1/2 cup water
2 tbsp taco seasoning

Steps:

  • Put the garlic salt, taco seasoning, chopped onions, cayenne pepper and pepper on the turkey meat. Cook until gray. Drain the grease and put in the water and taco seasoning. Keep on low until serving time.
