1 loaf (1 pound) frozen bread dough, thawed
3/4 pound Italian turkey sausage links, casings removed
1/2 cup sliced onion
1/2 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1/2 cup pizza sauce
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 400°. With greased fingers, press dough onto a 12-in. pizza pan coated with cooking spray. Prick dough thoroughly with a fork. Bake until lightly browned, 10-12 minutes., Meanwhile, in a large skillet, cook the sausage, onion, mushrooms and green pepper over medium heat until sausage is no longer pink, 6-8 minutes, breaking up sausage into crumbles; drain., Spread crust with pizza sauce. Top with sausage mixture; sprinkle with cheese. Bake until crust is golden brown and cheese is melted, 12-15 minutes longer., Freeze option: Wrap and freeze cooled pizza. To use, thaw overnight in the refrigerator. Unwrap; bake on a pizza pan at 400° until heated through, 18-22 minutes.

This is a really simple pizza recipe, so much better than store-bought or even delivery. I love to make this pizza for our Saturday night movie! I use my recipe for Recipe #142364 for a topper on this recipe. Cook time includes time to rise. Mmmmm...so good!

1 tablespoon dry yeast
1 1/2 cups warm water (105-115F)
1 1/2 cups white flour
2 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon sugar (optional)
2 tablespoons olive oil
14 1/2 ounces whole tomatoes, crushed
1/4 fresh basil leaf, torn
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 garlic clove, crushed and minced
2 tablespoons extra virgin olive oil
1 lb Italian turkey sausage
1 cup mozzarella cheese, shredded
1 cup colby-monterey jack cheese, shredded
1/4 cup parmesan cheese, grated
1 large red onion, chopped
10 large white mushrooms, sliced

Steps:

  • Mix yeast and water in a large bowl; place in warm spot for about five minutes.
  • Sift flour, salt, and sugar into the yeast. Mix well, then add olive oil and form a soft ball.
  • Knead on floured surface until soft and elastic (about five minutes).
  • Shape into ball and place in a lightly oiled bowl.
  • Cover with a clean towel and place in a warm spot for about one hour.
  • Punch down dough and reshape into ball. Cover and let sit another 20 minutes, or until it rises again.
  • Preheat oven to 375 degrees.
  • Shape dough into flat round shape and stretch onto pizza pan or hand toss and place on floured surface.
  • Press fingertips into surface of dough until entire surface is dimpled.
  • Brush olive oil over entire surface of pizza dough.
  • Combine tomatoes, basil, 1 tsp salt, garlic and onion powder, and garlic together.
  • Divide and spread evenly over dough.
  • In layers add sausage, onion, mushroom, and cheeses.
  • Sprinkle crust with left over parmesan cheese.
  • Bake in oven for 25 minutes or until crust is golden and cheese is gooey.
  • Remove from oven and let rest for 5 minutes before slicing.

When chef and Chopped judge Alex Guarnaschelli set out to write her third book, Cook with Me, she organized it around a simple idea: What are her favorite dishes to make at home when she's off duty? That meant featuring some newer recipes (like her naturally colored red velvet cake) alongside dishes from her childhood, like pork pizzaiola. Alex's mom, legendary cookbook editor Maria Guarnaschelli, used to make the hearty Neapolitan dish the moment the temperature dipped even slightly. "It was such a strange, indulgent thing, this pot of meat," Alex says, "but somehow it made sense." To update the pizzaiola, Alex used pork shoulder, which is fattier and less expensive than the pork chops her mom favored, and she added fish sauce for an unexpected layer of flavor. The dish is delicious on its own or ladled over pasta, polenta or meatballs.

1 tablespoon extra-virgin olive oil
1 pound spicy Italian pork sausages (about 4)
2 pounds boneless pork shoulder, cut into 2 1/2- to 3-inch chunks
Kosher salt
2 medium yellow onions, halved and thinly sliced
4 large garlic cloves, thinly sliced
1 teaspoon dried red pepper flakes
3 cups dry white wine
1 (28-ounce) can peeled whole tomatoes
1 pint cherry tomatoes, stemmed
2 anchovy fillets, coarsely chopped
1 tablespoon fish sauce
1 pound farfalle pasta
2 tablespoons unsalted butter, at room temperature
1 cup finely grated Parmesan cheese
1 tablespoon red wine vinegar
1/2 cup fresh basil leaves

Steps:

  • Preheat the oven to 350˚ F.
  • Cook the sausages: Heat a Dutch oven over high heat and add the olive oil. Use a pair of metal tongs to arrange the sausages in a single layer in the hot oil. Reduce the heat to medium and brown the sausages on all sides until they are cooked through, 8 to 10 minutes. Transfer the sausages to a plate and set aside.
  • Cook the pork shoulder: Season the chunks of pork shoulder on all sides with salt. Add the pork to the Dutch oven in a single layer and brown it on all sides, 5 to 8 minutes on each side. Stir in the onions, garlic and red pepper flakes. Cook, stirring occasionally, until the onions are translucent, 8 to 10 minutes. Add the white wine and cook, stirring often, until all of the liquid cooks out, 12 to 15 minutes. Stir in both the canned and fresh tomatoes, along with the anchovy fillets and fish sauce. Cover the pot and place it in the center of the oven. Cook until the meat is tender when pierced with the tip of a knife, 2 to 2 1/2 hours.
  • Finish the meat: Remove the pot from the oven and use a large spoon to skim off any excess fat or impurities from the surface. Let the sauce rest on the stovetop on low heat while you cook the pasta.
  • Cook the pasta: Fill a large pot with 4 quarts water and bring it to a rolling boil over high heat. Add 4 tablespoons salt and bring the water back to a boil. Taste the water. It should be salty like seawater. Add the pasta and cook, stirring it with a large slotted spoon to ensure it does not clump or stick to the pot, until it is al dente, 8 to 10 minutes. Drain the pasta, place it in a large bowl and toss it with the butter and a pinch of salt.
  • Finish the dish: Stir the sausages into the sauce and then stir in the Parmesan, red wine vinegar and basil leaves. Taste for seasoning. Divide the pasta among individual bowls and serve the sauce and meat ladled over it, or serve it in a large bowl family-style.

2 teaspoons garlic powder
1-1/2 teaspoons fennel seed, crushed
1-1/2 teaspoons sugar
1 teaspoon salt

  • In a bowl, combine the turkey, garlic powder, fennel seed, sugar, salt, oregano and pepper. Cover and refrigerate for at least 8 hours or overnight. Shape into eight patties. PIZZAIOLA SAUSAGE SANDWICH

I came across an old binder with some recipes I made years ago. I will be posting these recipes in the future. When I lived in NY, these were favorites that I made often and had forgotten all about. This is one that I used to make for football and hockey games when friends would come over. If you don't like marinated artichokes, you can leave them out. The sandwich should still be good. Artichoke hearts are one of the many things I love to experiment with, and they add so much to this great sandwich. To reduce some fat grams and calories, I used turkey sausage.

1 lb turkey sausage
2 teaspoons olive oil
1/4 cup chopped onion
1 red bell pepper, roasted, sliced
6 ounces marinated artichoke hearts
2 garlic cloves, chopped
6 plum tomatoes, cut into 1/4 inch dice
1/2 teaspoon italian seasoning
4 tablespoons chopped fresh basil
salt
fresh ground black pepper
4 large French rolls
1 cup shredded cheese (I used mozzarella and cheddar)

Steps:

  • Brown sausage slowly, rendering as much grease as possible and drain.
  • Sauté onions, red pepper, artichoke hearts, garlic in olive oil until crisp-tender, about 3-4 minutes. Add tomatoes, Italian seasoning, basil and sausage. Reduce heat and simmer until it is of the right consistency. Add salt & pepper to taste.
  • Meanwhile, cut tops off rolls and hollow them out. Then place in 350°F oven for a few minutes until crusts are crisp.
  • Fill each roll with sausage/vegetable mixture. Sprinkle cheese atop each roll and place under broiler just until cheese starts to melt.
