Delicious sausage-and-eggs breakfast is impossibly easy when it's baked all in one pan.

1 package (12 oz) bulk pork sausage
1 small bell pepper, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 1/2 cups frozen shredded hash brown potatoes
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
1/8 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.
  • In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese; bake 1 to 2 minutes longer or just until cheese is melted. Let stand 5 minutes before serving.

2 (9 inch) refrigerated unbaked pie crusts
1 (7 ounce) package Jones Dairy Farm All Natural Golden Brown® Sausage Links, cooked according to package directions, cooled and cut into small pieces
5 eggs, beaten
1 (10 ounce) package frozen mixed vegetables, thawed
1 cup shredded Cheddar and Jack cheese
Salt and black pepper
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F. Place 1 pie crust into an ungreased 9-inch pie plate.
  • Mix prepared sausage, 5 eggs, mixed vegetables and cheese together in bowl; season with salt and pepper. Pour into crust. Top with remaining pie crust and crimp edges to seal. Cut 3 slits in top crust. Brush with remaining 1 beaten egg.
  • Bake for 35 to 37 minutes or until internal temperature reaches 165 degrees F. If needed, cover pot pie with foil to prevent top crust from over browning.
  • Let stand for 10 minutes before cutting and serving.

6 ounces uncooked spaghetti
5 tablespoons grated Parmesan cheese
1/2 cup egg substitute
3/4 pound lean ground turkey breast
1 medium onion, chopped
1/2 medium green pepper, chopped
1-1/2 cups meatless spaghetti sauce
1 cup fat-free cottage cheese
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Cook spaghetti according to package directions. Drain well and cool to room temperature. In a bowl, combine the spaghetti, Parmesan cheese and egg substitute. Transfer to a 9-in. pie plate coated with cooking spray and form into a crust; set aside., In a nonstick skillet over medium heat, cook turkey, onion and green pepper until turkey is no longer pink; drain. Add spaghetti sauce; heat through. Spread cottage cheese over crust; top with turkey mixture., Bake, uncovered, at 350° for 20 minutes. Sprinkle with mozzarella cheese. This is a pseudo Southern take on a quiche.

1 tablespoon butter
½ onion, chopped
1 (12 ounce) package spicy ground pork sausage
4 eggs
½ cup Ranch-style salad dressing
½ cup milk
1 (8 ounce) package Cheddar cheese, shredded
1 dash hot pepper sauce
salt and pepper to taste
1 pinch white sugar
1 (9 inch) unbaked deep dish pie crust

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat butter in a large skillet over medium heat. Saute onion until soft. Add sausage, and cook until evenly brown. Drain, crumble, and set aside.
  • In a medium bowl, whisk together eggs, Ranch dressing and milk. Stir in shredded cheese. Season with hot sauce, salt, pepper and sugar.
  • Spread sausage mixture in the bottom of crust. Cover with egg mixture, and shake lightly to remove air, and to level contents.
  • Bake in preheated oven for 15 to 20 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake 45 to 50 minutes, or until filling is puffed and golden brown. Remove from oven, prick top with a knife, and let cool 10 minutes before serving.

SAUSAGE & MASH PIE

Enjoy this ingenious take on a family favourite, sausage and mash. It brings the two ingredients together into one hearty pie that can be easily frozen

1 tbsp sunflower oil
8 pork sausages
25g butter
2 onions, finely sliced
pinch of golden caster sugar
2 tbsp plain flour
1 tbsp tomato purée
1 tbsp red wine vinegar
500ml beef stock
peas, to serve (optional)
1.25kg King Edward or Maris Piper potatoes, cut into large chunks
150ml whole milk
25g butter
25g mature cheddar, coarsely grated (optional)

Steps:

  • Heat the oil in a frying pan and gently cook the sausages over a medium-high heat for 10-12 mins, turning them until browned on all sides. Transfer to a plate, then put the butter in the pan and heat until sizzling. Tip in the onions, stirring them into the butter, then sprinkle over the sugar and fry for 8-10 mins until the onions are golden. Scatter over the flour and stir to make a paste, then add the tomato purée. Cook for a minute, then add the vinegar, pour in the stock and bring to the boil. Turn down to a simmer. Tip in any juices from the sausages, then cut the sausages into thick slices and add to the pan. Simmer everything together for 5 mins until you have a glossy onion gravy. Tip the mixture into a baking dish.
  • To make the mash, tip the potatoes into a pan of cold salted water and bring to the boil, then turn down and simmer for 10-12 mins or until just cooked (the tip of a knife should slide in easily). Drain and leave for a minute. Pour the milk into the pan and bring to a simmer, then tip in the drained potatoes and butter, and mash thoroughly. Season to taste.
  • Top the sausages and gravy with the mash, starting from the edge of the dish and working your way into the middle. Use a fork to scrape lines in the topping and scatter over the cheese, if using. Can be assembled, covered and chilled for up to two days or frozen for three months. Defrost completely before cooking. Heat the oven to 200C/180C fan/gas 6. Bake the pie on a tray for 35-40 mins until the top has browned. Leave to cool for 5 mins before scooping straight from the baking dish at the table and serving with peas, if you like.
