When you think beyond the usual burger combos, a world of juicy flavor awaits. Here, the taste of mild ground turkey is boosted by folding umami-rich mushrooms into the patty mixture. To make it a proper melt, we griddle slices of rye bread until toasted then top them with the patties, Havarti cheese, and lemon-dressed shredded lettuce.

10 ounces button mushrooms, chopped (2 1/2 cups)
Kosher salt (we use Diamond Crystal) and freshly ground pepper
5 tablespoons extra-virgin olive oil, plus more for brushing
2 teaspoons minced garlic (from 2 cloves)
1 pound ground turkey, preferably dark meat
3 cups shredded romaine lettuce (from 1 head)
1 tablespoon chopped fresh dill, plus sprigs for serving
1 tablespoon fresh lemon juice
4 slices rye bread
Dijon mustard, for brushing and serving
4 ounces Havarti, sliced

Steps:

  • Heat a skillet over medium-high. Add mushrooms; season with salt and pepper. Cook, stirring, until tender, 5 minutes. Add 1 tablespoon oil and garlic; cook 1 minute. Let cool 10 minutes; transfer to a bowl and stir in turkey, 1 teaspoon salt, and 1/4 teaspoon pepper. Shape into four 1/2-inch-thick patties; refrigerate 20 minutes. Toss lettuce with dill, lemon juice, and 2 tablespoons oil; season.
  • Brush bread slices on one side with oil and on other with mustard. Heat cleaned skillet over medium-high; swirl in remaining oil. Add burgers; cook, flipping once, about 3 minutes a side. Transfer to a plate; reduce heat to low. Add bread, oil-side down; top with cheese and burgers. Cover; cook until cheese melts, 3 minutes. Serve with salad, dill sprigs, and more mustard.

1 medium onion, thinly sliced
1 medium bell pepper, thinly sliced
1 pound lean ground turkey
1/4 cup chili sauce
1/2 teaspoon garlic powder
1/2 cup shredded Cheddar cheese (2 ounces)
4 teaspoons mayonnaise or salad dressing
4 slices whole-grain bread, toasted

Steps:

  • Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Cook onion and bell pepper in skillet 6 to 8 minutes, stirring frequently, until tender. Remove vegetables from skillet; keep warm.
  • Mix turkey, chili sauce and garlic powder. Shape mixture into 4 patties, each 5 inches in diameter. Cook patties in skillet over medium heat 4 to 5 minutes on each side or until turkey is no longer pink in center.
  • Top each patty with about 1/4 cup of the vegetables; sprinkle with 2 tablespoons of the cheese. Cover and cook 1 to 2 minutes or until cheese is melted. Spread 1 teaspoon mayonnaise on each slice toast. Top each with patty.

1 pound ground turkey
1 cups Panko bread crumbs
1/3 cup milk
1 egg
1 tablespoon sage
1 tablespoon fresh thyme
1 teaspoon salt
1 teaspoon pepper, freshly cracked
1 cup cremini mushrooms, sliced (optional)
1 tablespoon olive oil
1/2 cup butter, unsalted
3 tablespoons canola oil
1 red onion, sliced
1 yellow onion, sliced
8 pieces rye bread
8 pieces Gruyere

Steps:

  • In a large bowl, add the panko, milk, egg, sage, thyme and salt and pepper. Combine and let sit for a few minutes. Add in the turkey and combine well. Form into oblong patties (same size as the rye bread) Place on a parchment paper lined sheet pan and refrigerate for 20-30 minutes.
  • While burgers are resting, in a large saute pan, heat 1/4 cup of the butter and 1 Tablespoon canola oil. Add onions and saute 15 to 20 minutes or until nicely caramelized. Set aside, but keep warm.
  • In the same pan as the onions sauteed, add 3 tablespoons canola oil and the mushrooms and saute 6-8 minutes over medium high heat until softened. Set aside, but keep warm.
  • Heat a griddle or cast iron skillet to medium high heat, add 1 Tablespoon canola oil and spread evenly. Add in the turkey burgers and cook for 4 to 5 minutes per side. Remove from heat, cover and keep warm.
  • Butter the rye bread and add to the pan, place the gruyere on bread, then place the turkey burgers on the cheese, pile with onions and the other piece of rye, repeat for all four burgers. After 2 to 3 minutes, turn sandwich over carefully and brown on other side. Remove to cutting board and cut on the diagonal. Serve with mustard and hot cherry peppers.

2 tablespoons vegetable oil
1 1/2 lbs ground turkey
1/4 cup sour cream
4 scallions, chopped (both white and green parts)
salt & fresh ground pepper
2 tablespoons butter
8 slices muenster cheese
8 slices pumpernickel bread

Steps:

  • Place a large skillet over medium-high heat with 2 turns of the pan of vegetable oil, about 2 tablespoons.
  • In a large mixing bowl, combine the ground turkey with the sour cream, scallions, salt and ground black pepper.
  • Using your hand, score the meat into four, then form four thin patties about half an inch thick out of each portion, adding them to the hot pan as you shape them. Cook until golden brown and cooked through, about 6 minutes per side. When finished cooking, remove the patties from the pan and wipe the pan clean with a paper towel.
  • While the patties are cooking up, place 4 slices of bread on a clean work surface and butter one side of each piece. Return the pan that the patties were cooked in over medium heat and add in the remaining butter. Once melted, place the remaining unbuttered slices of bread in the pan, place one piece of cheese on each slice, a turkey patty, one more slice of cheese and cap each off with the four slices of buttered bread, butter side up.
  • Cook sandwiches in the pan until toasted and the cheese has melted, about 2 minutes per side.

10slices hearty rye bread
2tablespoons whole milk
3/4teaspoon onion powder
1 1/4teaspoons salt
1/2teaspoon pepper
1 1/2pounds 85 percent lean ground beef
3tablespoons unsalted butter
2 onions, halved and sliced thin
2cups shredded Swiss cheese

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 200 degrees. Tear 2 pieces of bread into ½-inch pieces. Using potato masher, mash torn bread, milk, onion powder, ¾ teaspoon salt, and pepper in large bowl until smooth. Add beef and gently knead until well combined. Divide meat into 4 equal portions. Following photo 2, shape each portion into 6 by 4-inch oval. 2. Melt 1 tablespoon butter in large nonstick skillet over medium-high heat. Cook 2 patties until well browned on first side, about 5 minutes. Transfer to large plate, browned-side up, and repeat with remaining patties. 3. Pour off all but 1 teaspoon fat from pan. Add onions and ½ teaspoon salt and cook, stirring occasionally, until golden brown, 8 to 10 minutes. Arrange patties, browned-side up, on top of onions, pouring any accumulated juices into pan. Reduce heat to medium and cook, shaking pan occasionally, until onions are tender and burgers are cooked through, about 5 minutes. 4. Divide 1 cup cheese among 4 slices bread. Top with patties, onions, remaining cheese, and remaining bread. Wipe out skillet with paper towels. Melt 1 tablespoon butter in now-empty skillet over medium heat. Cook 2 sandwiches until golden brown and cheese is melted, 3 to 4 minutes per side. Transfer to rimmed baking sheet and keep warm in oven. Repeat with remaining butter and remaining sandwiches. Serve.

1 tbsp olive oil
1 lb ground turkey
4 scallions, finely chopped
1/2 tsp ground cumin
8 slices bread
1/3 cup mayonnaise
4 oz cheddar sliced

Steps:

  • Gently mix turkey, scallions, cumin, 1/4 tsp salt and pepper until just combined. Form into 4 1/2 inch patties. Heat 1 tbsp oil over medium high heat cook patties to 165 degrees. Wipe out skillet. Reserve. Brush both sides of bread with mayo. Put patties and cheese between bread. Cook over medium low until golden brown.
