This layered casserole with stuffing, turkey, veggies, mashed potatoes and cheese is the perfect way to serve Thanksgiving leftovers.

- Heat oven to 375 degrees F.
- Prepare stuffing as directed on package; spread onto bottom of 13x9-inch baking dish sprayed with cooking spray.
- Combine turkey, mixed vegetables and mayo; spoon over stuffing.
- Mix potatoes and cheese; spread over turkey mixture. Sprinkle with paprika.
- Bake 30 to 40 min. or until heated through.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine the stuffing crumbs, sage, celery and chicken broth, and then set aside. Place the celery soup and the chicken soup into two separate bowls and add 1/2 of a soup can of water to each. Stir these well and set aside.
- Sprinkle 1/3 of the stuffing crumb mixture into the bottom of a lightly greased 9x13-inch baking dish. Then layer with 1/2 of the shredded turkey meat and pour the celery soup mixture over this. Sprinkle another 1/3 of the crumb mixture over this, followed by the remaining turkey. Pour the chicken soup mixture over this and top off with the remaining stuffing mixture. Drizzle the melted butter over all and press the entire mixture down into the dish until firmly packed.
- Bake at 425 degrees F (220 degrees C) for 20 to 30 minutes.

- Butter a 13 x 9-inch baking dish.
- In a skillet sauté onion, celery, bell pepper and garlic in oil until soft (about 5 minutes).
- Transfer the veggies to a large bowl.
- Add in cooked chicken or turkey, both cheeses, mayonnaise, parsley salt and pepper; mix to combine.
- Place half of the bread cubes in the prepared baking dish.
- Top with the chicken mixture.
- Sprinkle with about 1/4 cup Parmesan cheese.
- Top with remaining bread cubes.
- In a bowl beat eggs with a whisk; add in milk or half and half cream (if using) undiluted soup and Worcestershire sauce.
- Pour over the casserole.
- Sprinkle with about 1/4 cup grated Parmesan cheese (can sprinkle with grated cheddar also).
- Bake uncovered for about 1 hour.

Steps:
- Preheat oven to 350 degrees.
- Make stuffing according to directions.
- Put 1/2 of the stuffing in the bottom of an 8x11 baking pan.
- Shred or chop the chicken/turkey into 1 inch pieces and place over the stuffing layer.
- Mix soup, mayo, sour cream together and spread over the chicken/turkey.
- Spread the remaining stuffing over the soup layer.
- Beat the two eggs with the 1 cup of milk and pour over all.
- Bake 1 hours.
TURKEY/CHICKEN CHILAQUILES CASSEROLE
This is my daughters favorite recipe for leftover turkey. I love it too! Don't let the long list of ingredients scare you. It seems time consuming but it does go together quickly once you have everything ready. I got it out of an old cookbook magazine called Fresh Turkey Ideas. We really look forward to Thanksgiving just to have this as our traditional left over. Hope you enjoy!

- Prepare New Mexico Green Sauce; Set oven control to broil. Arrange poblano chilies on broiler rack with tops about 5 inches from heat. Broil 12 to 17 minutes, turning occasionally, until skin is blistered and evenly browned (not burned). Remove chilies to plastic bag; close tightly. Let stand 20 minutes. Peel, seed and finely chop chilies.
- Cook onion, poblano and jalapeno chilies and garlic in 2 tbls oil over medium heat about 8 minutes, stirring occasionally, until onion is tender. Stir in whipping cream and salt. Set aside.
- Heat 1/2 cup oil in 10-inch skillet until hot. Cook tortilla strips in hot oil 30 to 60 seconds or until light golden brown; drain.
- Heat oven to 350 degrees. Grease 2-quart casserole.
- Layer half of the tortilla strips in bottom of casserole. Top with turkey, half of the New Mexico Green Sauce (about 2/3 cups) and 1 cup of the cheese.
- Press layers gently down into casserole.
- Repeat with remaining tortilla strips, sauce and cheese.
- Bake about 30 minutes or until cheese is melted and golden brown.

- Heat oven to 350°F.
- Sprinkle both sides of the chicken with salt and pepper. Spoon flour onto shallow dish or pie plate. Coat both sides of chicken with flour; shake off excess.
- In 12-inch skillet, heat oil over medium heat. Brown chicken on both sides. (You don't need to cook the chicken completely because it will finish cooking in the oven.) Transfer chicken to 13x9-inch (3-quart) glass baking dish.
- Place butter in same skillet; let melt over medium-high heat. Add mushrooms; sprinkle with salt and pepper. Cook and stir mushrooms until golden brown. Stir in sherry; cook and stir for additional 1 to 2 minutes. Stir in soup; mix well. Cook until thoroughly heated.
- Pour mushroom sauce over chicken; top each piece of chicken with one slice cheese. Fold cheese in half if it is too wide for chicken piece.
- Cover dish with foil; bake 30 minutes. After 30 minutes, turn oven to broil setting. Remove foil from dish; broil 1 to 2 minutes to brown the cheese. Remove from the oven; set aside to cool slightly.
- Top with parsley.
