2 pounds ground turkey
1 (8 ounce) package Cheddar cheese, cubed
1 onion, diced
1 cup seasoned bread crumbs
¾ cup milk
2 eggs
2 tablespoons Worcestershire sauce
2 cloves garlic, diced
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.
  • Combine ground turkey, Cheddar cheese, onion, bread crumbs, milk, eggs, Worcestershire sauce, garlic, salt, and pepper in a large bowl; mix well with your hands.
  • Drop scoops of the turkey mixture into the muffin tin using a large ice cream scoop.
  • Bake in the preheated oven until golden brown, about 45 minutes.

3/4 cup ketchup
2 pounds ground turkey
1 cup chopped onion (1 medium onion)
2 slices sandwich bread, torn into small pieces
1 cup grated cheddar cheese
1/2 chopped dill pickle (1 medium pickle)
1 tablespoon Worcestershire sauce
1 large egg, lightly beaten
2 garlic cloves, minced
2 teaspoons dry mustard powder
1 teaspoon salt
1/2 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. In a large bowl, mix 1/2 cup ketchup with the remaining ingredients until well combined. Divide mixture among 6 cups of a 12-cup (4 ounce) muffin tin, spacing them evenly and gently compressing and mounding the tops. Brush tops with remaining 1/4 cup ketchup.
  • Transfer tin to oven; bake until inside temperature registers 170 degrees on an instant read thermometer, about 45 minutes.
  • Remove from oven; let rest 5 minutes before removing from tin. Serve hot.

1 red pepper, finely chopped
1 small red onion, finely chopped
2 cloves garlic, minced
1 Tbsp. olive oil
1/4 tsp. ground black pepper
1 egg, beaten
3/4 cup HEINZ Tomato Ketchup, divided
3 Tbsp. lite soy sauce
1/4 tsp. LEA & PERRINS Worcestershire Sauce
2 lb. ground turkey or ground turkey breast
36 round buttery crackers, crushed
1 cup KRAFT Mexican Style Finely Shredded Four Cheese, divided

Steps:

  • Heat oven to 350 degrees F.
  • Cook and stir red peppers, onions and garlic in hot oil in large skillet on medium heat 5 minutes, or until crisp-tender. Stir in black pepper; cool.
  • Mix egg, ½ cup ketchup, soy sauce, and Worcestershire sauce in large bowl until blended. Stir in vegetable mixture. Add turkey, cracker crumbs and 3/4 cup cheese; mix until just blended.

3 egg whites
1 cup quick cooking oats
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
2 teaspoons dry yellow mustard
2 teaspoons black pepper
2 teaspoons chipotle pepper spice (we could only find this at Whole Foods)
2 tablespoons garlic powder, or 2 cloves, minced
2 celery stalks, finely chopped, about 1 cup
1 small onion, finely chopped, about 1 cup

Steps:

  • Preheat oven to 375°F. Line baking sheet with foil (Jamie uses muffin tins but they get very messy!). If you use the easy release foil, it makes for quick clean-up. Mix all the ingredients together in a large bowl. Roll the mixture into balls & place on your baking sheet or in your muffin tin. Bake for 40 minutes (This may vary depending on your oven. I would suggest using a meat thermometer to ensure your meat is fully cooked).

2 lbs lean ground turkey
3 egg whites
1 cup quick-cooking oats
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
2 teaspoons dry mustard
2 teaspoons black pepper
1 teaspoon powdered chipotle pepper
1 teaspoon salt
2 tablespoons garlic powder (2 cloves minced)
1 small onion (finely chopped)
2 celery (finely chopped)

Steps:

  • Preheat oven to 375 degrees.
  • Spray muffin pan with canola or olive oil.
  • Mix all your ingredients together in one large bowl.
  • Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetballs.
  • Bake for 40 minutes.
  • Notes: The original recipe calls for 2 tsp of Chipotle Pepper spice (referred to here as powdered chipotle pepper) but I found that too much. Feel free to try it with 2 tsp of the spice if you prefer a more smokey flavour.

1 tablespoon balsamic vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon marjoram
1/2 teaspoon thyme
salt and pepper, to taste
garlic powder, to taste
1/2 cup oat bran
1 cup broccoli, finely chopped
1 onion, finely chopped
1 garlic clove, finely chopped
18 ounces ground turkey breast
6 tablespoons salsa

Steps:

  • Preheat oven to 375°F Prepare a muffin tin by coating lightly with cooking spray. Set aside.
  • In a large bowl mix together egg, 3 Tbsp salsa, vinegar, Dijon. Add all seasonings and mix well. Add remaining ingredients excluding 5 Tbsp of salsa and using your hands mix well.
  • Divide mixture into 12 muffins, about ¼ cup each. Then press them down slightly and add ½ Tbsp of salsa to top of each muffin.
  • Bake for 20 - 25 min or until cooked through.

The recipe said to bake them in 4 mini loaf pans, but I ended up baking mine in muffin tins so they would be done quicker. You could also bake it as one loaf, but of course it would take longer then. My kids loved these when I made them too.

1 lb ground turkey or 1 lb chicken
1 small onion, finely chopped
1/2 cup whole wheat bread crumbs
1/4 cup dried cranberries
1/4 cup dried parsley
2 tablespoons Dijon mustard
1 tablespoon honey
1/2 teaspoon ground cinnamon
1/2 teaspoon allspice
1 teaspoon salt
1/2 teaspoon black pepper
2 eggs
1/4 cup buttermilk

Steps:

  • Preheat oven to 375°F.
  • Coat muffins tins or baking pans with non stick cooking spray.
  • Place all of the ingredients together in a large bowl and mix until very well combined.
  • Transfer mixture to prepared muffin tins and bake 15 - 20 minutes or until meat thermometer says it's done. (Mini loaf pans would take 30-35 minutes and one large loaf would take 45 - 60 minutes.).
  • Remove meat loaves from oven and let cool about 5 minutes before removing them from the pans.

We had left over ground turkey that needed to be used, but I couldn't find a ground turkey recipe that would work for my family so I created one... The chorizo can be optional, I had family members who either do not eat spicy (even mildly spicy) or do not eat pork (though chorizo is available in beef), and so I made half chorizo-free. They enjoyed it. For me, I like the kick of the Mexican spiciness! Enjoy!
