Chicken or Turkey Spanakopita Burgers and Fries with Yogurt Dip image

Hot pepper rings or pepperoncini, optional
1 package store-bought frozen fries, any variety
1 tablespoon extra-virgin olive oil, 1 turn of the pan, plus some for drizzling
1 tablespoon butter
3 cloves garlic, 2 chopped, 1 crushed
1 red onion, 1/2 chopped, 1/2 thinly sliced
1 box, 10 ounces, frozen spinach, defrosted
2 teaspoons dried oregano, lightly crushed in the palm, divided
1/4 pound feta crumbles
1 1/3 pounds ground chicken or ground turkey breast, 1 package
1 tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1/3 seedless cucumber, thinly sliced lengthwise, plus 1 small, 2-inch piece of cucumber peeled, trimmed and chopped
2 plum tomatoes, thinly sliced lengthwise
Salt and pepper
1 1/2 to 2 cups good quality plain yogurt, look for Greek yogurt
1/2 lemon, juiced
1 cup arugula, coarsely chopped or shredded
4 crusty rolls, split
2 roasted red peppers, drained
1/4 cup flat-leaf parsley, a generous handful
1/4 cup 10 to 12 pitted kalamata olives

Steps:

  • Preheat oven to directions on the package and bake fries until crisp.
  • Heat a large nonstick skillet over medium heat. To one side, add a little extra-virgin olive oil and a tablespoon of butter. When butter melts, add the chopped garlic and chopped red onion and cook 5 minutes. Transfer the onions and garlic to a bowl to cool. Return pan to heat.
  • Wring the defrosted spinach dry buy twisting it in a clean kitchen towel over your sink. Separate the spinach as you add it to the bowl with cool onions, garlic and season with 1 teaspoon of oregano. Add in feta crumbles then chicken or turkey, grill seasoning and a drizzle of extra-virgin olive oil. Mix and form into 4 patties, 1-inch thick. Raise heat on pan to medium-high. Add patties and cook 6 inches on each side.
  • Season the sliced cucumbers and tomatoes with salt and pepper. Toast rolls, if you prefer.
  • Place remaining chopped cucumber, the crushed clove of garlic, yogurt, 1 teaspoon oregano and juice of 1/2 lemon in a food processor. Add a little salt and process the sauce until smooth. Transfer to a small dish and serve with the fries as a dipping sauce. Rinse out the processor bowl and return to base.
  • Place red peppers, parsley and olives in food processor, season with salt and pepper and process until a paste forms. Place cooked burgers on roll bottoms. Top the burgers with sliced cucumber, tomato, reserved red onions, shredded arugula and hot peppers, if using. Slather roll tops with red pepper and olive paste and serve with chips of choice.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease 24 mini muffin cups.
  • Whisk together egg and olive oil in a medium bowl until well combined. Add mushrooms, garlic, onion powder, herbes de Provence, salt, pepper, and red pepper flakes; stir to combine. Stir in Parmesan cheese and almond flour. Add ground turkey, and mix with your hands to work seasoning blend evenly into meat; mixture will be wet and sticky.
  • Use a spoon to fill each prepared muffin cup with turkey mixture, gently rounding the tops.
  • Bake in the preheated oven until meatballs are lightly browned on the outside and no longer pink in the center, about 25 minutes. Move oven rack to the top position, turn on the broiler, and broil until a bit darker but not too brown, about 2 minutes more. Remove from the oven and transfer to a serving dish.

1 onion, quartered

Steps:

  • Place torn bread in a food processor and pulse until fine crumbs form. Transfer bread crumbs to a large bowl and add milk; set aside until bread is completely soaked.
  • Place onion, red bell pepper, and garlic in a food processor and pulse until finely chopped; stir into bread mixture. Add turkey, egg, parsley, 1 tablespoon mustard, salt, and pepper to bread crumb mixture and mix well. Cover bowl with plastic wrap and refrigerate for 1 hour.

V's Soft Turkey Taquitos With Southwestern Dip image

Every year my dad would make these taquitos with leftover turkey. The corn tortillas are lightly fried in oil, rolled with turkey and sealed on a griddle and come out soft with a nice crunch with the turkey still moist and delicious. These are awesome because they are not deep fried or baked. I took over the tradition and have been making these for years. My family won't eat any leftover turkey in any other form except these soft taquitos. We look forward to these as an appetizer or a meal served with my own Southwestern Dip, Cheese Sauce, Salsa and my Chunky Guacomole the day after thanksgiving.

4 cups shredded cooked turkey or 4 cups cooked chicken
45 corn tortillas, room temp
1/2 cup canola oil, for frying
salt
2 cups sour cream
1 cup mayonnaise
1 tablespoon parsley
1 tablespoon dried onion flakes
1 tablespoon dried chives
1 tablespoon cumin
1 teaspoon jalepeno salt (or regular salt)
1/2 tablespoon cayenne pepper
1/2 teaspoon smoked paprika
1 teaspoon white pepper (optional)

Steps:

  • Make the Dip and refrigerate ahead of time.
  • Mix sour cream and mayonaise together in a bowl. Mix dry ingredients in a separate bowl. Add dry spices to sour cream and mayonaise mixture stir to combine, cover & refrigerate for 2 hours to allow flavors to meld.
  • Taquito instructions: Heat oil in frying pan. Add one corn tortilla and fry for just a second, then turn and repeat. Place tortilla on a paper towel lined cookie sheet fitting about 6-8 per sheet. Place another papertowel over the tortillas and repeat with the rest until all are cooked. Sprinkle Salt over the tortillas as you go.
  • Once all the tortillas have been lightly fried and are soft, take shredded turkey and place on tortilla in a line. Gently fold tight and place seam side down on another cookie sheet. Repeat until all the taquitos are rolled.
  • Heat an electric skillet or griddle between 300-350' and oil surface generously. Place one taquito seam side down, add another right up against it and continue until you have a row across the skillet and taquitos are secure. Continue another row if you have room (I can generally cook about 25-30 at a time) Check the first taquito by rolling or using tongs to make sure seam is secure before turning. Roll taquitos left to right and let them cook 1-2 minutes, then roll again until they are secure and golden.
  • Place taquitos on platter and serve with Southwestern Dip, Salsa, Guacomole, Sour Cream, heated cheese whiz or whatever you like!

I came up with this recipe for a party and it has gotten rave reviews every time I make it. I originally started out with ground beef, but have switched to turkey because it's healthier, it doesn't have to be drained, and with the taco seasoning, you can hardly tell the difference anyway! I do not recommend fat free cheddar cheese as it does not melt as easily, and it can make it more difficult to get through all of the layers with the tortilla chips.

1 lb ground turkey (99% fat free is great)
15 1/2 ounces salsa
1 ounce taco seasoning

  • Preheat oven to 350°F.
  • Cook ground turkey in frying pan until completely cooked through. Drain if necessary. Add taco seasoning and stir until seasoning is evenly distributed throughout.

Sarasota's Sweet and Tangy Turkey French Dip Sandwich image

A great sandwich as an alternative to a traditional french dip. Deli turkey, sauteed onions and apples for a bit of a sweet flavor. A pretty traditional horseradish sauce, with a bit of a sweet honey and mustard and then a savory/sweet turkey au jus dipping sauce. The au jus and horseradish can easily be made ahead, which makes this just minutes to put together. Serve with some sweet potato fries or potato salad.

16 -20 slices roast turkey, thin sliced (no too thin)
1 large onion, cut in quarters and thin sliced
2 apples, thin sliced (I used Mcintosh, skin on)
8 slices gruyere cheese, 2 slices per sandwich (swiss will work fine)
4 hoagie rolls, they are soft and perfect for this sandwich (lightly toasted on the inside right before you make the sandwich)
1 teaspoon butter
salt
pepper
1/2 cup mayonnaise
2 tablespoons prepared horseradish
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon apple juice
1 teaspoon fresh thyme, chopped fine (1/2 teaspoon dried)
1 3/4 cups chicken broth
2/3 cup apple juice
2 teaspoons honey
1/2-1 envelope lipton recipe secretes savory herb and garlic (you can also add the Golden Onion or Onion. Add more if you want it more flavorful, but start with 1)

Steps:

  • Mustard Horseradish Sauce -- Just mix the mayo, horseradish, mustard, honey, apple juice, and thyme. Add to a small bowl, cover and refrigerate. Done. You can easily make this ahead.
  • Apple Au Jus -- In a small pot, add the broth, apple juice, honey, Lipton seasoning and bring to a boil. Stir well and immediately reduce and simmer until it naturally thickens. About 5 minutes. This can easily be made and ahead and just reheated right in the microwave on on the stove.
  • Onions and Apples -- In a small saute pan, add the butter and bring to medium heat. Add the onions, apples and pinch of salt and saute for 3-5 minutes until the onions and apples are soft, but not "mush." Season with a little pepper and set to the side as you make the sandwiches.
  • Rolls -- As the onions and apples saute, put the rolls inside facing up under the broiler and toast very lightly. Keep the broiler on.
  • Sandwich -- Spread the bottom bun with a little of the dressing. Then dip the turkey slices in the warm au jus, just to get a little juice on it and layer on the sandwich. Top with the warm onions and apples and 2 slices of the cheese. Put under the broiler for just a minute until the cheese melts. Top with the other roll, also slathered with the dressing.
  • Serve -- Cut in half and serve with the warm au jus, 1/4-1/3 cup per person. ENJOY!

3 tablespoons extra-virgin olive oil
1 tablespoon fresh thyme, chopped
Kosher salt and freshly ground pepper
2 carrots, thinly sliced
2 celery stalks, thinly sliced
1 large onion, roughly chopped
2 cloves garlic, smashed
1 cup low-sodium chicken broth
3 tablespoons Worcestershire sauce
4 mini baguettes (or 6-inch sections of baguette), split
4 slices provolone cheese

Steps:

  • Rub the turkey breast with 1 tablespoon olive oil, the thyme, 1 teaspoon salt and 1/2 teaspoon pepper. Heat 1 tablespoon olive oil in a large cast-iron skillet over high heat. Add the turkey, skin-side down, and cook until golden, about 3 minutes. Turn and cook 2 more minutes. Easy ... A few fresh ingredients, some canned (Pillsbury type) crescent rolls, spreadable cream cheese and leftover cranberry sauce. This is a great little sandwich. Serve with some butternut, sweet potato, or even a potato soup for a great quick easy week night dinner. This is a great way to use up, the cranberry sauce, turkey and makes a nice light dinner.

1 1/2 cups whole cranberry sauce
1 pear, peeled and diced fine
1 small shallot, diced fine
1/4 cup apple cider (you could use apple juice)
1/2 teaspoon allspice
1/8 teaspoon ground ginger
2 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls
2 cups fine diced turkey
2 scallions, fine chopped (whites and greens)
1 shallot, diced fine
1 (4 ounce) container spreadable herb cheese spread
1/4 cup pecans, fine chopped (one of those small pre-chopped bags)
1/2 teaspoon butter
1 egg, beaten

Steps:

  • Sauce -- Mix everything; cranberry, pear, shallot, seasoning and cider in a small sauce pan and just simmer on low. Will take around 20 minutes for the pear to soften. Just stir now and then, nothing more. Just let it hang out on low heat. This is your dip.
  • Turkey -- In a small saute pan, add the butter and bring to medium high heat. Add the shallot and cook 1 minute, then add the scallions, nuts and turkey and cook another 2 minutes until heated through. Remove and let cool slightly before you fill your turnovers.
  • Turnovers -- You can use a baking sheet sprayed with non-stick spray, but I prefer to use parchment paper for no clean up. Heat the oven to 375.
  • Crescent Rolls -- Roll out both cans of crescent rolls on the parchment paper or on the baking sheet. I like to use my rolling pin and roll, just until the seams are pressed together and it resembles one large sheet. You will have two flat sheets. Cut each sheet with a pizza cutter or a knife; the top left corner to the bottom right corner corner and vice versa to make 4 large triangles per sheet. Two (2) cans will give you 8 triangles.
  • Filling -- Spread the Boursin or herbed cheese on each triangle in the center and then place a couple of tablespoons of the turkey mix on top of that and bring the corners up to the center and press together. I just crimp together in the middle and sort of make like a small package. No exact method.
  • Brush with the beaten egg and cook 15-18 minutes on the baking sheet until golden brown.
  • Serve -- Once golden brown, just serve with the warm cranberry sauce for dipping and a nice bowl of soup for an easy midweek dinner. ENJOY!

CROCK POT TURKEY, BEAN & BACON DIP

This makes a wonderfully easy appetizer that is great to serve with tortilla chips, hearty crackers, breadsticks or whatever you like! The bacon can be easily cooked in a microwave oven before adding to the crock pot. I usually just place the bacon strips without overlapping on a paper towel on a plate. I usually cook it for 1 minute per slice but it depends on your microwave and the thickness of the bacon. It's easier to cool the bacon before crumbling it so you don't burn yourself. The jalapeno is optional depending on if you like it spicy. I used a 5-quart crock pot for this recipe. Enjoy!

  • Brown the ground turkey in large nonstick skillet over medium-high heat, stirring to break up meat; drain.
  • Spoon meat into slow cooker.
  • Add all other ingredients to slow cooker; mix well.
  • Cover and cook on low 4 hours or on high 2 hours.
  • Serve with tortilla chips, crackers, corn chips or breadsticks.

I got the original recipe from an old neighbor. I have changed it to be less greasey. I have also added some extra vegetables to make it a little healthier.

32 oz mexican velveeta
32 oz 2% velveeta
1 pkg green onion
2 tsp no salt
1 1/2 c fresh zucchini
1 jar(s) salsa (i used lime & garlic)
1 can(s) diced tomatoes (no salt added)
3 pkg taco seasoning mix
2 Tbsp mrs. dash extra spicy

Steps:

  • 1. Brown ground turkey in a large pot. Dice green onions and zucchini. Dice the Velveeta cheese loafs.
  • 2. Add zucchini, no salt, taco seasoning and Mrs. Dash seasoning to the ground turkey.
  • 3. Add both chesses and let them melt. Then add the salsa and diced tomatoes.(You may use the diced tomatoes with chilies in them). After it is all stired together add the green onions and eat with your favorite chips.

3 tablespoons unsalted butter, softened
1 tablespoon fresh thyme leaves, chopped
1 tablespoon chopped fresh rosemary
Kosher salt and freshly cracked black pepper
1 large onion, roughly chopped
1/2 cup low-sodium chicken broth
3 tablespoons Worcestershire sauce
1 (3-pound) bone-in turkey breast
6 demi French baguettes, sliced in half
12 slices Gruyere cheese

Steps:

  • For the turkey: In a small mixing bowl, mix together the softened butter and fresh herbs. Season with salt and pepper and set aside.
  • Spread the chopped onions over the bottom of a slow cooker. Pour the chicken stock and Worcestershire sauce into the slow cooker. Sprinkle the turkey with salt and pepper. Slather the turkey breast with herb butter, spreading half under the turkey skin. Place the turkey on top of the onions, breast side up. Cover and cook on high for 4 to 6 hours, checking it after 4 hours to see if the internal temperature has reached 170 degree F. Once the turkey reaches 170 degrees F, remove it from the slow cooker, transfer to a cutting board, tent with aluminum foil and allow to rest 10 minutes before slicing. Reserve any juices from the slow cooker. After the breast has rested, remove the skin and slice very thinly using a sharp knife.
  • For the sandwich: Preheat the broiler. Brush each side of the sliced bread with the softened butter and place on a baking sheet, buttered side up. Top each buttered baguette with sliced cheese. Place under the broiler until the cheese melts and begins to turn golden brown.
  • Carefully remove from the oven. Pile the sliced turkey on the bottom half of each sandwich before topping it with the cheesy top. Serve the turkey au jus left over in the slow cooker for dipping.
