TURKEY MONTE CRISTO
If you like French toast and grilled cheese, you'll love a Monte Cristo. This sandwich is usually pan-fried, but baking it instead means you can use less butter and make several at the same time.

- Preheat oven to 400 degrees. Line a baking sheet with a nonstick baking mat; brush with butter. In a 9-by-13-inch baking dish, whisk together eggs and milk. Season with salt and pepper.
- Spread cranberry sauce on 4 slices of bread. Top with turkey; season with salt and pepper. Sprinkle cheese evenly over turkey. Top with remaining bread slices. Carefully transfer sandwiches to egg mixture and soak, pressing lightly with a spatula, 1 minute a side.
- Transfer to baking sheet; bake 15 minutes. Flip and bake 7 minutes more. Let rest 5 minutes before serving.

Steps:
- Spread cranberry sauce on each slice of bread, then top the slices with cheddar cheese.
- Divide the turkey between the sandwiches and place one slice of bread on top of the other to form the sandwich.
- Melt butter in a large skillet over medium high heat.
- In a shallow dish, whisk together the egg and milk until combined. Dip the sandwich into the batter, then flip it over and dip the other side in. Repeat with the other sandwich.
- Add the sandwiches to the skillet and cook for 2-3 minutes on each side, until golden and crispy. Remove from the skillet and slice in half, sprinkling both sandwiches with powdered sugar.

- Preheat the oven to 250°F (120°C).
- In a medium bowl, toss together the turkey and gravy until well combined.
- Spread 1 tablespoon of cranberry sauce over each of 4 slices of brioche. Spread 1 tablespoon of whole-grain mustard over each of the remaining slices of brioche. Place a slice of cheese on top of each piece of bread.
- Divide the turkey between 4 slices of bread, pressing down into a flat, even layer. Distribute the stuffing atop the turkey, spreading into a flat even layer. Place the other slices of bread, cheese-side down, over the stuffing and press down to adhere.
- In a 2-inch-deep, square baking dish, whisk together the eggs, milk, and salt until well combined.

- In a small bowl, mix together the cranberry sauce, mustard, and rosemary. Lay out the slices of bread. Divide the mustard mixture evenly over the 8 slices of bread and spread almost to the edges. Divide the cheese slices among the bread. Divide the turkey over every other slice of bread. Sandwich the turkey and cheese slices together.
- In a medium bowl, whisk together the eggs, heavy cream, and salt.
- Heat a large skillet over medium heat. Add the oil to the pan and heat for 1 minute.
