1 lb fresh broccoli, cut into spears or 1 (10 ounce) package frozen broccoli spears, cooked and drained
1 1/2 cups cubed cooked turkey or 1 1/2 cups chicken
1 (10 1/2 ounce) can campbells condesed cream of broccoli soup (I used cream of celery soup too)
1/3 cup milk
1/2 cup shredded cheddar cheese (2 ounces)
2 tablespoons butter, melted

Steps:

  • In a 9 inch pie plate or 2 quart oblong baking dish, arrange broccoli and turkey. In a small bowl, combine soup and milk, pour over broccoli and turkey
  • Sprinkle cheddar cheese over soup mixture. In cup, combine bread crumbs and butter, sprinkle over cheese.
  • Bake at 450 for 20 minutes or until hot and bubbling.
  • Garish with grapes, parsley and bread sticks if desired.

These are so easy to make for a quick hot lunch and taste so much better then the pockets you can buy in the store. You can also use jarred pizza sauce, pepperoni and mozzarella cheese to make pizza pockets as well.

2 ounces cream cheese, softened
1 tablespoon mayonnaise or 1 tablespoon Miracle Whip
1 teaspoon Dijon mustard
1/2 cup turkey, finely chopped
1/4 cup mozzarella cheese, shredded
1 (7 1/2 ounce) can refrigerated biscuits (10 biscuits)

Steps:

  • Preheat oven to 400 degrees (205 celsius).
  • Mix cream cheese, mayo, and mustard in a small bowl.
  • Add turkey and cheese; mix well and set aside.
  • Press or roll out each biscuit to a 3 1/2 inch round.
  • Place 1 heaping tablespoon of the cream cheese mixture onto each biscuit round.
  • Fold dough over the filling to make a small turnover shape; seal edges by pressing firmly together.
  • Place on an ungreased cookie sheet and bake 10 to 12 minutes until lightly browned.
  • Serve hot.
  • To make ham pockets, replace turkey with chopped ham and mozzarella with shredded cheddar cheese.
  • These can be made in advance and frozen for a quick after school snack. Microwave them wrapped in paper towels until hot (1 to 2 minutes).

1 1/2 cups chopped broccoli florets
1 3/4 cups grated sharp cheddar cheese (about 5 ounces)
3 tablespoons sour cream
2 tablespoons chopped fresh chives
Vegetable oil, for brushing
All-purpose flour, for dusting
1 11-ounce tube refrigerated French bread dough
1 large egg

Steps:

  • Bring a saucepan of lightly salted water to a boil. Add the broccoli and cook 1 minute. Drain and rinse under cold water until cool; pat dry. Mix the broccoli, cheddar, sour cream and chives in a bowl until combined, then squeeze the mixture together with your hands to make it compact.
  • Preheat the oven to 425 degrees F and brush a baking sheet lightly with vegetable oil. On a floured surface, roll out the dough and fill the dinner pockets. (See Cook's Note for step-by-step directions.)
  • Place the pockets seam-side down on the prepared baking sheet. Beat the egg and 1 tablespoon water in a small bowl; brush the pockets with the egg wash. Bake until golden brown, about 15 minutes.

8 slices of cooked turkey breast (1-oz. each)
1 (8 ounce) package frozen broccoli stems
1/2 medium onion, sliced 1/8 inch
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons all-purpose flour
1 cup half-and-half or 1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon lemon juice
1 cup shredded cheddar cheese

Steps:

  • Heat oven to 350 degrees.
  • Place turkey on bottom of greased 9" square baking pan; top with broccoli spears and onion.
  • Set aside.
  • In 2 quart saucepan, melt butter over medium heat; stir in flour and stir until smooth and bubbly (1 minute).
  • Stir in remaining ingredients, except cheese.
  • Continue cooking, stirring occasionally, until thickened (about 2 to 3 minutes).
  • Remove from heat; stir in cheese until melted.

I came up with this one when looking for a different way to use leftover turkey, that the whole family could enjoy. They became an instant hit. We make them in larger batches and it's easy to adjust the amounts to taste. Some prefer more cheese or you could use different varieties.

2-3 c chopped turkey
1 bag(s) cooked, chopped broccoli (12 oz)
12 oz shredded cheddar cheese
2 tube(s) refrigerated crescent rolls

Steps:

  • 1. Amounts are estimated and you can easily adjust for basically any number of pockets. Mix everything together in a large bowl.
  • 2. For each pocket, you need two roll sections. You can also simply use one triangle for the bottom and one for the top. The rectangles are a little easier to seal when done, but both ways work well. For the rectangles, be sure to press the long edge firmly, to form one large piece.
  • 3. Place 2-3 large spoonfuls of filling onto the dough.
  • 4. Fold over for rectangles or place on top for triangles. Seal edges by pinching together firmly.
  • 5. Place on a cookie sheet.
  • 6. Bake at 375 degrees for 10-15 minutes. Cool slightly and enjoy!!
