CRANBERRY BRIE BITES
These are a fun appetizer and a much easier way to serve brie to a group. They are very versatile so you might want to try a brown sugar and walnut filling instead of the cranberry, or whatever is your preference!

Steps:
- Cut each sheet of puff pastry into 12 squares and place inside mini muffins cups. (You may want to lightly spray to ensure they won't stick). Try not to leave any part of the muffin cup uncovered by dough or the cheese and cranberry will stick.
- Place a 1-inch square of cheese inside each cup.
- Then add about 1 T cranberry sauce on top of the cheese.
- Bake in a preheated 375°F oven till edges are a light brown, 10-15 minutes.
- Cool a few minutes (but not completely) before removing from muffin tins.
TURKEY BRIE CRANBERRY BITES ( RACHAEL RAY)
This recipe was called "Triscuit Turkey Melts" by Rachael Ray but I prefer turkey brie cranberry bites as that really tells you what you are getting. This is an easy appetizer that would be great for the holidays, Thanksgiving, a dinner party at home or anytime you need a quick snack. Very cute and yummy! Watch the brie in the broiler. Enjoy! Steps:
- Preheat broiler.
- Arrange crackers on broiler pan.
- Mix sauce with zest and scallions.
- Dot crackers with sauce and top with folded turkey and Brie.
- Place under broiler to melt Brie.
- serve warm.

Steps:
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper, set aside.
- Place pastry on a clean work surface and cut into 36 squares. Brush all squares with egg wash, then place one square on top of the other to make 18 stacks, each with 2 squares of pastry.
- Place on prepared sheet, about 2 inches apart, and bake until puffed and golden, about 13-15 minutes.
- Remove baking sheet from oven and top each puffed square with a piece of brie cheese. Return to oven and bake until cheese melts, about 3-5 minutes.
- Place on a serving platter and top each with a small spoonful of cranberry sauce and a small sprig of thyme for garnish.
