Inside Out Ravioli image

This is my mother-in-law's recipe. Everytime we have company she is requested to make this.

Number Of Ingredients 14

1 (10oz) package(s) frozen spinach, chopped
1 tablespoon(s) extra virgin olive oil
2 pound(s) ground chuck
1 medium onion, chopped
1 - garlic clove, minced
1 pound(s) can spaghetti sauce with mushrooms
1 (8oz) can(s) tomato sauce
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper
8 or 10 oz package(s) shell or elbow macaroni, cooked
2 cup(s) sharp cheddar cheese, shredded
2 - eggs, well beaten
1/4 cup(s) extra virgin olive oil
1 (6oz) can(s) tomato paste

Steps:

  • Cook spinach according to package directions - drain, reserving liquid. Add water to make 1 cup liquid. Set aside.
  • Brown meat, onion and garlic in 1 Tbls oil.
  • Stir spinach liquid, spaghetti sauce, tomato sauce, tomato paste, salt and pepper into meat mixture and simmer 10 minutes.
  • Combine spinach, cooked macaroni, cheese, eggs, and 1/4 c oil.
  • Spray a 9x13 baking dish with non-stick spray and spread the spinach mixture on the bottom. Spread the meat mixture on top. Bake at 350 degrees for 30 minutes. Let stand for 15 minutes.
