I wanted to make turkey burgers a lot more fun. On a whim, I added hoisin sauce, gingerroot and garlic. Now we eat them about once a week. -Ashley Gayle, Ellicott City, Maryland

3 green onions, finely chopped
2 tablespoons hoisin sauce
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/4 pounds ground turkey
1 tablespoon olive oil
SLAW:
3 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
2 medium apples, julienned
2 green onions, finely chopped
ASSEMBLY:
4 hamburger buns, split and toasted
2 tablespoons hoisin sauce

Steps:

  • In a large bowl, mix green onions, hoisin sauce, ginger, garlic, salt and pepper. Add turkey; mix lightly but thoroughly. Shape into four 3/4-in.-thick patties., In a large cast-iron or other heavy skillet, heat oil over medium heat. Cook burgers until a thermometer reads 165°, 7-9 minutes on each side., Meanwhile, for slaw, in a large bowl, whisk oil, vinegar, mustard, salt and pepper. Add apples and green onions; toss to coat., To assemble, spread bun bottoms with hoisin sauce. Top with burgers and slaw; replace tops. Freeze option: Place patties on a plastic wrap-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 165°.

All we can say is yum! No ordinary grilled burger recipe here. Shredded green apple, smoky maple seasoning and a touch of maple syrup are mixed with ground turkey and pork. The apple helps to keep these burgers moist. Silky melted Brie cheese tops the burger perfectly. They can be served as an appetizer or main meal.

10 small water rolls (bakery)
1 lb ground turkey
1 lb ground pork
1 Granny Smith apple
2 Tbsp maple syrup or honey
1 Tbsp Grill Mates smokehouse maple seasoning
5 Tbsp butter, cut into small cubes
1 pkg Brie cheese, sliced into 10 pieces
1/2 tsp salt
1/2 tsp pepper

Steps:

  • 1. Peel and shred/grate apple.
  • 2. Combine with ground pork, turkey, maple syrup, cubed butter, seasoning, salt, and pepper.
  • 3. Form into ten mini patty burgers.
  • 4. Grill until desired doneness.
  • 5. Take the rind off of the Brie cheese. At the last minute, top with Brie cheese and melt slighty.
  • 6. Garnish with lettuce, tomato or avocado.
  • 7. The first time I made this I did not top the burger with any condiments. You could mix a little mayo, Dijon mustard, and maple syrup together and top with that.

Steps:

  • Combine ground turkey with finely chopped onion, diced tart apples, salt and pepper, and a few leaves of chopped fresh tarragon or sage; grill or pan-cook. Serve on a hamburger bun with arugula or other salad green and a smear of Dijon mustard to amp up the flavor even further.
