BAKED TUNA RISOTTO

Easy oven-cooked risotto that serves 4

Number Of Ingredients 11

2 tablespoons olive oil
1 brown onion
1 red pepper
1 clove of garlic
1 red onion
600ml chicken stock
300g arborio rice
400g tin chopped tomatoes
Approx. 200g drained tinned tuna (2 tins)
A couple of handfuls of rocket and/or spinach (optional)
Salt and black pepper to taste

Steps:

  • Add olive oil, chopped onions, red pepper and garlic to an oven-proof pan and fry gently for 5 minutes to soften, stirring often.
  • Add the rice and fry gently for 1 minute, then stir in the stock and tinned tomatoes.
  • Stir in the tuna and season with salt and black pepper. Cover the pan.
  • Put in a preheated oven at 200 degrees C, 180 degrees fan, gas mark 6, for 20 minutes. Stir and add a little more liquid if necessary and cook for a further 10 minutes. Serve with the rocket and spinach if required.

1 1/2 tablespoons olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 teaspoon sea salt
180 g arborio rice
375 ml chicken stock
400 g roma tomatoes, chopped
1 (185 g) tuna, in spring water
3 zucchini, finely sliced
fresh ground black pepper
2 tablespoons Italian parsley, finely chopped fresh
parmesan cheese (optional)

Steps:

  • Preheat the oven to 200°C.
  • Heat an ovenproof dish (with a lid) over a medium heat with oil. Add onion, garlic and sea salt and stir for five minutes, or until the onion is soft.
  • Add the rice to the dish and stir for another minute.
  • Add the stock and the chopped tomatoes and bring to simmering point. Stir in the tuna and zucchinis and season with black pepper.
  • Cover the dish, transfer to the oven and bake the risotto for 30 minutes, or until cooked.
  • Garnish with parsley and serve with parmesan if desired.

2 tablespoons extra-virgin olive oil
1 onion, finely chopped
1 clove garlic, finely chopped, optional
1 teaspoon sea salt
1 cup arborio rice
1 1/2 cups chicken stock or water
1 (14-ounce) can crushed Roma or Plum tomatoes
1 (6.4-ounce) can packed tuna in spring water, drained (recommended: Sirena)
3 zucchinis, thinly sliced
Freshly cracked black pepper
2 tablespoons finely chopped fresh flat-leaf parsley
Parmesan, for garnish, optional

Steps:

  • Preheat an oven to 400 degrees F. Place a large (about 12-cup) ovenproof dish over medium heat, about 1 minute. Add in the olive oil, the onion, garlic and sea salt. Saute until the onion is soft and translucent, about 5 minutes. Add the rice to the dish and stir for another minute or until the rice is lightly coated in oil and light gold in color.
  • Add the stock and the tomatoes to the dish. Bring the mixture to a simmer. Stir in the tuna, zucchini, and season with the black pepper, to taste. Cover the dish, with a lid or aluminum foil, and bake until the rice is tender and cooked through, about 30 minutes. Scatter the parsley over the top of the risotto and sprinkle with grated Parmesan cheese, if desired, before serving.

It's amazing how close you can get to the flavor of a Venetian seafood risotto using ingredients in your pantry.

2 5-ounce cans, water-packed light (not albacore) tuna
7 cups chicken or vegetable stock
2 to 4 garlic cloves (to taste), minced
2 tablespoons olive oil
3 tablespoons minced flat-leaf parsley
1/2 cup minced onion
2 to 3 anchovy fillets, soaked for 15 minutes in water to cover, rinsed and finely chopped (optional)
1 (14-ounce) can tomatoes, drained and finely chopped
1 1/2 cups Arborio rice
Salt and freshly ground pepper to taste
1/2 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc
Generous pinch of saffron
1 cup thawed frozen peas

Steps:

  • Drain the tuna over a bowl. Stir the tuna water into the chicken or vegetable stock. Taste and add more salt as needed for a well-seasoned stock. Break up the tuna in a bowl, and add to it 1 of the garlic cloves, 1 tablespoon of the olive oil, and the parsley. Set aside.
  • Bring the stock to a simmer in a saucepan and turn the heat to low.
  • Heat the remaining tablespoon of oil over medium heat in a large nonstick frying pan or wide saucepan and add the onion. Cook, stirring, until tender, about 5 minutes, and add the remaining garlic. Cook, stirring, for about a minute, until the garlic is fragrant, and stir in the anchovies and tomatoes. Cook, stirring, until the tomatoes have cooked down and the mixture is fragrant, 5 to 10 minutes. Season to taste with salt and pepper.
  • Add the rice and cook, stirring, until the grains of rice are separate and well coated with the tomato mixture, 2 to 3 minutes.
  • Stir in the wine and cook over medium heat, stirring constantly. The wine should bubble, but not too quickly. You want some of the flavor to cook into the rice before it evaporates. When the wine has just about evaporated, rub the saffron between your fingertips and stir in, along with a ladleful or two of the simmering stock, enough to just cover the rice. The stock should bubble slowly. Cook, stirring often and vigorously, until it is just about absorbed. Add another ladleful of the stock and continue to cook in this fashion, not too fast and not too slowly, adding more stock when the rice is almost dry, for 20 to 25 minutes. Taste a bit of the rice. It should taste chewy but not hard in the middle. Definitely not soft like steamed rice. If it is still hard in the middle, you need to keep adding stock and cook for another 5 minutes or so. Taste and adjust salt.
  • When the rice is cooked al dente, stir in the tuna mixture and peas and add another ladleful or two of stock and several twists of the peppermill. Stir for a couple of minutes, taste and adjust seasonings. The mixture should be creamy. Add a little more stock if it is not. Spoon onto plates or wide soup bowls and serve.

2 tablespoons extra virgin olive oil
1 onion, finely chopped
200 g arborio rice
375 ml chicken stock
400 g chopped tomatoes
2 (185 g) cans tuna
2 cups finely sliced zucchini
1/2 cup finely grated parmesan cheese
12 fresh basil leaves

Steps:

  • Pre-heat the oven to 200 C or about 375 F.
  • Heat the olive oil in a large pan over a medium heat.
  • Lightly fry the onion for about 5 minutes until translucent.
  • Add the rice and stir for another minute.
  • Add the stock to the rice with the tomatoes.
  • Bring to a simmering point and then stir in the tuna and zucchini.
  • Season with black pepper and salt and then put in an ovenproof dish and bake for 30 minutes or until the rice is cooked.
  • Scatter shredded basil leaves over the top and the freshly grated parmesan just before serving.

CREAMY TUNA RISOTTO

3 cups risotto rice
1/2 medium onion, finely diced
2 garlic cloves, minced
1 medium red bell pepper, diced
2 stalks celery, sliced
1/2 pint light cream
1 cup peas
1 lb tuna steak
1/4 lb buffalo mozzarella
1 tablespoon fresh rosemary
1 pint chicken broth

Steps:

  • Par boil rice in chicken broth for 5 minutes or until slightly softened.
  • Drain and set aside BOTH rice AND broth.
  • Brown garlic, pepper, celery and onion over medium heat.
  • Mix in rice and rosemary, and ladle broth over top until rice is covered. Lower to medium-low heat. Cover and cook for 10-15 minutes.
  • While rice is cooking, cube the tuna steak (about 1/2 inch cubes), season with black pepper and pan sear on high heat for 30 seconds on each side. Lay on top of rice and let cook at least five minutes.
  • Heat broiler to 350°F.
  • When rice is soft and broth fully reduced, mix in cream. Let cook two minutes and then set aside to steam for five minutes.
  • Cut thin slices of mozzarella.
  • Dish risotto into oven safe plates (ceramic pie plates work wonderfully) and cover with mozzarella slices and toss under broiler for 2-5 minutes, until cheese is melted and begins browning.
  • Serve immediately.

2 (6 ounce) cans solid white tuna packed in water, drained
4 tablespoons oil
1 large onion, chopped
1 green pepper, seeded and thinily sliced
2 teaspoons curry powder
1 cup salted peanuts, finely chopped
2 cups apple juice
salt
fresh ground pepper
1 cup apple, cored and diced
2 tablespoons lemon juice
3 tablespoons sugar

Steps:

  • Cook rice in boiling water for 10 minutes then drain thoroughly.
  • Heat oil in large frying pan and saute onion and green pepper with the curry powder for 5 minutes.
  • Add peanuts, apple juice, salt, pepper, diced apple, lemon juice and sugar and bring to a boil.
  • Add rice and tuna and simmer uncovered for 10 minutes stirring frequently.

I use stock to sauté the onions because my DH cannot have fat in his diet - it works very well, maybe it is just a little quicker to soften if oil is used. UPDATE - As my DH is no longer on a fat free diet, I now use extra virgin olive oil instead of the stock to saute the onion/leek and rice.

4 cups chicken stock
370 g canned tuna, slices in spring water
1 onion, chopped finely (or 1 leek)
1/4 cup stock, extra (I now use 2 tbs extra virgin olive oil)
1 -2 teaspoon chili, minced
1 tablespoon lemon juice
1 lemon, zest of
3/4 cup frozen peas
parmesan cheese, so serve on the side (optional)

Steps:

  • Sauté onion or leek in pan with the extra stock (or olive oil) add chilli and rice and cook 1-2 minutes.
  • Using a medium size saucepan bring stock to the boil, then reduce heat and allow to simmer.
  • Add 1 cup of the simmering stock to the rice, onion mixture and stir until stock has been absorbed; continue adding stock, a cup at a time and stirring frequently.
  • Add peas, tuna and lemon juice & zest and stir into risotto, cook another minute or two to heat through.
  • Serve parmesan on the side.

4 tuna steaks
1 tablespoon Worcestershire sauce
1 teaspoon salt and pepper
1 tablespoon lemon juice
1 cup risotto rice (Arborio rice)
2 cups chicken broth
2 cups water
1 onion, diced
1 garlic clove, crushed
1 tablespoon butter or 1 tablespoon margarine
3/4 cup shredded mozzarella cheese or 3/4 cup parmesan cheese
2 tablespoons lemon juice

Steps:

  • Risotto:.
  • Sauté onion in butter until soft.
  • Add rice to onion mixture and coat rice with mix.
  • On a lower heat, add ½ cup broth and 2 tbsp lemon juice.
  • Stir constantly and add another ½ cup of broth.
  • Repeat with ½ cup broth, ½ cup water until rice is tender but not mushy. It should be done slowly, and not all liquid needs to be used.
  • Stir in cheese.
  • Tuna:.
  • Baste tuna in Worcestershire sauce and lemon juice.
  • sprinkle salt and pepper on both sides of the steak.
  • On high heat, add oil or spray to a saute pan and wait for it to heat.
  • Sear the tuna on each side for only 1-2 minutes. Tuna steaks should be eaten with pink in the middle and should not be over cooked.
  • Serve with lemon.

425 g tuna, flaked
1/2 cup fresh herb, chopped (of your choice)

1/4 cup black olives, sliced
1 lemon rind, and juice of

Steps:

  • Heat stock in a saucepan and keep on the plate next to where you are making your rice. Keep hot.
  • Heat oil in frying pan and add onion and garlic. Saute until soft.
  • Stir in rice and cook 3 minutes until grains are coated with oil.
  • Add 1 cup stock and stir until liquid is absorbed.
  • Continue stirring in remaining stock 1 cup at a time until rice is tender and mixture is creamy. If rice is cooked after 3 cups don't add the 4th.
  • Fold in tuna, herbs, semi-dried tomatoes, olives, lemon rind and juice, chilli and seasoning.
  • To serve place paremsan shavings on top, extra chopped herbs and if desired a drizzle of olive oil.
