Buttery Tuna Rice Muffins are a healthy and delicious recipe perfect for a quick 30 minute weeknight dinner. Tuna cakes are made in muffin tins with brown rice, sharp cheddar cheese a savory lemon butter sauce for amazing flavor.

2 c. cooked rice
1 c. shredded cheddar cheese
1 can (6.5oz) tuna, drained
1 Tbsp. onion flakes
1 Tbsp. parsley flakes
1 tsp. seasoning salt
2 eggs, beaten
2 Tbsp. milk
3/4 c. sliced olives, OPTIONAL
2 Tbsp. butter, melted
2 tsp. lemon juice
1/4 tsp. seasoning salt
1/8 tsp. parsley flakes

Steps:

  • Preheat oven to 375°.
  • In a medium bowl, combine all of the tuna muffin ingredients, mixing until well combined.
  • Divide the mixture evenly between 6 greased muffin cups. Bake at 375° for 16-18 minutes until lightly golden brown on the top. Finish them under the broiler for a couple minutes if you want a crispier top.
  • Meanwhile, in a small bowl, combine all of the Lemon Butter Sauce ingredients.
  • Top the cooked tuna muffins with lemon butter sauce and enjoy!

2 eggs
2 teaspoons lemon juice
3 tablespoons grated Parmesan cheese
10 tablespoons Italian-seasoned bread crumbs
3 (5 ounce) cans tuna, drained
3 tablespoons diced onion
1 pinch ground black pepper
3 tablespoons vegetable oil

Steps:

  • Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
  • Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

2 cups cooked white rice
1 can tuna in vegetable oil (185g can)
1/2 cup frozen peas
1 egg
1 tablespoon soy sauce
2 tablespoons flour
1/4 cup oil (I use canola)

Steps:

  • Thaw peas.
  • Place rice in a large mixing bowl Drain tuna and add to rice with the egg, soy sauce, peas and flour.
  • Mix to combine.
  • Shape mixture in to 6 patties.

Crispy soy rice cakes are topped with homemade spicy tuna and diced chives for a delicious, Japanese dish, perfect for a sushi dinner!

1 lb sushi-grade ahi tuna
2 tbsp sriracha
1 tbsp sesame oil
1 tsp hot chili oil
1/4 cup vegenaise (or mayonnaise)
1 tbsp chives (chopped)
2 cups sushi or short grain rice
2 cups water (plus extra for rinsing rice)
2 tbsp rice vinegar (or white wine vinegar)
2 tbsp sugar
1 tbsp kosher salt
1/2 cup soy sauce (tamari for gluten free)
2 tbsp sesame oil

Steps:

  • Gently dice the ahi, then adding the rest of the ingredients to the tuna and mixing well.
  • Place in the refrigerator for 15-20 minutes.
  • Rinse the rice well, then combine the rice and 2 cups of water in a medium pot.
  • Bring to a boil then reduce the heat to low and cover.
  • Cook for 15 minutes, then remove from the heat, keep the rice covered away from the heat for 10 minutes.
  • Combine the rice vinegar, sugar and salt in a small bowl and microwave for 30 seconds.
  • Place the cooked rice in a glass bowl and add the vinegar mixture to the rice, combining well.
  • Allow the rice to cool, then tightly form into small rectangles.
  • Cook them lightly on each side in a skillet over medium heat with 1 tbsp of sesame oil.
  • Remove from the skillet and dip the rice cakes into the soy sauce.
  • Cook the rice cakes for an additional 2-3 minutes in 1 tbsp sesame oil on each side or until crisp and golden brown.
  • Remove from the skillet and top with the spicy tuna, then garnish with additional chopped chives.

3 cans (6 ounces each) tuna in olive oil, drained and flaked
1 large egg, lightly beaten
1/2 cup fresh cilantro, coarsely chopped, plus sprigs for garnish
1/3 cup plain dry breadcrumbs
2 tablespoons light mayonnaise
1 tablespoon fresh lemon juice
1 jalapeno chile (ribs and seeds removed), finely chopped
1 tablespoon olive oil
1/2 cup prepared salsa

Steps:

  • In a large bowl, stir together tuna, egg, cilantro, breadcrumbs, mayonnaise, lemon juice, and jalapeno. Mix gently until ingredients just hold together.
  • Using a packed 1/3-cup measure of tuna mixture per patty, shape into 8 cakes.
  • In a large nonstick skillet, heat oil over medium. Working in batches if necessary, cook cakes until golden brown and crisp on the outside, about 2 minutes per side. Serve hot, accompanied by salsa, and garnish with cilantro sprigs.

1 onion, finely chopped
1/2 lemon, juice of
1 pinch curry powder
425 g tuna, drained and flaked
2 eggs, beaten lightly
6 teaspoons flat leaf parsley, finely chopped
6 teaspoons vegetable oil (for frying)

Steps:

  • Combine rice, onion, lemon juice, curry powder, tuna, eggs and parsley in a large bowl. Mix with hands and shape to form patties.
  • Fry in oil on each side until golden.
  • Drain on paper towel.
  • Serve with a salad or cut-up raw vegetables.
