TUNA NOODLE CASSEROLE WITH CRUNCHY TOPPING



Tuna Noodle Casserole with Crunchy Topping image

There are no mushrooms to be found in this lightened-up (but still creamy) tuna noodle casserole with crunchy cornflake topping. Sweet peas and parmesan cheese add fresh flavor to this cozy classic.

1 lb Pasta, medium shells ((sub fusilli))
4 Tbsp Butter
3 Tbsp All-Purpose Flour
1 tsp Celery Seeds
2 1/2 cups Milk, any type
1 cup grated Parmesan Cheese
2 1/2 cups Peas ((use frozen and defrosted or canned, drained))
2 5 oz cans Tuna in Water, drained and broken apart
1/2 tsp finely grated Lemon Zest ((optional))
2 Tbsp Butter, melted
2 cups Cornflakes

Steps:

  • Preheat oven to 350°F / 177°C. Spray a 9x13 baking dish (or any casserole dish of similar size) with nonstick cooking spray or brush with some oil.
  • Boil noodles according to package directions.
  • While pasta boils, heat a saucepan over medium heat. Add butter and cook until butter is melted. To melted butter, add flour and celery seeds and stir until no dry spots remain. Continue cooking until butter-flour mixture starts turns golden brown, 2 to 3 minutes.
  • Slowly pour in milk while whisking. Bring the mixture to a simmer (adjust heat as needed), whisking constantly. Simmer until mixture thickens slightly, about 3 minutes more. Remove from heat and whisk in cheese.
  • Gently fold cooked pasta, peas, tuna, and lemon zest into sauce. Taste and season with some salt and black pepper (don't skip this step - the dish will be slightly salty from the cheese, but will likely need more salt).
  • Spread mixture out in prepared baking dish.
  • Gently stir together melted butter and cornflakes. Spread cornflakes over top of the casserole.
  • Bake until the topping is golden brown and the filling is heated all the way through, 20 to 25 minutes.
  • Serve immediately.

Recipe video above. Tuna Mornay is how you elevate canned tuna above a glum pantry staple into a delish family meal! It's a tuna casserole pasta bake with a creamy sauce, sweet pops of corn and crunchy topping, baked until golden and bubbly. Simple to make, economical and oh-so-delish!

350g / 12oz penne pasta ((or other short pasta))
40g / 3 tbsp butter
3 garlic cloves (, finely minced)
4 tbsp (50g) flour (, plain/all purpose)
4 cups (1 litre) milk (, any fat %, dairy or non dairy (1 quart))
2 tsp Vegeta, or chicken or veg stock powder/granulated bouillon ((Note 1))
1/2 cup (50g) parmesan (, finely shredded)
1/2 tsp each mustard powder, onion and garlic powder ((Note 2))
425g / 15 oz canned tuna (, preferably in oil, drained (sub salmon))
400g / 14 oz canned corn (, drained (or other veg, Note 3))
25g / 1.5 tbsp butter (, melted)
1/2 cup (60g) panko breadcrumbs
1/4g (25g) parmesan (, finely grated)
1/4 tsp salt
Chives or parsley (, optional garnish)

Steps:

  • Preheat oven to 180°C/350°F.
  • Crunchy Topping - Mix together.
  • Cook pasta per packet directions MINUS 1 minute. Drain then allow to cool slightly, then return into pot.
  • White Sauce - Melt butter in a large pot over medium heat. Add garlic and cook for 30 seconds.
  • Add flour and stir into melted butter. While whisking, gradually pour in about 1/3 of the milk. Once the flour-butter mixture is incorporated into the milk, pour in remaining milk and whisk.
  • Add Vegeta, mustard, onion and garlic powder, whisk.
  • When the milk starts to heat up, whisk constantly to make sure the white sauce doesn't catch on the base.
  • After 4 - 5 minutes, the sauce should be thick enough that you can draw a path across the back of a spoon (see video). Remove from stove and stir in parmesan.
  • Assemble & Bake - Add tuna into pasta and flake into large chunks with fork (not too much, don't want it to turn to mush when stirred). Add corn, pour over sauce, then gently stir.
  • Scrape into baking dish, top with Crunchy Topping.
  • Bake 25 minutes until top is golden and edges are bubbling. Sprinkle with chives if desired then serve!

This kid friendly tuna bake is easy to make. I had my 3 year old help make the topping and he thought it was delicious!

200 g large spiral pasta
300 g chunk tuna
420 g condensed cream of celery soup
1 cup grated cheese
1/4 cup fresh parsley
1 cup crushed corn chips
1/2 cup grated cheese

Steps:

  • Cook pasta in plenty of boiling salted water for 10 minutes or until al dente(firm to bite). Drain and rinse through cold water.
  • Stir Condensed Cream of Celery soup through pasta. Carefully fold in tuna chunks, cheese and parsley.
  • Pour into oven proof dish. Sprinkle topping on top.
  • Bake at 190 degrees celsius on fan bake for 20-25 minutes or until heated through and topping is golden.
  • Serve with grilled tomatoes and tossed salad. Enjoy!

I just love this dish. Different from a usual tuna bake, this can be served either hot or cold, with vegetables or salad.

2 (6 ounce) cans tuna in vegetable oil
1 medium onion (chopped finely)
450 g cheddar cheese
200 g potato chips (preferably cheese & garlic or similar)
1 egg (to bind)
50 g milk (to bind)
1 pinch salt & pepper
1 fresh tomato
1 -2 minced garlic cloves, minced or 1 teaspoon garlic powder

Steps:

  • Drain tuna & place in mixing bowl with onions, salt & pepper and half amount of cheese.
  • Crush 1/2 bag of potato chips & add to mixing bowl & mix together, with a little garlic powder and salt & pepper. If you can't get cheese & garlic chips, then cheese & onion will suffice, in which case, 1 clove of crushed garlic can be added.
  • Beat the egg & mix in with the tuna mixture.
  • Add a little milk if more binding required & place into ovenproof dish.
  • If you're adding fresh tomatoes, thinly slice tomato and layer with the tuna mix into the ovenproof dish.
  • Crush rest of crisps & mix with remaining grated cheese & sprinkle on top of tuna mix.
  • Bake in a medium oven for around 15-20 mins or until golden brown on top.
