A classic tuna casserole, now gluten free! This comforting dish combines gluten free rotini with onion, peas, cream, spinach and tuna, then is topped with gluten free bread crumbs and baked to a crispy, golden perfection.

1 (12 ounce) box Barilla® Gluten Free Rotini
4 tablespoons olive oil, divided
1 cup diced yellow onion
1 cup frozen peas, thawed
1 (10 ounce) package baby spinach
2 (6 ounce) tuna packed in oil, drained
2 cups heavy cream
3 cups shredded Cheddar cheese
½ cup Italian style gluten free bread crumbs
Salt and black pepper to taste

Steps:

  • Bring a large pot of water to boil and pre-heat the oven to 400 degrees F.
  • Meanwhile, add half of the olive oil to a pan and saute onions over high heat until slightly translucent (about 4 minutes). Adjust the head to medium and add peas and spinach until the spinach is wilted, then add the cream.
  • Season with salt and pepper and bring to simmer. Gently fold in 2 cups of cheese.
  • Meanwhile, cook pasta according to package directions. Drain pasta and toss with sauce and tuna.
  • Place pasta in a 13 x 9 baking dish and top with gluten free bread crumbs, remaining olive oil, salt and pepper.
  • Bake at 400 degrees F until bread crumbs turn crispy and golden, about 10 minutes.

1 (14.6 ounce) package penne pasta
1 tablespoon olive oil
1 tablespoon butter
1 onion, chopped
3 (5 ounce) cans tuna, drained and flaked
1 cup heavy whipping cream
salt and ground black pepper to taste
½ teaspoon ground nutmeg
1 ¼ cups grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and toss pasta with 1 tablespoon olive oil.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease an ovenproof baking dish.
  • While penne is cooking, melt butter in a large saucepan over medium heat. Add onion and cook, stirring often, until soft and translucent, about 5 minutes. Add tuna and cook for 2 minutes. Pour heavy cream over tuna and season with salt, pepper, and nutmeg. Add penne and toss well. Transfer to the prepared baking dish and cover with Parmesan cheese.
  • Bake in the preheated oven until the top is golden brown, 15 to 20 minutes.

My Mum makes a great tuna pasta bake, but since i found out of my intollerance to gluten i have had to find another recipe, i found this on wheat-free.org, havnt tried it yet but i intend to once i get back from spain

200 g canned tuna, in brine, drained
180 g sweetcorn, canned
800 g chopped tomatoes
1 tablespoon tomato puree
1 garlic clove, crushed (or garlic puree)
1/2 teaspoon dried herbs
150 g low-fat plain yogurt
100 ml milk (any type including soya, goats)
2 -3 dashes Tabasco sauce
black pepper, freshly ground
cheese, grated
gluten-free pasta (or wheat-free pasta, or rice pasta)

Steps:

  • Cook the pasta and drain well.
  • In a separate saucepan put the tomatoes, tomato puree, garlic, herbs and tabasco, bring to the boil then simmer for 10 minutes.
  • Allow to cool slightly or when adding the yogurt it will curdle.
  • Add the yogurt and sweetcorn to the tomato mixture and mix well.
  • Put the tuna in with the pasta and mix to distribute the tuna evenly.
  • Then tip the tomato mixture on top and stir thoroughly.
  • Tip the mixture into an ovenproof dish and top with grated cheese.
  • Cook in the oven for 30-35 minutes, until the top is golden and the misture is bubbling.
  • Serve on it's own or accompanied by a green salad.

12 ounces of whole-wheat pasta shells (or the pasta of your choice but try to get whole-wheat)
3 (7 ounce) cans albacore tuna, packed in water
1 1/4 cups fresh peas (frozen are also okay but fresh peas are much better)
8 ounces fresh sliced cremini mushrooms (also called Baby Bellas)
1 1/2 cups sharp cheddar cheese
2 (10 3/4 ounce) cans condensed mushroom soup
1 cup milk
1/2 cup olive oil mayonnaise (It's usually called Olive Oil Mayo)
1 medium red onion, chopped
1 cup roasted red pepper, chopped
1 tablespoon salt
3 tablespoons dried herbes de provence
3 tablespoons minced garlic (garlic powder will also suffice if that's all you have)
1 tablespoon mccormick crushed chipotle pepper
1/2 cup grated parmesan cheese
1/2 cup Italian seasoned breadcrumbs

Steps:

  • Preheat oven to 375°F.
  • Cook the pasta in boiling water for 8 minutes. Drain and set aside.
  • In a small bowl, combine the parmesan cheese and Italian bread crumbs and set aside.
  • In a large bowl, combine all of the other ingredients and then stir in the pasta.
  • Pour the mixture into a lightly oiled baking dish (9 x 12 inches) and then spread it evenly.
