1 (8 ounce) package egg noodles
2 (6 1/4 ounce) cans tuna, drained
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
8 ounces cheddar cheese, shredded
2 cups milk
1/3 cup margarine, melted
1/4 cup onion, chopped
1/4 teaspoon ground thyme
1/4 teaspoon salt
1/4 teaspoon pepper
potato chips, crushed for topping

Steps:

  • Cook noodles in boiling salted water per package instructions.
  • Mix remaining ingredients together well except for chips.
  • Add drained tuna mixture to cooked and drained noodles.
  • Place all in greased 2-quart casserole dish.
  • Sprinkle with crushed chips.
  • BAKE: 350ºF. oven for 45 minutes.

Mom's Tuna Casserole with potato chips is one of those classic dishes that was on every dinner table across the country back in the day, including ours.

10.5 oz. can Cream of Chicken soup
1/3 cup milk
2 5 oz. cans, chunk light tuna, drained and flaked
1 cup peas (frozen)
1/2 teaspoon salt
2 cups egg noodles (par-cooked and drained)
1 cup potato chips (crumbled)

Steps:

  • Bring a pot of water to boil, and cook egg noodles for about 6 minutes. Drain. These will finish cooking in the oven.
  • Spray a 1- 2 quart casserole dish or an 8x8 inch dish with cooking spray.
  • Mix together soup, milk, tuna, peas, salt, and drained noodles.
  • Pour into casserole dish and top with potato chips.
  • Cook in a 350 degree F oven for 30 minutes.

1 (12 ounce) package egg noodles
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup evaporated milk
1 (5 ounce) can tuna, drained
3 cups shredded American cheese
⅓ cup chopped onion
½ cup crushed potato chips
1 pinch paprika

Steps:

  • In a large pot with boiling salted water cook egg noodles until al dente. Drain.
  • In a large bowl combine the cooked egg noodles, cream of mushroom soup, evaporated milk, tuna, grated American cheese, and chopped onion. Pour into a greased 1.5 quart casserole dish. Sprinkle the top with the crumbled potato chips and the paprika.
  • Bake in a preheated 425 degree F (220 degree C) oven for 15 to 20 minutes.

I've played with Tuna Casserole since I can remember..taking what I know from my Mother's classic version with the Potato chip topping and making it my own. This is what I came up with! My Fiance isn't a huge Tuna Noodle Casserole lover, but he loves this one! ***Disclaimer - 99% of the dishes represented by the photographs...

12 oz bag wide egg noodles
SAUCE
1 1/2 c milk
2 can(s) condensed cream of mushroom soup
2 can(s) well drained tuna (3 oz)
1 c thinly sliced mushrooms
1 c frozen peas
1 Tbsp salt
1 Tbsp garlic powder
1 tsp black pepper
CRUMB TOPPING
1 1/2 c plain bread crumbs
1 c shredded cheddar
1/4 c melted butter

Steps:

  • 1. Preheat oven to 350 Fill dutch oven with water up to about 1 in from the top for your noodles. Bring water to boil. While waiting for water to boil begin working on your sauce and topping. In a medium bowl, combine all Sauce ingredients. Consistency of soup should be creamy, but not extremely thick. Set aside. Add your noodles to the boiling water and boil at a rolling boil for about 6 minutes. In another medium bowl, add plain bread crumbs and cheese. Melt butter in microwave until it is completely liquified. Using a fork, mix melted butter into crumb/cheese mixture. Mix until the mixture becomes slightly moist. Ditch the fork and go hands in! Make sure the butter is distributed evenly through the crumb mix. Remember..it should still appear somewhat dry. You should still be able to sprinkle it on with your fingers. Drain noodles..and return back to dutch oven. Pour Sauce mixture over noodles and mix together. If it appears too thick, you can add a tbsp of milk at a time to give it a little bit more moisture. Add noodles/sauce to 9x13 baking dish. Sprinkle cheese crumb on until noodles are completely covered with a thin layer. Put in oven for about 10 minutes until cheese crumb is golden brown. Don't cook for more than 15 minutes..you don't want your casserole to become dry! This dish can be modified with Reduced fat Soup, Reduced fat cheese and Light Tuna. Other variations I've used for toppings include Panko/Cheese Crumb, and the old fashioned Crumbled potato chips on top. This is my favorite though! Enjoy!

1 package (7 ounces) plain potato chips, divided
1 can (5 ounces) light tuna in water, drained and flaked
1 package (10-1/2 ounces) frozen asparagus tips, thawed and patted dry or 1 can (15 ounces) asparagus spears, drained and sliced
SAUCE:
2/3 cup evaporated milk
1 tablespoon lemon juice
1/4 teaspoon ground mustard
1/8 teaspoon white pepper
TOPPING:
1/4 cup shredded cheddar cheese
1/2 cup sliced almonds

Steps:

  • Crush chips and place half in greased 2-qt. baking dish. Arrange tuna over chips. Top with asparagus and the remaining chips. Combine sauce ingredients and pour over top. Sprinkle with cheese and almonds. , Bake, uncovered, at 325° for 20-25 minutes or until heated through. Let stand for 5 minutes before serving.

4 tablespoons unsalted butter, plus more for the baking dish
1 medium onion, finely chopped
8 ounces cremini mushrooms, sliced
1/4 cup all-purpose flour
2 cups whole milk
1 cup chicken broth
8 ounces medium pasta shells (about 3 cups)
One 6-ounce jar Italian tuna in olive oil, drained and flaked
2 tablespoons chopped fresh flat-leaf parsley
2 cups grated sharp white Cheddar
1 1/2 cups crumbled flavored potato chips, such as salt-and-vinegar, onion or jalapeno

Steps:

  • Preheat the oven to 375°F. Bring a large pot of salted water to a boil. Butter a 2-quart casserole or baking dish. Melt the butter in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Increase the heat to medium high and add the mushrooms and 1/4 teaspoon salt. Cook, stirring, until the mushrooms release their liquid and turn golden brown, 8 to 10 minutes. Sprinkle the flour over the mushrooms and cook, whisking, about 1 minute. Gradually add the milk while whisking constantly, then whisk in the chicken broth. Bring the mixture to a simmer, stirring often. Simmer until thickened, about 5 minutes. 1/4 cup (1/2 stick) unsalted butter
2 1/2 cups thinly sliced leeks (white and pale green parts only; from about 2 large)
1/4 teaspoon celery seeds
Coarse kosher salt
1/4 cup all purpose flour
2 cups whole milk
1/2 cup half and half
1 teaspoon fresh lemon juice
8 ounces wide egg noodles
1/2 cup coarsely grated Gruyère cheese (about 2 1/2 ounces)
2 tablespoons chopped fresh dill
2 5- to 6-ounce cans albacore tuna (preferably packed in olive oil), drained, broken into 1/2-inch chunks
2 cups coarsely crushed salted potato chips (about 2 ounces)

Steps:

  • Butter 8 x 8 x 2-inch glass baking dish. Melt unsalted butter in heavy large saucepan over medium heat. Add leeks and celery seeds to saucepan; sprinkle lightly with coarse kosher salt. Cover saucepan and cook until leeks are tender but not brown, stirring often, about 8 minutes. Add flour; stir 1 minute. Gradually add milk and half and half; simmer until mixture thickens slightly, stirring often, about 5 minutes. Stir in lemon juice. Season leek sauce to taste with coarse kosher salt and pepper. Remove sauce from heat.
  • Meanwhile, cook egg noodles in large pot of boiling salted water until tender, stirring occasionally. Drain noodles, reserving 3/4 cup noodle cooking liquid. Transfer noodles to large bowl. Pour leek sauce over noodles. Add grated Gruyère cheese and dill and stir to blend; add reserved noodle cooking liquid by tablespoons until mixture is moist and creamy (about 8 tablespoons). Fold in tuna. Transfer to prepared baking dish. DO AHEAD: Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover with foil and keep refrigerated.
  • Preheat oven to 375°F. Bake noodle casserole, covered with foil, until heated through, about 20 minutes if freshly made or 30 minutes if chilled. Remove foil. Sprinkle crushed potato chips over and continue to bake, uncovered, until top is golden brown and filling bubbles, about 10 minutes longer. Serve hot.
