CREAMED TUNA

1 clove garlic (minced)
1/4 cup onion (diced)
2 tablespoons butter
2 tablespoons flour
1 tablespoon white wine
1 cup milk
1/4 cup frozen peas
1/4 cup diced mushroom
1/4 cup shredded mozzarella cheese
1 can tuna (drained)

Steps:

  • Melt butter.
  • Stir in onions, mushrooms and garlic.
  • Sauté over medium heat until translucent.
  • Mix in flour.
  • Mix in wine, stir for a few seconds.
  • Add milk, peas, mozzarella and tuna.
  • Cook another 5 minutes or so until thickened.
  • Add Salt and pepper to taste.
  • Serve over toast or pasta.
  • (I prefer to serve this with homemade gnocchi).

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.

While we love many kinds of tuna salad, this classic version tops them all. The crispy celery and red onion give add zest and crunch, while mayonnaise and touch of mustard marry it all together. The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole-grain mustard
Freshly ground black pepper
Freshly squeezed lemon juice (optional)

Steps:

  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.
