TUNA NOODLE CASSEROLE WITH POTATO CHIP TOPPING

Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter, plus more for the baking dish
1 medium onion, finely chopped
8 ounces cremini mushrooms, sliced
1/4 cup all-purpose flour
2 cups whole milk
1 cup chicken broth
8 ounces medium pasta shells (about 3 cups)
One 6-ounce jar Italian tuna in olive oil, drained and flaked
2 tablespoons chopped fresh flat-leaf parsley
2 cups grated sharp white Cheddar
1 1/2 cups crumbled flavored potato chips, such as salt-and-vinegar, onion or jalapeno

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil. Butter a 2-quart casserole or baking dish.
  • Melt the butter in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Increase the heat to medium high and add the mushrooms and 1/4 teaspoon salt. Cook, stirring, until the mushrooms release their liquid and turn golden brown, 8 to 10 minutes. Sprinkle the flour over the mushrooms and cook, whisking, about 1 minute. Gradually add the milk while whisking constantly, then whisk in the chicken broth. Bring the mixture to a simmer, stirring often. Simmer until thickened, about 5 minutes.
  • Meanwhile, cook the pasta in the boiling water until al dente according to the package directions. Drain the pasta and stir it into the mushroom mixture. Add the tuna and parsley and stir to combine. Turn off the heat and add 1 cup of the Cheddar. Stir to combine. Season with salt and pepper.
  • Transfer the mixture to the prepared baking dish. Sprinkle the remaining 1 cup Cheddar on top and then cover with the potato chip crumbs. Bake until bubbling and golden brown on top, about 20 minutes. Let stand 5 minutes before serving.

1 (11 1/2 ounce) bag jay's potato chips
1 (7 1/2 ounce) can tuna
1 (10 2/3 ounce) can cream of mushroom soup
milk

Steps:

  • Make soup according to directions on label.
  • In a casserole dish: put a layer of potato chips on bottom.
  • Alternate with layers of tuna to end up with 3 layers of tuna; 4 layers of chips.
  • Pour soup over all. Add another layer of chips on top.
  • Bake in a 350° oven (uncovered) for 15 minutes.

1 can (5 ounces) light tuna in water, drained and flaked
1 package (10-1/2 ounces) frozen asparagus tips, thawed and patted dry or 1 can (15 ounces) asparagus spears, drained and sliced
SAUCE:
2/3 cup evaporated milk
1 tablespoon lemon juice
1/4 teaspoon ground mustard
1/8 teaspoon white pepper
TOPPING:
1/4 cup shredded cheddar cheese
1/2 cup sliced almonds

Steps:

  • Crush chips and place half in greased 2-qt. baking dish. Arrange tuna over chips. Top with asparagus and the remaining chips. Combine sauce ingredients and pour over top. Sprinkle with cheese and almonds. , Bake, uncovered, at 325° for 20-25 minutes or until heated through. Let stand for 5 minutes before serving.

1 can mushroom soup, undiluted
plain potato chips

  • Mix together the first 3 ingredients.

2 (7 ounce) cans albacore tuna in water, drained (I use StarKist with Omega 3)
1/2 cup frozen petite sweet peas (or use green olives, sliced)
2 tablespoons minced onions
1 (4 ounce) jar pimientos, sliced
1 (10 3/4 ounce) can condensed cream of celery soup (I use reduced fat)
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350°F Lightly grease a 2 quart casserole dish. Spread 1 cup crushed potato chips (or crackers) evenly on bottom of casserole dish.
  • Next, layer 1 can of tuna, ½ of peas, ½ of onions, red pimientos and ½ of soup. Sprinkle cheddad cheese on top of this.
  • Repeat layering with tuna, peas, onion, pimientos and soup. Finish with a layer of chips, and top shredded cheese.

This recipe is from a 1959 Crisco cookbook, Praise For The Cook, and I'm posting it as part of my ongoing contribution of vintage recipes from my vast collection of older cookbooks. Apparently, this casserole is "good for busy "meeting" days" since you can "fix it in the morning and bake it for evening". If you do that, it will likely take longer than 30 minutes to heat through, though.

Steps:

  • Preheat oven to 350F, have ready a lightly greased casserole dish.
  • In a saucepan over medium heat, melt shortening; blend in flour, salt, and pepper.
  • Add milk and worcestershire sauce and cook until thick and smooth, whisking constantly; remove from heat.
  • Place 1/4 of the chips in the bottom of the casserole dish; top with 1/3 of the tuna.
  • Repeat layers, ending with a topping of potato chips.
