I call this a classic tuna casserole because it is made with a boxed macaroni and cheese and the basic ingredients we all grew up with. This is comfort food at it's best, my two favorites mixed together. This is so good that I took a picture of it after having it for dinner and decided it should be shared on my favorite recipe site. You will love it too.

nonstick cooking spray
1 (7.25 ounce) package macaroni and cheese dinner mix (such as Kraft®)
¼ cup butter
¾ cup milk
1 (10.5 ounce) can condensed cream of chicken soup
1 (15 ounce) can sweet peas, drained
1 (5 ounce) can chunk light tuna, drained and flaked
1 cup shredded mild Cheddar cheese
1 ⅓ cups French-fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick spray.
  • Bring 6 cups water to a boil in a medium saucepan. Stir in macaroni from the box and cook for 7 minutes. Drain macaroni, then rinse under cold water and drain again. Set cheese sauce packet aside.
  • Melt butter in the same saucepan over medium heat. Add milk and cheese sauce packet; mix well. Stir in condensed soup and cook until heated through, about 3 minutes.
  • Combine drained macaronis, peas, and tuna in a bowl. Fold in the cheesy soup mixture. Pour mixture into the prepared baking dish.
  • Bake in the preheated oven for 30 minutes. Sprinkle with Cheddar cheese, then sprinkle French-fried onions over top. Bake until onions are brown and cheese is melted, another 5 minutes.

1 pound hollow cavatappi or elbows with lines, or macaroni with lines
About 3 tablespoons EVOO, plus extra for drizzling
12 ounces line-caught canned tuna, drained
1/2 cup finely chopped fresh herbs, such as dill, parsley and tarragon
1/2 cup finely chopped red onion or scallions, whites and greens
2 tablespoons Dijon mustard
1 to 2 small ribs celery, finely chopped
1 lemon, juiced
Freshly ground black pepper
1 stick butter
3 tablespoons flour
About 2 1/2 cups whole milk
2 cups grated white Cheddar or gruyere cheese
1 1/2 cups homemade breadcrumbs or panko
1/2 cup grated Parm

Steps:

  • Bring a large pot of water to boil for the pasta. Salt the water and cook the pasta to less than al dente, 5 to 6 minutes. Drain and drizzle with a touch of oil to keep the pasta loose.
  • In a large bowl, flake the tuna and add the herbs (reserving a tablespoon or 2 for breadcrumbs), onions, mustard, celery, lemon juice, EVOO and some salt and pepper. Add the pasta and combine well. Transfer to a baking dish or large casserole dish.
  • In a medium saucepot, melt 4 tablespoons of butter. Whisk in the flour and cook 1 minute. Then whisk in the milk and season with salt and pepper, thicken to coat the back of a spoon. Stir in the Cheddar in a figure-eight motion. Pour the sauce evenly over the pasta and tuna. Gently combine with a spoon to settle the sauce. Cool and store for a make-ahead meal.
  • Melt the remaining 4 tablespoons of butter in a small pan and add the breadcrumbs and reserved herbs, toss to evenly distribute the butter, remove from heat and transfer to airtight container.
  • To prepare, preheat the oven to 400 degrees F and bring the casserole to room temperature. Top the casserole with breadcrumbs and Parm cheese. Bake until golden and hot through.

2 box macaroni and cheese
2 can(s) tuna
2 can(s) cream of mushroom soup
1 can(s) mushrooms
1 can(s) peas
1/2 c milk
1/4 c minced onions
1/2 c medium cheddar cheese
2 Tbsp garlic salt
1/2 c bread crumbs

Steps:

  • 1. Make the boxed macaroni and cheese according to package directions.
  • 2. Mix Tuna, Soup, Mushrooms, Peas, Milk, minced Onions, Cheese and Seasonings ( I like garlic salt but use what you like according to your own taste.)
  • 3. Combine Macaroni and cheese with the Tuna mixture. Pour into a 9x11' baking dish. Top with Bread Crumbs (or if you would like more crunch use crushed potato chips, French Fried Onions, Croutons or whatever you want to use.)
  • 4. Bake in a 350 degree oven for 20 minutes

1 can (14.5 oz.) diced tomatoes, drained
1 small onion, quartered
2 tsp. smoked paprika
3 cans (5 oz. each) white tuna in water, drained, flaked
1 pkg. (10 oz.) frozen peas
1 jar (7 oz.) roasted red peppers, drained, chopped
1 egg, beaten
1 pkg. (8 oz.) KRAFT Mexican Style Finely Shredded Four Cheese, divided

Steps:

  • Heat oven to 350ºF.
  • Prepare Dinners in large saucepan as directed on package.
  • Meanwhile, blend next 3 ingredients in blender until smooth; spoon 1/2 cup into 3-qt. casserole sprayed with cooking spray. Mix remaining tomato sauce with tuna, peas and red peppers.
