This recipe is quick and easy; my children love it. Serve over toast, biscuits, or rice. It's good for breakfast or brunch.

¼ cup butter
½ cup frozen peas
1 small onion, chopped
1 clove garlic, minced
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup milk, or as needed
2 (5 ounce) cans tuna, drained
salt and ground black pepper to taste

Steps:

  • Melt butter in a saucepan over medium heat. Saute peas, onion, and garlic in hot butter until onion is translucent, 5 to 7 minutes.
  • Pour mushroom soup over the peas mixture; add enough milk to the mixture to thicken the soup to the point of there being no lumps. Flake tuna and add to the skillet; season with salt and pepper. Cook until the mixture is warm and bubbly, about 10 minutes.

8 ounces penne
1 large clove garlic
2 teaspoons olive oil
1/4 teaspoon hot pepper flakes
1/2 cup dry white wine
2 cups crushed no-salt-added tomatoes
2 tablespoons no-salt-added tomato paste
8 ounces fresh tuna
2 cups frozen peas

Steps:

  • Bring a pot of water to boil for cooking the penne.
  • Mince garlic and sauté in hot oil in a nonstick skillet for about 30 seconds. Add hot pepper flakes and sauté for 15 seconds.
  • Add wine and cook quickly to reduce by half.
  • Add tomatoes and tomato paste; reduce heat and simmer gently.
  • When water boils, add penne and cook according to package directions.
  • Cut tuna into bite-size chunks. Add to tomato sauce with peas. Cook 5 minutes, until tuna is cooked.
  • When penne is cooked, drain and serve with the tuna-pea sauce.

1/4 cup margarine
1/4 cup flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
15 ounces peas
6 ounces tuna

Steps:

  • Begin by melting the margarine in a 2-quart saucepan. Use a fork or a whisk to stir in the flour making sure it is smooth. Gradually stir in the milk. If you have a whisk you can go a little faster because a whisk can beat out any lumps. If you are using a fork then go very slowly so you can keep the mixture smooth. When the mixture is smooth stir in the sugar, salt and pepper. Cook and stir the sauce until it begins to boil. Allow it to boil for a full minute by the clock. Now remove the sauce from the heat.
  • Drain the peas and the tuna. Stir gently and reheat only till boiling again. Do not overcook or the peas will get mushy. Serve over buttered toast or biscuits, rice, or noodles. The salt may be replaced with celery salt or garlic salt if desired.
  • To use fozen peas instead of canned, simply replace the canned peas with 2 cups frozen peas. Allow the sauce to reheat for a minute or two so you will be sure the peas are cooked through. Do not ovecook the frozen peas wither. This is vital for a good dish.

This is a more high end version of tuna noodle casserole. I sometimes add mushrooms too.

1 c fine breadcrumbs
2 Tbsp melted butter
1/2 c grated parmesan cheese
1 large onion diced
4 clove garlic minced
6 Tbsp butter
4 Tbsp flour
2 c milk
zest of 1 lemon
pinch of freshly grated nutmeg
3/4 c heavy cream
16 oz box fusilli pasta
2 small can tuna drained
1 1/2 c each frozen peas and corn
2 Tbsp fresh squeezed lemon juice
1/3 c freshly chopped parsley
salt and pepper to taste

Steps:

  • 1. mix the breadcrumb, parmesan cheese and melted butter together. Place in a pie pan and place in 300 degree oven to brown. Stirring a couple of times. Set aside.
  • 2. Cook the pasta in boiling salted water until al dente drain reserving pasta water.
  • 3. Add butter to large saucepan. Stir in onions, and garlic cook until softened. Stir in flour. Cook 1 minute. Slowly stir in the milk. Cook until thickened. Add the heavy cream, nutmeg, and lemon zest. Cook until creamy adding pasta water if too thick. Stir in peas and corn. Cook 2 minutes. Stir in tuna and noodles adding more water if neccessary. Add lemon juice season with salt and pepper to taste. Top with parsley. Sprinkle the breadcrumbs on the bottom or top of casserole when serving.

This is a fresh and modern take on two recipes from my Italian mother-in-law. Fresh peas in place of canned, sun dried tomatoes in place of heavy tomato sauce and Bumble Bee® Solid White Albacore Tuna in Water replacing tuna in oil. This is a fast and flavorful meal to put together with just a few shelf stable ingredients.

1 (16 ounce) package linguine pasta, cooked and kept warm
2 (5 ounce) cans Bumble Bee® Solid White Albacore Tuna in Water, undrained
1 (6 ounce) package frozen peas
8 ounces fresh peas, rinsed
1 medium onion, diced
1 tablespoon minced garlic
½ cup julienne cut sun-dried tomatoes with herbs, drained, oil reserved
2 cups vegetable broth
Salt and black pepper to taste
1 pinch Crushed red pepper flakes to taste
1 tablespoon chopped fresh parsley
¼ cup grated Parmesan cheese for topping

Steps:

  • Place the oil from the sun dried tomatoes in a large saute pan over medium heat. Add in onions and garlic. Cook over medium heat until onions begin to turn translucent, about 4 minutes. Add the broth to the onions and bring to a simmer.
  • Stir in the peas and the sun dried tomatoes. Cook for another 3 minutes. Peas should remain crisp so be careful not to over cook.
  • Stir in undrained tuna and heat through. Be careful not to break up too many large pieces of the tuna while stirring. Cook about 2-3 minutes. Add salt and pepper to taste and crushed red pepper if desired.
  • Serve immediately over hot pasta. Garnish with parsley and top with grated Parmesan cheese.

1/4 cup sugar snap peas, julienne
1 tablespoon black olive tapenade
1 teaspoon shallots, minced
1 teaspoon aged balsamic vinegar
1 teaspoon extra virgin olive oil
1 teaspoon parsley, chopped
1 pint red currants
1 green apple*
1/4 cup good-quality extra virgin olive oil
Salt and freshly ground white pepper to taste
4 ounces sashimi-quality bigeye tuna
Sea salt (Maldon, sel gris, or fleur de sel)
1/4 ounces white frisée
1/4 ounces purple micro radish (or other micro greens)

Steps:

  • Combine the ingredients for the snap pea salad. Allow the salad to marinate for about half an hour in the refrigerator.
  • Purée the currants through a fine sieve. Discard solids and reserve liquids.
  • Peel the apple and juice it in a juicer, or substitute fresh apple cider.
  • Combine the currant purée with the apple juice, and slowly whisk in the olive oil. When the oil is incorporated, season with salt, white pepper, and a few drops of porcini oil. (Use porcini oil sparingly, as too much will dominate the other flavors.) Cover and reserve in refrigerator.
  • Using a very sharp knife, slice the tuna against the grain into 1/8-inch-thick slices. Sprinkle with sea salt and freshly ground pepper. Drizzle with extra virgin olive oil.
  • To serve, lay the slices of fish over some of the pea salad and brush with the red apple vinaigrette. Garnish with the most delicate white leaves of frisée and a few sprigs of micro red radish.
  • *You can substitute 1/2 cup fresh apple cider plus 1 teaspoon lemon juice.

3 tablespoons butter
6 tablespoons flour

1 (10 3/4-ounce) can chicken broth
1 1/2 cups milk
1 (6-ounce) can tuna, drained and flaked

1/4 cup sour-cream
1/3 cup minced, canned pimientos, drained
2 cups sifted flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 vegetable shortening
2/3 cup milk
1/2 cup shredded sharp Cheddar or American cheese
1 box frozen peas
2 tablespoon butter
1 teaspoon dried mint

Steps:

  • Preheat oven to 425 degrees. Lightly butter 11/2 to 2-quart casserole and set aside.
  • Tuna Mixture:
  • Stir-fry onion in butter in a large heavy skillet over moderate heat, until lightly browned, about 5 to 8 minutes. Blend in flour and salt, then broth. Add milk and heat, stirring constantly until thickened and smooth, 3 to 5 minutes. Mix in tuna, sour-cream, pimiento and lemon juice; set off heat, but keep warm.
  • Cheese Swirl Biscuits:
  • Sift flour, baking powder, and salt together into a large mixing bowl. Add shortening and cut in with pastry blender until texture of coarse meal. Add milk and fork briskly to make soft dough. On a lightly floured surface, roll the dough into a 12 by 8 by 1/4-inch rectangle. Scatter cheese evenly on top, then jelly-roll style, starting from short end, to form roll 8 inches long. With floured sharp knife, slice 1-inch thick. Spoon tuna mixture into casserole. Space biscuits evenly on top, arranging so spiral designs show. Bake, uncovered, until biscuits puff and brown slightly -- about 20 minutes. In a saucepan with 1/2 cup boiling water add frozen peas, follow directions on the back of package. Drain. In a glass bowl, toss peas, with butter and dried mint.

10 1/2 ounces cheddar cheese soup
15 ounces peas, drained
1 (6 ounce) can tuna in water, drained
1 cup milk
salt
pepper
luzianne cajun seasoning
hot sauce
toast

Steps:

  • Combine the soups in a skillet with milk and stir until you have the right consistency of a gravy while heating up. You do need to stir this while its heating up, just like a gravy. You might need a little more milk.
  • Stir in the drained peas and tuna.
  • Add the spices to your tastes and shake in a few shakes of hot sauce.
  • Serve over pieces of toast.

16 Oz. Penne Pasta
2 Tablespoons Olive Oil
1 Onion Diced
1 Jar Bertolli Marinara Sauce-
Tomato & Basil
2 Garlic Cloves - Diced
Salt and Pepper to Taste
8 Oz. Frozen Peas
8 oz. Chunk Light Tuna

Steps:

  • Boil 4 quarts ofwater in large pot. Add salt to water. When boiling add pasta. For last two minutes of cooking, add frozen peas and cook until Al Dente. Drain in collander under cold water to stop cooking process. Meanwhile add olive oil to saute pot. When hot add diced onions until soft. Add Bertolli Marinara Sauce, garlic , tuna, salt and pepper to taste. Saute on low flame for 20 minutes for flavors to blend. To serve mix marinara sauce to pasta and peas and enjoy.

1 lb. mini bowtie pasta
1 cup frozen peas
1/2 cup diced red or white onion
3/4 cup diced dill pickle
2-5 oz. cans tuna, drained {I used albacore tuna packed in water}
1/2 lemon, juiced
1 cup real mayonnaise
1 tablespoon dried dill
salt & pepper, to taste

Steps:

  • Bring large pot of water to boil. Salt water and cook pasta until al dente. Stir in frozen peas and cook 30 seconds. Drain pasta and peas. If you want room temperature pasta salad, don't rinse. If you want cold pasta salad, rinse with cold water. In a large bowl, stir cooked pasta and peas together with remaining ingredients until everything is evenly coated in sauce {made from mayonnaise and lemon juice}. Serve or refrigerate covered until ready to serve.
