Number Of Ingredients 11

1 10 Oz Pkg couscous
1 15 oz can Black beans, drained and rinsed
1 C Papaya, peeled and diced
1 C Spinach leaves, shredded
1 Green onion, minced
2 Tbl Lime juice
2 Tbl Olive oil
1/2 tsp Ground cumin
1/4 tsp salt (optional)
1/8 tsp Cayenne pepper
1/4 C Chopped smoked almonds

Steps:

  • Prepare couscous according to package directions omitting butter or loive oil. Transfer to large bowl. Cool 10 minutes. Stir in remaining ingrediants, except almonds. Mix well Transfer to serving paltter; sprinkle with almonds.
