A very dark, rich chocolate cookie for the true chocoholic. This recipe uses relatively little flour, resulting in dense, fudge-like cookies. These cookies keep well in the freezer (but you may have a hard time waiting for them to thaw before you eat them).

4 (1 ounce) squares unsweetened chocolate, chopped
1 cup semisweet chocolate chips
6 tablespoons butter
3 eggs
1 cup white sugar
1 ½ teaspoons vanilla extract
½ cup all-purpose flour
2 tablespoons unsweetened cocoa powder
¼ teaspoon baking powder
¼ teaspoon salt
1 cup semisweet chocolate chips

Steps:

  • In the microwave or in a metal bowl over a pan of simmering water, melt unsweetened chocolate, 1 cup of the chocolate chips, and the butter stirring occasionally until smooth. Remove from heat and set aside to cool. In a large bowl, whip eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed. Combine the flour, cocoa, baking powder and salt; gradually stir into the chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least an hour or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Roll chilled dough into 1 inch balls. Place on ungreased cookie sheets so they are 2 inches apart.
  • Bake for 9 to 11 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1/3 cup butter

Steps:

  • In a large saucepan over low heat, melt the unsweetened chocolate, 1 cup of the chocolate chips, vanilla, and butter together; stirring, until smooth.
  • Remove pan from heat; cool for 10 minutes.
  • In a large bowl, beat the eggs and sugar together for 2 minutes with an electric mixer on medium speed.
  • Beat in the vanilla and chocolate mixture.
  • Combine the flour, cocoa powder, baking powder, and salt; add to the chocolate mixture just until combined.
  • Stir in the remaining chocolate chips.
  • Cover dough and chill for at least 3 hours.
  • Remove about 1 cup of the dough from the refrigerator; with lightly floured hands, roll into 1" balls.

1/3 cup (about 3 oz) chopped dark chocolate
1 large egg
1 tbsp vanilla extract

Steps:

  • Preheat oven to 375° with racks in center and upper third. Line 2 baking sheets with parchment.
  • Whisk together flour, sugar, cocoa powder, baking powder, salt, and espresso powder (if using). Rub butter into dry ingredients until mixture resembles breadcrumbs. Stir in chocolate.

These cookies are our very favorite Christmas cookies. My husband has been making these with our kids since the oldest was just 1 1/2 years. They are amazing - chocolaty, fudgy and moist. A true winning combination. The dough needs to be refrigerated for 2 hours which is not included in the prep time. Cookies can be frozen for about a month and will last in airtight container for about a week (although we never actually have been able to test this time because the cookes are gone in no time). 3 ounces semisweet chocolate, chopped
3/4 cup butter
1 1/2 cups sugar

1/2 cup chocolate chips (mini is preferred)
1/2 cup candy cane, crushed finely

Steps:

  • In a heavy saucepan melt unsweetened, semi-sweetened chocolate and butter over medium low heat. Remove from heat.
  • Vigorously whisk in sugar; hereafter whisk in eggs 1 at a time, lastly whisk in the mint extract.
  • In a seperate bowl mix flour with baking powder; and add to the chocolate mixture. Stir in chocolate chips.
  • Transfer to bowl, cover with plastic wrap and refreigerate for 2 hours (up to 24 hours).
  • Preheat oven to 350 F.
  • Prepare baking sheet with parchment paper or spray with cooking spray.

Steps:

  • Take 24 cookie sandwiches and remove the filling from the center. Collect those in one small bowl, and collect the cookies in another small bowl.
  • Place remaining cookies in a resealable bag and smash the cookies with a pan into fine crumbs.
  • Save the white filling for later.
  • In a medium-sized pan, combine white chocolate chips, heavy cream, and cookie sandwich fillings over low heat. Mix until you achieve a smooth consistency.
  • Pour mixture into a bread pan.
  • Allow to sit in the refrigerator for an hour to cool down.
  • With an ice cream scoop, form balls from the mixture (refreeze if truffle begins to melt).
  • In a small bowl, melt semisweet chocolate. On a cutting board, crush cookies.

Steps:

  • In heavy 2-quart saucepan, melt 6 ounces chocolate over low heat, stirring frequently; remove from heat. Stir in 2 tablespoons butter, the half-and-half and 1/2 cup powdered sugar; cool.
  • Shape mixture into 1-inch balls. Place on ungreased cookie sheet; freeze uncovered about 30 minutes or until set.

Stir enough additional powdered sugar into remaining icing until stiff enough to pipe. SKIPPY TRUFFLE COOKIES

I found this recipe in the back of my junk drawer, obviously cut out from a magazine, and I thought the cookies tasted great. It was perfect for me because I try to avoid wheat / gluten. I'm posting the recipe as printed, and it was yummy, but I think next time I will reduce the sugar by at least 1/4 of a cup (maybe more) and add a tsp of vanilla. Added note: I suspect the negative reviewer made these too big. They are very soft for quite a while after coming out of the oven, and I imagine they would never be easy to eat if you made them bigger than they are supposed to be. I use slightly rounded teaspoonfulls of cookie dough and get 2 dozen. Once they cool, they are only a little softer than any normal cookie and are easy to eat. Good luck!

8 ounces bittersweet baking chocolate
1/2 cup (1 stick) butter
1 cup sugar, divided
1 egg
1/2 teaspoon McCormick® Pure Peppermint Extract
2 cups flour
36 milk chocolate kiss-shaped candies, unwrapped

Steps:

  • 1. Preheat oven to 350 degrees F. Microwave chocolate and butter in large microwavable bowl on HIGH 1 to 2 minutes or until butter is melted. Let stand 10 minutes to cool slightly. Add 1/2 cup of the sugar, egg and peppermint extract. Beat with electric mixer on medium speed until well blended. Gradually beat in flour on low speed until well mixed.
  • 2. Shape dough into 1-inch balls. Press a chocolate candy into the center of each ball, forming dough around the candy to completely enclose it. Roll in remaining 1/2 cup sugar to coat. Place 1 inch apart on greased baking sheets.
  • 3. Bake 9 to 11 minutes or until cookies are set. Cool on baking sheets 5 minutes. Remove to wire racks; cool completely.
  • White Chocolate Drizzled Peppermint Truffle Cookies: Prepare, bake and cool cookies as directed. Melt 4 ounces white baking chocolate, coarsely chopped, and 4 teaspoons milk as directed on package. Stir in 1/8 teaspoon McCormick® Pure Peppermint Extract. Spoon into small resealable plastic bag. Cut a small piece from one of the bottom corners of bag. Close bag tightly, then drizzle the chocolate in a zigzag pattern over each cookie. If desired, sprinkle each cookie with finely crushed peppermint candies.
  • Sparkling Peppermint Truffle Cookies: Prepare and shape cookies as directed. Roll in holiday-colored sparkling sugars. Bake as directed.

17 ounces 58% cacao chocolate pistoles
10 ounces white chocolate calets
5 ounces 38% cacao chocolate pistoles
1/3 cup all-purpose flour
2 tablespoons cake flour
3 tablespoons cocoa powder (Dutch process)
1 teaspoon Vietnamese extra-fancy cinnamon
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon cream of tartar
1/4 teaspoon fine sea salt
4 ounces unsweetened chocolate, chopped
1/4 cup plus 1 tablespoon European-style butter
3 large eggs
3 large egg yolks
1 1/3 cups plus 2 tablespoons superfine sugar
1 1/8 teaspoons Trablit or pure coffee extract
2 3/4 teaspoons pure vanilla extract
1 cup coarse sanding sugar

Steps:

  • Place 5 ounces of 58% cacao, white chocolate, and 38% cacao on a cutting board; very coarsely chop chocolate, leaving a third of the pieces whole. Set aside.
  • In a large bowl, whisk together both flours, cocoa powder, cinnamon, baking powder, baking soda, cream of tartar, and salt; set aside.
  • Set a heatproof bowl over (but not touching) simmering water. Add remaining 12 ounces 58% cacao, unsweetened chocolate, and butter; let melt, stirring, until well combined.
  • Transfer chocolate to the bowl of an electric mixer fitted with the paddle attachment. Add eggs and yolks; blend until just combined. Add superfine sugar, Trablit, and vanilla; mix to combine. Add flour mixture and mix to just combine, scraping down sides of bowl as necessary. Add reserved chopped and whole chocolate pieces; mix to just incorporate. Cover and transfer dough to refrigerator to chill for 30 minutes.
  • Preheat a convection oven to 325 degrees or a conventional oven to 350 degrees. Line baking sheets with nonstick baking mats.
  • Place sanding sugar in a shallow dish. Fill a second shallow dish with water. Using a 3/4-ounce ice cream scoop, scoop out dough; press down on tops of dough with your thumb. Dip bottom of each portion of dough in water and then in sanding sugar; place on prepared baking sheets.
  • Transfer to oven and bake for 4 minutes in a convection oven or 3 minutes for a conventional oven. Rotate baking sheet and continue baking until cookies are just set (they will still look slightly wet), about 3 minutes for convection or 2 to 3 minutes for a conventional oven. Let cookies cool on baking sheets.

These are fabulous! I have no idea where I got this recipe from, but we've been baking them for years! When the cookies are done, dip the tops into chocolate icing.

7 (1 ounce) squares unsweetened chocolate, chopped, divided
1 ¼ cups powdered sugar, divided
10 tablespoons butter
⅓ cup half-and-half
1 tablespoon vanilla extract
1 ½ cups all-purpose flour
⅛ teaspoon salt

Steps:

  • Heat 6 ounces chocolate in heavy saucepan over low heat, stirring constantly until melted. Remove from heat. Stir in 1/2 cup powdered sugar, 2 tablespoons butter, and half-and-half.
  • Scoop into 1-inch balls and place on an ungreased cookie sheet. Freeze until set, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt remaining chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, about 1 minute. Add remaining powdered sugar and butter. Mix in vanilla extract.
  • Work in flour and salt until dough holds together. Mold portions of dough around frozen chocolate balls to form 1- 1/2-inch balls. Place about 1 inch apart on an ungreased cookie sheet.
  • Bake in the preheated oven until set but not browned, 12 to 15 minutes. Remove from cookie sheet. Cool completely on a wire rack.

1/4 cup butter, cubed
1 cup semi-sweet chocolate chips, divided
1 egg
1/3 cup sugar
1/3 cup brown sugar, packed
1/2 teaspoon vanilla extract
1/8 teaspoon peppermint extract
1 cup all-purpose flour
1/3 cup baking cocoa
1/4 teaspoon baking powder
1/8 teaspoon salt
1 (4 5/8 ounce) package Andes mints candies, chopped, divided
2 teaspoons shortening, divided
1/2 cup white chocolate chips
chopped nuts, sprinkles and crushed candy canes

Steps:

  • In a microwave-safe bowl, melt butter and 1/2 cup chocolate chips; stir until smooth. Cool slightly. Stir in the egg, sugars and extracts. Combine the flour, cocoa, baking powder and salt; gradually add to chocolate mixture and mix well. Fold in 3/4 cup Andes candies.
  • Roll rounded tablespoonfuls of dough into balls. Place 2-in. apart on ungreased baking sheets. Bake at 350° for 8-10 minutes or until tops appear slightly dry. Cool for 1 minute before removing to wire racks to cool completely.
  • In a microwave, melt 1 teaspoon shortening and remaining chocolate chips and Andes candies; stir until smooth. Melt white baking chips and remaining shortening in a microwave at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth.
  • Dip half of the cookies in melted chocolate mixture; allow excess to drip off. Place on waxed paper. Dip remaining cookies in melted baking chip mixture; allow excess to drip off. Place on wax paper. Immediately sprinkle with toppings of your choice. Let stand until set. Yield: about 2-1/2 dozen.

These are like a little bit of heaven!They're almost like a cookie fudge! I had them at a friend's house the other night and wasn't happy until I called her for the recipe! There are a few steps, but not that many, when you end up with one of the very best cookies you'll ever try! Making the cookie crumbs is a snap using a food processor! If you don't have Kahlua,you can use whatever you have on hand. Use something that will go well with Chocolate, orange, raspberry, mint, or caramel are good choices. Bake time is chill time. Note: For children, you may want to leave out the liqueur, and replace it with a flavoring or extract.

2 1/2 cups finely crushed chocolate cookie crumbs
1 cup finely chopped nuts
1 cup sifted powdered sugar
1/3 cup coffee liqueur
1 tablespoon water (may need 1-2)

1 tablespoon shortening (solid)
6 ounces white baking bar, chopped

Steps:

  • In a large mixing bowl, stir together the chocolate wafer crumbs, chopped nuts, powdered sugar, and Kahlua, if using. Add enough of the water so that the crumbs hold together. Shape mixture into 1-inch balls.
  • Place on a waxed paper cookie sheet.
  • In a small, heavy saucepan, heat semisweet chocolate and shortening over low heat until melted. In another small, heavy saucepan, heat white baking bar till melted.
  • With a fork, dip half of the cookies into the semisweet chocolate mixture to coat; place on cookie sheet. Dip remaining cookies in melted white baking bar to coat, place on cookie sheet.
  • With the tip of a spoon, thinly drizzle white baking bar mixture in a zigzag pattern over cookies coated with semisweet chocolate. Repeat with semisweet chocolate, drizzling over cookies coated with white baking bar mixture.
  • Refrigerate for about 30 minutes, or until chocolate is firm. Store in refrigerator.

  • Cream butter, sugar and cocoa until light and fluffy.
