2 medium firm bananas, sliced
1 tablespoon lime juice
2 tablespoons salted peanuts
1 tablespoon honey
1 tablespoon sweetened shredded coconut
1-1/2 teaspoons grated lime zest

Steps:

  • In a small bowl, toss bananas with lime juice. Add peanuts and honey; mix well. Spoon into individual dishes. Sprinkle with coconut and lime zest. Serve immediately.

This recipe is great if you have a thing for bananas! The bananas emit a great smell when baking. Try them on top of vanilla ice cream! Try pineapple juice in place of the orange juice.

¼ cup butter, softened
⅓ cup brown sugar
¼ teaspoon ground cloves
1 ½ teaspoons orange juice
6 bananas, peeled and halved lengthwise
⅓ cup shredded coconut

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 7x11 inch baking dish.
  • In a small bowl, cream together butter and sugar. Stir in cloves and orange juice until smooth. Place the bananas in the prepared dish and spread the butter mixture evenly over the bananas. Sprinkle with coconut.
  • Bake in preheated oven until bubbly and heated through, 10 minutes.

1/4 cup (1/2 stick) butter
1/2 cup (packed) dark brown sugar
1/4 cup mango nectar
1 tablespoon dark rum
1 tablespoon minced crystallized ginger
1/8 teaspoon ground nutmeg
1 cup diced peeled pineapple
1 banana, peeled, sliced
1 cup diced peeled mango
Vanilla ice cream or macadamia brittle ice cream
Toasted sweetened coconut (optional)

Steps:

  • Melt butter in heavy large skillet over medium heat. Add brown sugar, nectar and rum; stir until sugar dissolves. Increase heat and boil until syrupy, about 4 minutes. Mix in ginger and nutmeg. Add pineapple, banana and mango and sauté just until heated through, about 1 minute. Let cool 2 minutes.
  • Scoop ice cream into bowls. Spoon warm sauce over ice cream. Sprinkle with coconut, if desired; serve immediately.

1 egg
1 cup milk
2 tablespoons vegetable oil
1 vanilla bean
1 cup flour
1 tablespoon sugar
1 tablespoon baking powder
1 pinch salt
1 pinch allspice
2 bananas
1 lime, juice and zest of
40 ml coconut liqueur
2 tablespoons brown sugar
20 g unsalted butter
1/4 cup pecan nuts
1/2 cup coconut (toasted)

Steps:

  • Peel bananas and place on foil. Melt butter and combine with juice, coconut liqueur, brown sugar, pour over bananas and seal foil tightly. BBQ until bananas are soft and liquid has caramelised.
  • Whisk egg till fluffy, add flour, milk, sugar, oil, baking powder and vanilla bean whisking till smooth. Rest 10 minutes. Lightly oil flat grill, pour batter in rounds and cook till bubbles form and pop and edges crisp. Turn and cook till golden brown.
  • Stack pancakes and banana alternately topping with caramel sauce ,toasted coconut and pecans. Dust with icing sugar.

2 small loaves or 1 large loaf pina colada pound cake or vanilla-flavored pound cake
2 sticks unsalted butter, softened, divided
Ground cinnamon
Ground nutmeg
1/2 pint vanilla ice cream, softened
4 bananas
1/2 orange, juiced
1 cup brown sugar
3 tablespoons good-quality rum
1 cup whipped cream
Toasted flaked coconut, for serving

Steps:

  • Cut cake into toast-size slices; spread 1 side with softened butter and sprinkle with cinnamon and nutmeg. Lightly brown the buttered sides in a large skillet while preparing other sides the same way. After cooking both sides, remove toasted cake from skillet and place on a plate with about 1/3 cup melted vanilla ice cream, allowing cake to soak up the melted ice cream from the bottom.
  • Peel bananas and set aside.
  • In skillet over medium heat, melt 1 stick butter. Add orange juice and stir in brown sugar. Stir constantly over medium-low heat until mixture completely liquefies. Add bananas to coat, cooking for about 2 minutes. Remove bananas to grill and continue to cook until tender. Remove sauce from heat, add 2 tablespoons rum, and baste bananas with sauce while grilling. When bananas are cooked to your liking, return them to the skillet with the sauce. Slice as desired; diagonally works best.
  • Stir the remainder of the ice cream into a bowl of whipped cream and add 1 tablespoon rum.
  • Place a piece of cake on a dessert plate, cover with sliced grilled bananas, top with brown sugar sauce, and ladle vanilla rum sauce around the cake. Sprinkle with toasted coconut and serve.

THICK TROPICAL SMOOTHIE WITH BANANAS AND STRAWBERRIES



Thick Tropical Smoothie With Bananas and Strawberries image

Just had a root canal and having other toothache problems so it's difficult for me to chew solid food, including fruits. I recently had purchased a can of Safeway brand Tropical Fruit with Pineapple and Passion Fruit Juices. The ingredients read: pineapple, red papaya, yellow papaya, pineapple juice, water, sugar, passion fruit juice, banana puree, citric acid. I emptied the can with the juice into a freezer-safe container and froze overnight. I let the frozen fruit thaw in the fridge for a few hours and then ran the container under cool water for a about 30 seconds to break up the mass of frozen fruit from the edges of the container and then cut it up with a plastic pancake turner. I used a square-shaped container and broke the frozen fruit up into 4 large pieces so it would fit into the blender. Bf bought me fresh strawberries so chose to use those over the frozen ones I had. I always keep sliced, frozen bananas on hand in the freezer. The water in the recipe is necessary for the blending and it doesn't taste too watered down, and I needed just about 1/2 cup. The honey is for a little added sweetness. This makes two very large servings. This turned out thick, but drinkable. Please let me know how you like my recipe. It would make a great breakfast, snack, or even dessert! Prep time doesn't include freezing time for the fruit.

1 (15 ounce) can tropical fruit in light syrup, removed from can and frozen in a freezer-safe container (see recipe description)
6 slices bananas, previously frozen
3 -6 strawberries, fresh and sliced
1/2-3/4 cup water
2 teaspoons honey (to taste)

  • Let frozen Tropical Fruit thaw a bit so it begins to soften but is still slushy and mostly frozen.

1/2 cup packed dark brown sugar
3 tablespoons butter
1/4 cup light coconut milk
1/4 cup dark rum
1 cup (1-inch) cubed fresh pineapple
1/4 teaspoon ground cinnamon
4 ripe bananas, cut into 1/2-inch-thick slices
1 3/4 cups vanilla light ice cream

Steps:

  • Coat a 3-quart electric slow cooker with cooking spray. Combine brown sugar and next 3 ingredients (through rum) in slow cooker. Cover and cook on LOW for 1 hour. Stir with a whisk until smooth.
  • Add pineapple, cinnamon, and banana to sauce, stirring to coat. Cover and cook on LOW for 15 minutes. Serve immediately over ice cream.
  • Quick tip: Fresh pineapple is a treat, but sometimes for the sake of convenience, the precut variety is worth reaching for. Either way, you can't go wrong.
