TURKEY CROQUETTES WITH CRANBERRY SALSA



Turkey Croquettes with Cranberry Salsa image

Yield 16 croquettes (2 cups salsa).

Number Of Ingredients 24

2 tablespoons butter
1/3 cup chopped onion
1/4 cup all-purpose flour
1/4 cup 2% milk
1/4 cup chicken broth
2 cups finely chopped cooked turkey
1/2 cup mashed sweet potato
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
SALSA:
3/4 cup chopped tart apple
1 tablespoon lemon juice
1/2 cup chopped cranberries
2 jalapeno peppers, seeded and chopped
2 green onions, chopped
3 tablespoons golden raisins, chopped
1 tablespoon honey
CROQUETTES:
2 large eggs
1 tablespoon water
1/2 cup all-purpose flour
1/2 cup dry bread crumbs
Oil for deep-fat frying

Steps:

  • In a large saucepan, heat butter over medium heat. Add onion; cook and stir 3-4 minutes or until tender., Stir in flour until blended. Gradually add milk and broth. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in turkey, sweet potato, salt, pepper and cayenne. Refrigerate, covered, 2 hours or until firm., Meanwhile, in a small bowl, toss apple with lemon juice. Stir in remaining salsa ingredients. Refrigerate, covered, at least 1 hour., For croquettes, in a shallow bowl, beat eggs and water. Place flour and bread crumbs in separate shallow bowls. Shape turkey mixture into 1-1/2-in. balls. Roll in flour; shake off excess. Roll in egg mixture, then in crumbs, patting to help coating adhere., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry croquettes, a few at a time, 1-2 minutes on each side or until golden brown. Drain on paper towels. Serve with cranberry salsa.

2 cups leftover mashed potatoes
2 tablespooons grated Parmesan
1/4 cup cooked and chopped, bacon
2 tablespoons chopped fresh parsley
2 eggs
1/2 cup all-purpose flour plus 2 tablespoons
Salt and freshly ground black pepper
1/4 cup milk
1/2 cup seasoned bread crumbs
1/2 cup panko
Canola oil, for frying
1/2 cup mayonnaise
1/4 cup cranberry sauce
1/2 orange, juiced

Steps:

  • Combine mashed potatoes, Parmesan, bacon, 1 tablespoon parsley, 1 egg, 2 tablespoons flour, salt and pepper. Using 2 tablespoons or a small ice cream scoop form into balls then flatten slightly.
  • In a pie plate combine the other egg with milk. Set up a breading station with one plate of flour, then the egg mixture then the bread crumbs and panko. Place croquettes in flour, dip in egg then roll in breadcrumbs.
  • Heat canola oil to 360 degrees F and fry for about 4 minutes until browned on all sides. (You can also shallow fry these in a pan with about 1 inch of oil then flip them.)
  • Place on a paper towel lined plate. Sprinkle with a bit of salt.
  • In a small bowl combine mayonnaise, cranberry sauce, orange juice, remaining parsley, and salt and pepper. Serve with croquettes while they're hot.

1 cup thawed cranberry juice concentrate
1/2 cup dried cranberries
1/3 cup sugar
3 tablespoons orange juice
3 tablespoons orange marmalade
2 teaspoons grated orange zest
1/4 teaspoon ground allspice

Steps:

  • In a small saucepan, combine the cranberries, cranberry juice concentrate, dried cranberries and sugar. Cook over medium heat until the berries pop, about 15 minutes., Remove from the heat; stir in the orange juice, marmalade, orange zest and allspice. Transfer to a small bowl; refrigerate until chilled.

This is a recipe my boss handed down to me, and I have made these cranberries for every Christmas and Thanksgiving for the last 10 years. I always pour this into a beautiful glass dish after it has cooled before it goes into the refrigerator. It has a beautiful look.

1 cup frozen cranberry juice concentrate, thawed
⅓ cup white sugar
1 (12 ounce) package fresh cranberries, rinsed
½ cup dried cranberries
3 tablespoons orange marmalade
2 tablespoons fresh orange juice
2 teaspoons minced orange peel
¼ teaspoon ground allspice

Steps:

  • Stir the cranberry juice concentrate and sugar together in a saucepan over medium-high heat, and bring to a boil, stirring until sugar has dissolved. Mix in the fresh and dried cranberries, reduce heat to medium, and cook until the dried cranberries soften and the fresh ones pop, 7 to 10 minutes. Remove from heat.
  • Mix in the orange marmalade, orange juice, orange peel, and allspice until thoroughly combined. Allow the cranberry sauce to cool completely. Pour into glass serving dish, cover, and chill until cold, at least 2 hours. Can be made up to 2 days ahead of time and refrigerated until serving.

Steps:

  • Combine cranberry juice concentrate and sugar in heavy medium saucepan. Bring to boil over high heat, stirring until sugar dissolves. Add fresh and dried cranberries and cook until dried berries begin to soften and fresh berries begin to pop, stirring often, about 7 minutes. Remove from heat and stir in orange marmalade, orange juice, orange peel and allspice. Cool completely. Cover; chill until cold, about 2 hours. (Can be made 3 days ahead. Keep refrigerated.)
