TRADITIONAL GERMAN POTATO SALAD
While beef broth might seem like an unexpected ingredient, it's a must for authentic German potato salad. Mixed with sauteed onions, it gives the vinegary slices of Yukon Golds an extra savory touch.

Steps:
- Peel potatoes, and place in a large pot with enough water to cover by several inches. Bring to a boil over high heat, add 1 tablespoon salt, and reduce to a gentle boil. Cook until potatoes are tender when pierced with a knife, about 10 minutes.
- While the potatoes cook, combine the vinegar, sugar, and remaining 2 teaspoons salt in a small saucepan, and place over medium heat until the sugar is dissolved.
- Drain potatoes into a colander. Using gloves or paper towels to protect your hands, slice the hot potatoes into 1/8-inch-thick rounds. Drizzle with hot vinegar mixture, gently stirring until all potatoes are coated. Set aside.
- Saute bacon in a large skillet placed over medium-low heat, stirring frequently, until browned and crispy. Remove with a slotted spoon; transfer to a plate lined with paper towels. Drain excess fat from skillet, leaving a thin coating in bottom. Add onions; saute until translucent but not browned.
- Add beef broth; bring to a boil over high heat. Reduce to a simmer, and cook until reduced by half, about 20 minutes. Pour over the reserved warm potato mixture, and sprinkle with the reserved bacon and chopped parsley. Gently stir to combine, and serve immediately.
TRADITIONAL GERMAN WARM POTATO SALAD
Is there anything better than freshly made potato salad? With sausages or pork, it's a dream! This recipe is from Bavaria, Germany, and my family makes this potato salad every year for Christmas eve.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 30 to 40 minutes. Drain. Cool until easily handled, about 5 minutes. Peel while still warm. Cut into thin slices and put in a large bowl. Add onion.
- Mix hot broth with vinegar, oil, salt, and sugar. Pour immediately over warm potatoes and onion; the potatoes need to still be warm so they can absorb the dressing better. Allow to stand for 5 minutes; season with salt and pepper. Sprinkle with chopped chives and serve warm.

TRADITIONAL COLOMBIAN POTATO SALAD
This is the way my MIL makes potato salad, at least according to DH's memory. It has vienna sausages, cut up, potatoes, eggs, peas and carrots. Don't laugh, it is good and every bite tastes different. For some reason, the only vienna sausages I could find in the store were made by Goya in the International aisle. I guess it is just one more ingredient that is disappearing from the shelves in the supermarket.

- Peel cooled potatoes and chop into bite sized dice; place in a large bowl.
- Rinse and drain vienna sausages, cut each into 4 rounds; add to potatoes.
- Add onion and celery to potatoes.
- Coarsely chop eggs and add to potatoes.
- Add peas and carrots.
- Combine mayonnaise and sour cream; stir into potato mixture.
- Season with salt and pepper; garnish with green onions.

TRADITIONAL CREAMY POTATO SALAD
I have combined a couple of my favorite potato salad recipes to come up with this one. I use it for all the holidays.

- Boil the potatoes until just tender when poked with a fork, remove and drain.
- Place the potatoes into a large bowl & let cool to room temperature. (I like to mash about half of the potatoes then add them back in with the chunks).
- Cut the eggs in half then remove the yolks. Place the yolks into a small bowl used for mixing.
- Add the egg whites & pickles (if using) to a food processor then chop until finely diced. Stir into the potatoes.
- Gently mash the yolks with a fork then mix in the mayonnaise, mustard, pickle juice, cream, sugar & spices.
- Whisk until creamy then pour over potato mixture. Gently stir until the potatoes are coated with the mayo mixture.
- Cover and refrigerate at least 1 hour.

- Wash, peel and boil potatoes in salted water (about 1 tablespoon or less) until very tender. Place grated cheese in a big bowl. Add potatoes and toss. Let cool.
- Microwave the bacon until tender. Drain grease into a bowl and reserve. Crumble the bacon.
- Saute the onions in bacon grease until tender. Save the bacon grease.
- In a food processor process cream cheese, mayo, mustard, milk and bacon drippings.
- In the large bowl containing the potato/cheese mixture, combine the eggs, onion and bacon. Add the mayo mixture to potato mixture and toss.
- Cover and refrigerate for 2-3 hours or overnight before serving.

Steps:
- Microwave yam and potatoes (with skins on) for 10 - 15 minutes. When they are fully cooked cut into bite sized chunks.
- Dice red pepper and green pepper. Mix together in a large bowl with onions. Make dressing and pour over salad.
- Toss all together. Cover and refrigerate until chilled.
