CARROT SLAW

Number Of Ingredients 9

2 tablespoons freshly squeezed lemon juice
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
Pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
3 large carrots, peeled and shredded
2 tablespoons chopped fresh parsley

Steps:

  • In a small bowl, whisk together the lemon juice, vinegar, mustard, red pepper flakes and some salt and pepper until smooth. Whisk in the olive oil until completely blended. Toss the shredded carrots with the dressing in a large bowl. Taste and season with more salt or pepper as needed. Add the parsley and toss. Chill 30 minutes before serving.

My carrot slaw is very different from any other summer slaw and is so pretty too! Very simple to make and this is sure to be a hit at picnics as well as a side for steak! It is fine to make this a day ahead to give all the flavors time to blend well.

2 cups thinly shredded purple cabbage
1 (10 ounce) bag shredded carrots
¾ cup dried cranberries
½ medium onion, thinly sliced
2 tablespoons chopped fresh parsley, or to taste
½ (8 ounce) bottle balsamic vinaigrette salad dressing
1 teaspoon lemon juice, or to taste
¼ cup salted sunflower seeds
½ cup crumbled blue cheese, or to taste

Steps:

  • Mix cabbage, carrots, cranberries, onion, and parsley in a medium bowl. Toss lightly. Add dressing and lemon juice. Toss, coating well. Cover and refrigerate until flavors blend, 3 hours to overnight. Sprinkle with sunflower seeds and blue cheese right before serving.

This is definitely not your basic coleslaw recipe. The earthy flavor from the curry shines in every bite. Along with the pineapple and raisins, your taste buds are taken to the tropics. Super easy to prepare, this will be great at your next BBQ. But make sure to make this ahead of time. The flavors get even better after sitting in the fridge for a few hours.

2 pound(s) shredded carrots; I like to shred my own, they are sweeter
3/4 cup(s) mayonnaise; not Miracle Whip
1/2 teaspoon(s) kosher salt
1/3 cup(s) sugar
1/2 cup(s) crushed pineapple; drained very well
1/2 cup(s) golden raisins
2 teaspoon(s) curry powder
1 1/2 teaspoon(s) minced garlic
1 1/2 teaspoon(s) minced ginger
1/2 teaspoon(s) celery seeds or leaves
1/2 cup(s) chopped cilantro

Steps:

  • Shred the carrots if you are doing it yourself.
  • Add the shredded carrots to a large bowl.
  • In large mixing bowl, whisk together the mayonnaise, salt, sugar, pineapple, raisins, curry powder, garlic, ginger, celery seeds or leaves and cilantro.
  • Add the carrots and combine.
  • Serve immediately or refrigerate for an hour to chill. The longer it sits the more flavorful it becomes.
  • You can always add some sugar glazed almond slices for crunch. I have added toasted coconut as well... just sprinkled some over the top. It is awesome!
