CHICKEN TINGA TOSTADOS

This authentic Mexican recipe I picked up while living in Mexico. It has a spicy, smoky flavor from chipotle peppers. It is perfect for a buffet where people can serve themselves and even better heated up as leftovers the next day! If this is too spicy for you, try using less chipotle peppers.

6 bone-in chicken breast halves
7 medium onions, thinly sliced
1 clove garlic, chopped
¼ cup vegetable oil
6 medium tomatoes
1 (7 ounce) can chipotle peppers in adobo sauce
1 tablespoon chicken bouillon granules
16 tostada shells
1 cup sour cream
salt and pepper to taste

Steps:

  • Place the chicken into a large pot along with 1/4 cup of sliced onion, garlic, and enough water to cover. Bring to a boil, and cook until no longer pink, about 25 minutes. Remove chicken, cool, and shred meat. Discard skin and bones.
  • Heat oil in a large skillet over medium heat. Add the remaining onion slices, and fry until transparent. Place tomatoes into a pan of boiling water (you could use the leftover chicken water), and boil until they split open.
  • Place the tomatoes, the whole can of chipotle peppers, chicken bouillon into a blender or large food processor. Process until smooth. Season with salt and pepper. Pour this mixture into a large pan, and add the shredded chicken and cooked onions. Heat through.
  • To serve, each person spreads some sour cream on their tostada shell, and tops with a spoonful of the chicken.

1 cup barbecue sauce
4 1/2 ounces green chilies, chopped and drained
2 tomatoes, seeded and diced
1/2 small red onion, minced
1/4 cup chopped fresh cilantro
1 garlic clove, minced
1 tablespoon red wine vinegar
2 teaspoons olive oil
1/4 teaspoon salt
8 (6 inch) fat free tortillas
1 cup fat-free refried beans, canned
8 scallions, finely chopped
1 cup reduced-fat monterey jack cheese, shredded
1/4 cup light sour cream

Steps:

  • Combine chicken, barbecue sauce and chiles in a large, nonstick saucepan; bring to boil.
  • Reduce heat and simmer, covered, until chicken is tender and cooked through, about 25 minutes Remove from heat and let cool.
  • Meanwhile, combine tomatoes. onion, chopped cilantro, garlic, vinegar, oil, and salt in medium bowl until blended. Set aside.
  • Preheat oven to 425 degrees. Spray a large, nonstick baking sheet with nonstick spray.
  • Place tortillas on baking sheet. Spread each with the beans, then top with then top with the chicken mixture, scallions, and cheese. Bake until the cheese is melted and bubbly, about 15 minutes Top each tostado with the tomato mixture, sour cream and additional cilantro, if desired.

1/2 cup vegetable oil
4 large corn tortillas
Salt
1 whole boneless, skinless chicken breast, pounded flat and thin
1 clove garlic, chopped
1 teaspoon oregano
1 teaspoon chili powder
Juice of a lime
1 tablespoon olive oil
1 tablespoon vegetable oil
1/2 onion, finely chopped
1 can black, pinto or red beans, drained and rinsed
1/4 cup water
Shredded lettuce
Chopped tomatoes
Chopped red onion
1 cup grated Monterey jack
Cilantro leaves
1/2 cup salsa
3/4 cup sour cream

Steps:

  • In a large skillet heat oil over medium high heat. Carefully place corn tortilla in hot oil and fry until crisp, flipping the tortilla once. Remove to a paper towel to drain. Season with salt. Cook off remaining tortillas.
  • In a glass dish combine chicken, garlic, lime juice, chili powder, oregano and olive oil. Let chicken marinate for 15 minutes.
  • Heat oil in a heavy saucepan and cook onions until tender. Add beans and water and bring to a simmer. Stir beans and stir occasionally. Beans are done when they begin to clump together in one mass. Season with salt and pepper.
  • Heat grill, broiler or cast iron grill pan and cook chicken breasts for 4 minutes per side or until cooked through. Slice chicken in thin slices and keep warm. In a small bowl mix together the salsa and sour cream and chill. To assemble tostado: Evenly layer beans, lettuce, tomatoes, chicken slices, red onion, cheese, and cilantro on top of each tostado (crisped tortilla) and serve immediately. Garnish with creamy salsa and cilantro.

6 large garlic cloves, 4 cloves peeled and left whole and 2 cloves coarsely chopped
1 pound tomatillos (8 medium), husked, rinsed, and halved
4 fresh serrano chiles or 2 fresh jalapeños (including seeds), coarsely chopped
3/4 cup coarsely chopped fresh cilantro sprigs
2 cups plus 2 to 3 tablespoons water
1/2 cup finely chopped white onion, rinsed in a sieve and patted dry
1 3/4 teaspoons salt
2 dried avocado leaves (optional), coarse stems discarded
2 (15-ounce) cans black beans, rinsed and drained
3 tablespoons vegetable oil
2 (6- to 7-ounce) firm-ripe avocados
12 tostadas
3 cups thinly sliced romaine (from 1 head)
1 cup crumbled queso fresco (Mexican fresh cheese) or mild feta (1/4 pound)

Steps:

  • Make tomatillo sauce:
  • Line a 10-inch heavy skillet (preferably cast-iron; not nonstick) with foil, then heat over moderately high heat until hot but not smoking. Add 2 whole garlic cloves and half of tomatillos, cut sides down, and roast on top of stove until well browned, 4 to 5 minutes (skillet will begin to smoke at this point). Turn over garlic and tomatillos (tomatillos may stick to foil) and roast until well browned and tomatillos are completely soft, 3 to 4 minutes. Transfer roasted garlic and tomatillos to a food processor. Discard foil, then line skillet with a fresh sheet of foil and roast remaining 2 whole garlic cloves and remaining tomatillos in same manner, transferring as done to food processor. Cool garlic and tomatillos to room temperature in bowl of processor, about 30 minutes.
  • Add chiles, half of cilantro, and 2 tablespoons water to mixture in processor, then pulse until it forms a chunky sauce, adding 1 tablespoon more water if too thick. Transfer to a bowl and stir in onion and 1 teaspoon salt.
  • If using avocado leaves, toast, 1 at a time, in a dry 10-inch heavy skillet (without foil lining) over moderate heat, turning every few seconds, until lightly browned and aromatic, about 1 minute, transferring to a plate as toasted. Bring beans and remaining 2 cups water to a simmer in a 3-quart heavy saucepan, stirring occasionally, then add avocado leaves and simmer, uncovered, stirring occasionally, 20 minutes. Drain beans in a sieve set over a bowl, reserving liquid. Pure beans, 1/4 cup cooking liquid (reserve remainder), avocado leaves (if using), and chopped garlic in a food processor until smooth.
  • Heat oil in a 10-inch heavy nonstick skillet over moderate heat until hot but not smoking, then add bean purée and cook, stirring, until very thick, about 5 minutes. Stir in remaining 3/4 teaspoon salt, then remove from heat and keep warm, covered.
  • Halve and pit avocados, then scoop out flesh in large pieces and cut into 1/2-inch cubes.
  • If necessary, stir some of reserved bean-cooking liquid in to make bean purée soft and easily spreadable. Divide warm beans among tostadas and spread evenly. Spoon about 1 tablespoon tomatillo sauce over each tostada, then divide avocado among tostadas and top with romaine, cheese, and remaining cilantro. Serve remaining tomatillo sauce on the side.

400g can refried beans
big pinch cayenne pepper
200g can kidney beans in water, rinsed
2 handfuls cherry tomatoes , quartered
50g cheddar
1 green chilli , thinly sliced
1 avocado , halved, stoned and sliced
handful coriander leaves, to serve

Steps:

  • Heat grill to medium-high. Put 2 tortillas onto a large baking sheet, then grill for 2 mins. In a bowl, mix the refried beans, cayenne pepper, kidney beans and cherry tomatoes, then divide half the mix between the tortillas. Scatter with half of the cheese and half of the sliced chilli, then grill again until the cheese melts. Lift onto plates and top with half of the avocado and coriander to serve. Repeat with the remaining tortillas.

2 yellow plaintains
1/4 c coconut oil, melted
1 tsp salt

Steps:

  • 1. Chop the plantains into 2 inch pieces and toss them in the food processor with the melted coconut oil and salt. Puree. Line a baking sheet with parchment paper and grease with additional coconut oil. Divide the plantain mixture into 6 blobs on the baking sheet and flatten them out into pancakes as best you can. (Oiled hands help). Bake at 425 for 30 minutes or so, flipping half way.

TOTOPOS TOSTADOS

16 large, thin corn tortillas
4 tablespoons salt
2 cups water
Vegetable oil for frying
Tomatillo Guacamole (recipe attached)
3 lemons, quartered
1 bunch cilantro, coarse stems removed
1/3 cup finely diced white onion
6 to 8 serrano chiles, stemmed, seeded if desired, and finely chopped
1 bunch cilantro, leaves only, finely chopped
1 teaspoon salt
16 medium tomatillos, roasted (see Note)
6 large avocados (about 3 pounds)
1/4 cup finely chopped shallots, for garnish
1/2 bunch cilantro, leaves only, for garnish

Steps:

  • Stack 4 of the tortillas and cut them into 4 pieshaped wedges. Repeat with the remaining tortillas. Spread the tortilla pieces on a rack and dry them in the sun, if possible. If there is no sun or you are in a hurry, dry them in a 325 degree oven for about 40 minutes. In a shallow bowl, stir together the salt and water until the water has dissolved. Heat about 1/2 inch of oil in a small skillet. Submerge a good handful of the tortilla pieces in the salt mixture for a moment, then drain and shake them off. Immediately throw them into the hot oil and stand back the oil will splatter. Turn them over from time to time and cook for about 4 minutes total, depending on the thickness of the tortillas. Transfer with a slotted spoon (draining the excess oil back into the pan for a moment) to a double thickness of paper towels. Continue dipping and frying the remaining tortilla pieces.
  • Serve the totopos on a large round platter with a bowl of Tomatillo Guacamole, lemon wedges, and sprigs of cilantro.
  • In a large bowl, combine the onion, chiles, cilantro, and salt. Add the roasted tomatillos a few at a time, mashing and grinding the skin as finely as possible with a fork or a pestle. Cut the avocados in half and remove the pits (reserve 3 of the pits). Scoop out the flesh and mash it roughly into the mixture, turning it over from the bottom so that the seasonings are well distributed. The guacamole should not be smooth, it should have some texture. Nestle the reserved pits back into the mixture and scatter the shallots and cilantro leaves over the top. Serve immediately.

A delicious take on huevos rancheros that works just about anytime of day. You can use store-bought tostada shells instead of frying your own.

1 (15 ounce) can black beans, drained
2 teaspoons lime juice (fresh from 1 lime)
1/2 teaspoon fine sea salt
3 1/2 tablespoons coconut oil, at room temperature (solid)
1 poblano chile, stems and seeds removed, thinly sliced
1 cup red onion, thinly sliced
1 tablespoon ground cumin
8 corn tortillas, 6-inch
8 large eggs
1/2 cup pico de gallo
1/4 cup cilantro leaf, loosely packed
1/4 cup queso fresco, crumbled (fresh Mexican cheese)
1 avocado, thinly sliced
lime wedge, for serving

Steps:

  • Drain the black beans, reserving 1/4 c of the liquid from the can. Combine the beans and reserved liquid in a small saucepan; bring to a boil over medium-high. Cook, stirring often, until the beans are heated through, about 2 minutes. Mash the beans coarsely with a potato masher. Stir in the lime juice and 1/4 tsp of the salt. Remove from the heat, cover to keep warm.
  • Melt 1 tablespoon of the coconut oil in a large nonstick skillet over medium-high. Add the poblano and red onion; cook until tender and lightly browned, 7 to 8 minutes. Sprinkle with the cumin and remaining 1/4 teaspoon sale; cook, stirring often, until fragrant, about 1 minute. Wipe the skillet clean.
  • Melt 1 tablespoon of the coconut oil in the skillet over medium-high. Fry tortillas, 2 at a time, until crisp & golden brown, about 2 minutes per side, and add 1 tablespoon of the coconut oil after the second batch. Transfer the crisp tortillas to a wire rack.
  • Reduce the heat to medium-low and melt the remaining 1/2 tablespoon coconut oil in the skillet; break the eggs into the skillet, and cook until the eggs detach from the bottom of the skillet, 2 to 3 minutes. Remove from the heat; cover and let stand until the whites are set and the yolks are still runny, about 2 minutes. Carefully transfer the eggs to a cutting board, and separate them gently with a knife.
  • Spread 2 tablespoons of the bean mixture on each tostada. Top with 1 tablespoon of the poblano mixture and 1 egg. Serve with the pico de gallo, cilantro, quest fresco, avocado slices and lime wedges.
