I like this recipe because it is quick and easy, and my kids love it. Those are the three requirements I look for in most recipes.

1 lb lean ground beef
2 tablespoons taco seasoning or 2 tablespoons chili seasoning mix
1 (8 ounce) can tomato sauce
1 (4 ounce) can diced green chilies, drained
3 -4 drops hot pepper sauce (optional)
1 (8 ounce) can refrigerated crescent dinner rolls or 1 (7 1/2 ounce) can refrigerated biscuits
1 cup refried beans
4 ounces shredded cheese (cheddar works well)
1 large tomatoes, chopped
1 small onions, chopped or 3 -5 green onions
4 cups shredded lettuce (or any amount desired)

Steps:

  • In large skillet, brown ground beef; drain well.
  • Stir in seasoning, tomato sauce, chilies and hot pepper sauce; heat until hot and bubbly.
  • Simmer, uncovered, for 15 minutes or until mixture thickens.
  • Lightly grease 9 or 10-inch pie plate.
  • Separate rolls or biscuits; arrange pan.
  • Press over bottom and up sides to form curst.
  • Spread beans over dough; top with meat mixture.
  • Bake at 375 degrees for 18 to 20 minutes or until crust is golden brown.
  • Sprinkle immediately with cheese.
  • Garnish with lettuce, tomato and onion.

1/4 lb ground beef
1 can(s) tomatoes, drained and diced
1 tsp cumin
1/4 tsp salt
12 tortillas, corn, 6 inches
1 can(s) chunky salsa
1.5 c shredded monterey jack cheese
2 c lettuce, shredded
1 tomato, chopped
1 avocado, peeled and sliced

Steps:

  • 1. Brown meat; drain.
  • 2. Stir in tomatoes, cumin and salt; cover and simmer 5 minutes.
  • 3. Cover bottom and sides of 12\" pizza pan with tortillas, overlapping attractively.
  • 4. Spread with chunky salsa; top with meat mixture.
  • 5. Bake at 350 oven 20 minutes.
  • 6. Sprinkle with cheese.
  • 7. Arrange lettuce, tomato and avacado over top.
  • 8. Cut into wedges using scissors or small knife and serve with additional salsa.

1/2 lb Italian pork sausage, casing removed
1 (14 1/2 ounce) can whole canned tomatoes, drained and cut up
3/4 cup Pace Picante Sauce
1 teaspoon ground cumin
12 corn tortillas (6-inch)
1 cup monterey jack cheese, shredded
2 cups lettuce, shredded
1 medium tomatoes, chopped

Steps:

  • COOK sausage in skillet until browned. Pour off fat. Add canned tomatoes, picante sauce and cumin. Heat to a boil. Cook over low heat 10 minute
  • PLACE tortillas on 14" pizza pan or large baking sheet, overlapping to form a 14" round. Spread sausage mixture over tortillas to within 1/2" of edge. Bake at 350°F for 25 minute
  • TOP with cheese. Bake 5 minute or until cheese is melted. Top with lettuce and chopped tomato. Cut into wedges. Serve with additional picante sauce, if desired. Garnish with olives.
