BEEF AND BEAN TORTILLA BAKE

- Heat oven to 350°F. In 12-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in black beans, pinto beans, tomatoes, taco seasoning mix and water. Cook 2 to 4 minutes, stirring occasionally, until heated through. Stir in 1/2 cup of the cheese.
- In 8-inch square (2-quart) glass baking dish, spread 2 cups of the beef mixture. Top with half of the tortilla strips. Spoon half of the remaining beef mixture over tortilla strips. Add remaining tortilla strips; top with remaining beef mixture.
- Bake uncovered about 30 minutes or until bubbly and heated through. Sprinkle with remaining 1/4 cup cheese. Bake about 5 minutes longer or until cheese is melted. Cut into squares.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in soup. Sprinkle 1-1/2 cups tortilla chips in a greased shallow 2-1/2-qt. baking dish. Top with beef mixture, salsa and cheese. , Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Sprinkle with the remaining chips. Bake 3 minutes longer or until chips are lightly toasted.

LOW-FAT BEEF AND BEAN TORTILLA BAKE
I found this recipe in a little betty crocker magazine called simple healthy meals. This recipe is so good because it is made with on hand ingredients so I use this as an easy, last minute idea when I cant think of anything to make for dinner. This dish is very healthy and doesnt taste like it is. The few changes I make to the recipe are I just use all black beans, since they are healthier than pinto beans. I use extra sharp full fat cheddar, you dont need very much anyways being extra sharp so why not? And I like to add a can of my favorite el pato tomato sauce (yellow can) to the meat mixture also. And also I just lay out the tortillas tearing them so they fit in the pan. the strips are extra work I dont think that is neccesary. I like to serve this with a little bit of sour cream.

- Heat oven to 400°F.
- Brown meat in large skillet; drain. Add VELVEETA and water; mix well. Cook until VELVEETA is melted, stirring frequently. Remove from heat. Stir in corn and salsa.
- Spread 1/4 of the meat mixture onto bottom of 8-inch square baking dish sprayed with cooking spray; top with 2 tortillas. Repeat layers twice. Top with remaining meat mixture; cover.
- Bake 30 min. Uncover. Let stand 5 min. before serving.
