Enjoy this easy and delicious summer garden treat with no cooking involved! I serve this at church dinners and never have enough. If you can make this a few hours in advance, the flavors become even better.

4 large ripe tomatoes, sliced
¼ cup olive oil
2 tablespoons chopped fresh thyme leaves
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
2 tablespoons minced garlic
¼ cup freshly grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Arrange the tomato slices in a shallow casserole dish. Whisk together the olive oil, thyme, oregano, parsley, chives, and garlic in a small bowl. Add salt and pepper to taste. Pour herb mixture over the tomatoes, covering evenly. Top with Parmesan cheese. Cover, and refrigerate at least 1 hour before serving.

Tomato, Lettuce and Olive Salad Tossed With Parsley Vinaigrette image

This salad is a great side dish with Italian pasta dishes. Recipe adapted from Bon Appetit (August 2004)

3/4 cup olive oil
1/4 cup white wine vinegar
1/4 cup grated parmesan cheese
1/4 cup Italian parsley, chopped
1 1/2 teaspoons Dijon mustard
1/2 head romaine lettuce, torn into bite-size pieces
1/2 head red leaf lettuce, torn into bite-size pieces
2 cups cherry tomatoes (red and yellow together are pretty) or 2 cups red pear tomatoes, halved (red and yellow together are pretty)
1/2 cup kalamata olive, pitted and halved

Steps:

  • Put olive oil, vinegar, grated cheese, parsley and mustard in a glass jar and shake well to combine. Season with salt and pepper to taste and set aside.
  • Combine lettuce, tomatoes and olives in large salad bowl; toss.
  • Add dressing to salad and toss again.
