I make pizza at least once a month, and this one is constantly requested by my family ( my wife's all-time favorite). This recipe is for a large pizza (14 or 15 inches). The ingredient amounts should be varied to taste and size of pizza dough. We have tried many different ingredient combinations (minced or roasted garlic, chopped plum tomato, cooked Italian sausage, and chicken) but always come back to this recipe as written. Take the time to prepare homemade pizza dough...it really makes a difference. Times do not include dough preparation. NOTE: I can not overly stress the importance of quality ingredients (olive oil, cheeses, fresh basil, etc.).

1 large pizza dough
6 ounces mozzarella cheese, sliced
6 ounces provolone cheese, sliced
1/2 small onion, coarsely chopped
1 tablespoon fresh basil, finely chopped
4 tablespoons parmesan cheese, freshly grated
2 tablespoons extra virgin olive oil
8 pepperoncini peppers, seeded and coarsely chopped
cornmeal, for dusting

Steps:

  • Preheat oven to 475 degrees.
  • Prepare dough as required. Roll out to fit pizza pan or peel.
  • If using a pizza pan, lightly coat with oil and lightly sprinkle with cornmeal.
  • Rub dough with 2 tablespoons of olive oil.
  • Top dough with provolone and mozzarella cheese.
  • Sprinkle with chopped pepperoncini.
  • Place in oven and bake unti cheese is lightly browned.
  • Remove from oven and top with parmesan, onion, and basil.
  • Return to oven for another 3 to 4 minutes.

TOMATO WHITE PIZZA

I wrote up this recipe after I had cooked it a few times and decided I liked it. I originally made the white pizza as an excuse to cook up a whole bunch of fresh garlic and tomatoes that I had gotten from a farm. I use generic pre-made pizza crusts because I don't have time to make my own crust. If you get a decent brand they still come out great. The kicker is the salt and olive oil underneath all of the cheese, it makes for a very moist and almost sauce-like pizza topping. The tomatoes add great flavor, texture, and moisture as well.

1 pizza crust
2 cups shredded part-skim mozzarella cheese
4 tablespoons olive oil (or so)
2 -3 tablespoons minced garlic
pecorino romano cheese
parsley flakes
1 -2 tomatoes, sliced 1/8 " to 1/4-inch thick
salt

Steps:

  • Start w./ pizza crust. Cover lightly with olive oil (I drizzle it across the whole thing, then smear it around with my hands so there is a thin layer of olive oil across the whole crust.
  • Put minced garlic on pizza crust, spread around until evenly covered.
  • Lightly salt.
  • Cover with cheese. Cheese should not be too thin, just a single layer of shreds thick.
  • Lay sliced tomatoes on pizza. I like to cover as much area as possible, but do to taste.
  • Grate romano cheese over the tomatoes. Fairly thin layer.
  • Sprinkle parsley flakes on top.
  • Bake at 350 for 15-20 minutes until crust is golden brown.

WHITE BEAN, TOMATO AND GOAT-CHEESE PIZZA



White Bean, Tomato and Goat-Cheese Pizza image

Cornmeal for sprinkling
1 cup cannellini or other white beans (from a l-lb can), rinsed
1 garlic clove, smashed
1 tablespoon fat-free chicken broth or water
1 1/2 teaspoons extra-virgin olive oil
1 lb fresh or thawed frozen pizza dough
All-purpose flour for dusting
3 plum tomatoes, coarsely chopped
1/4 small red onion, thinly sliced
1 teaspoon chopped fresh rosemary
4 oz low-fat soft goat cheese, crumbled
2 cups small-leaf greens such as baby arugula or mâche

Steps:

  • Position oven rack on lowest shelf and preheat oven to 500°F. Lightly oil a 17- by 14-inch heavy baking sheet (without sides) and sprinkle with cornmeal, tapping off excess.
  • Pulse beans with garlic, broth, and 1 teaspoon oil in a food processor until coarsely chopped and season with salt and pepper.
  • Dust pizza dough and your hands with flour. Holding 1 edge of dough in the air with both hands and letting bottom touch work surface, move hands around edge (like turning a steering wheel), allowing weight of dough to stretch it roughly into a 10-inch round. Flour backs of your fists and with them stretch dough from center of underside, turning dough to maintain a rough circle, until 13 to 14 inches.
  • Place on baking sheet.
  • Spread bean purée over dough, leaving a 1-inch border around edge. Top purée with tomatoes and onion, then sprinkle with rosemary and dot with cheese. Season with salt and pepper.
  • Bake pizza on bottom oven rack until crust is browned and crisp and topping is bubbling, 12 to 15 minutes.
  • Toss greens with remaining 1/2 teaspoon oil and salt and pepper to taste and sprinkle over pizza.
  • Cut pizza into 8 slices.

TOMATO AND BROCCOLI WHITE PIZZA

For those who don't know, white pizza is pizza without tomato sauce. This is my original recipe. It is a DELICIOUS pizza! It's a big hit at my house, never any leftovers! Nice garlic flavor, you can adjust it to your tastes though. I always make my own pizza dough, but you can use refrigerated if you like, but I've never tested it before.

pizza dough
1 (8 ounce) package mozzarella cheese
2 garlic cloves, minced
dried parsley
dried oregano
olive oil
1 tomatoes (you can also use 2 Roma tomatos)
1 stalk broccoli
fresh basil leaf (optional)

Steps:

  • Preheat oven to 410*F.
  • Chop the tomato into chunks and place them in a bowl, along with some chopped broccoli, the dried parsley and oregano, and 1 clove that was minced, and toss.
  • Set Aside the vegetables.
  • Roll out the dough onto a pizza pan, and brush or spritz on some olive oil.
  • Fold your crust the way you want it.
  • Grate the whole mozerella block over the pizza.
  • Scatter the vegetables around the top off the pizza.
  • Scatter around some of the fresh basil.
  • Sprinkle the other minced clove of garlic around on the top of the pizza.
  • Bake for 10-15 minutes, until the cheese starts to golden.
