GRILLED BREAD WITH TOMATO-GINGER SALAD

Steps:
- Heat the olive oil in a medium skillet over medium-high heat. Add the red onion and cook, stirring occasionally, until lightly browned, 6 to 8 minutes. Transfer to a cutting board and let cool slightly, then roughly chop.
- Mix the ginger, cayenne and lime juice in a medium bowl, then stir in the onion, tomatoes and cilantro. Let sit at least 20 minutes at room temperature.
- Preheat a grill to medium high. Brush the bread with olive oil and season with salt. Grill until warmed through and lightly charred, about 2 minutes per side; brush with more olive oil. Add 1/2 teaspoon salt to the tomato salad and toss. Spread the bread with yogurt and top with the tomato salad.

- Trim dark green tops from scallions and thinly slice; set aside for serving. Finely chop remaining white and pale green parts. Heat butter in a large skillet over medium. Add white and pale green parts of scallions and ginger and cook, stirring often, until fragrant, about 1 minute.
- Add tomatoes and cook, turning gently with a spoon, until juicy and just warmed through, about 2 minutes. Add soy sauce and toss to combine. Taste and season with kosher salt if needed. Top with reserved scallion greens.
- Spoon tomatoes over toast and sprinkle with more salt if desired.

- Core the tomatoes, then slice them. Arrange them on a plate and sprinkle with salt and pepper; let sit for about 10 minutes.
- Meanwhile, combine the ginger with some more salt and pepper, the chile, and about 3 T of lime juice.
- Drain any liquid that has accumulated around the tomatoes, then dress with the ginger-lime mixture. Taste and add more lime juice if necessary, then garnish and serve.

- Add garlic; crush with ginger.

- Create stripes on the exterior of the cucumbers by running the tines of a fork along the length of the skin. Halve the cucumbers lengthwise, then cut crosswise into 1/2-inch pieces. Transfer to a colander and toss with 1 teaspoon salt and 1 teaspoon sugar.
