CROCK POT CHEESEBURGER MEATLOAF

This recipe combines two of my favorite things! When you put together a cheeseburger and meatloaf, you get this delicious Crock Pot Cheeseburger Meatloaf!

2 lbs ground beef
3/4 cup Italian bread crumbs
1/4 cup dried minced onions
2 large eggs (beaten)
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
2 cups shredded Cheddar cheese
favorite cheeseburger toppings for garnish

Steps:

  • In a large bowl, mix together all of your ingredients except for your cheese and garnish.
  • Press out into a large rectangle on a piece of lightly greased wax paper.
  • Sprinkle on your cheese, leaving a 3/4 inch border all the way around.
  • Starting at one of the short ends, roll up like a jelly roll and pinch each end to close it up.
  • Place your roll in a 6-quart crock pot and press into a meatloaf shape.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours.
  • Garnish with your favorite cheeseburger toppings or eat it as is!

1 1/2 lb lean (at least 80%) ground beef
2 roasted red bell peppers (from a jar), finely chopped
3/4 cup Progresso™ Italian style bread crumbs
1 cup grated Parmesan cheese
2 eggs
1 cup marinara sauce

Steps:

  • Line bottom and side of slow cooker with large sheet of foil. Lightly spray with cooking spray.
  • In large bowl, stir together 1 1/2 lb lean (at least 80%) ground beef, 2 roasted red bell peppers (from a jar), finely chopped, 3/4 cup Progresso™ Italian style bread crumbs, 1 cup grated Parmesan cheese and 2 eggs. Use clean hands to thoroughly mix together. Shape mixture into a loaf; place in slow cooker.
  • Cover; cook on Low heat setting 5 to 6 hours or until meat thermometer inserted in center of loaf reads 160°F.
  • Uncover; pour 1 cup marinara sauce evenly over cooked meatloaf. Cover; cook on Low heat setting 15 minutes longer or until sauce is thoroughly heated.
  • Use sides of foil to remove meatloaf from slow cooker to cutting board. Let stand 10 minutes before slicing and serving.

Nonstick cooking spray, for the pan
6 slices Texas toast, cubed
1/2 cup milk
2 pounds ground beef
6 strips crisp cooked bacon, chopped
2 large eggs
2 red onions; 1 finely chopped and 1 thinly sliced
1 cup plus 2 tablespoons ketchup
1/4 cup plus 1 tablespoon mustard
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 ounces Cheddar, cut into small cubes, plus 1 cup grated Cheddar
1/4 cup grated yellow onion (from about 1/2 onion)
Dill pickle chips, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
  • Mix together the bread and milk in a bowl and set aside.
  • Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
  • Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
  • Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
  • Slice and serve with the sliced red onions and dill pickle chips.

Steps:

  • Mix all ingredients except Singles just until blended. Fold 2 (30-inch-long) pieces of Reynolds Wrap® Aluminum Foil lengthwise in half twice. Crisscross pieces on work surface. Top with meat mixture; shape into 8-inch round loaf.
  • Use foil handles to gently lower meatloaf into slow cooker sprayed with cooking spray, extending ends of foil strips over edge of slow cooker; cover with lid.

2 pounds ground beef
¾ cup fresh bread crumbs
½ cup minced onion
2 eggs, beaten
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
3 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. 1/4 cup milk
2 slices day-old bread, cubed
1/4 cup finely chopped onion
2 tablespoons finely chopped green pepper

1/4 cup ketchup
8 medium carrots, cut into 1-inch chunks
8 small red potatoes

Steps:

  • In a bowl, beat egg and milk. Stir in the bread cubes, onion, green pepper, salt and pepper. Add the beef and mix well. Shape into a round loaf. Place in a 5-qt. slow cooker. This is an awesome recipe and very versitile. I also make up the meatloaf mixture and shape into meatballs. It makes about 3 dozen meatballs. I will freeze in 3 quart size ziploc bags and simmer a dozen or so in a sauce pan and spaghetti sauce when we want to have spaghetti with meatballs for dinner! Very Moist and flavorful

2 slices fresh bread (ripped into small pieces, about 2 cups)
1/2 cup spaghetti sauce
1 large egg
2 tablespoons dried onion flakes
1 teaspoon garlic salt
1/2 teaspoon dried Italian herb seasoning
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
2 tablespoons spaghetti sauce

Steps:

  • Fold a 30" long piece of foil in half lengthwise. Place in the bottom of the slow cooker with both ends hanging over the top edges of the slow cooker.

3 slices bread, torn into small pieces
1/2 cup milk
1 1/2 lb lean (at least 80%) ground beef
8 slices bacon, crisply cooked and crumbled
1 cup finely shredded sharp Cheddar cheese (4 oz)
1/4 cup dill pickle relish
1/2 cup finely chopped onion
1 clove garlic, finely chopped
1 egg, slightly beaten
1/3 cup ketchup
1 tablespoon packed brown sugar

Steps:

  • Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
  • In large bowl, mix bread and milk. Let stand 5 minutes to absorb milk. Add beef, all but 2 tablespoons of the bacon, the shredded cheese, relish, onion, garlic and egg. Mix until well combined. Shape mixture into 8x4-inch loaf. Place in pan.
  • In small bowl, stir together Topping ingredients. Spread on top and sides of loaf. Top with reserved 2 tablespoons crumbled bacon.
  • Bake uncovered 1 hour to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cool 10 minutes.
  • Cut meatloaf into slices to serve. Top with desired burger toppings, such as pickle relish, ketchup and mustard.
