Balsamic Marinated Tomato and Mozzarella Salad image

A perfectly simple salad marinated in a combination of olive oil and balsamic vinegar and kicked up with onion, garlic and basil. The longer it sits, the better it gets. Also great served over pasta.

1/4 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon salt
black pepper
1 clove minced garlic
3 tablespoons chopped fresh basil
1/4 cup onion, chopped
1 1/2 cups mozzarella cheese, cubes
1 pint grape tomatoes or 1 pint cherry tomatoes, halved

Steps:

  • Mix together first five ingredients for dressing and toss in cheese and tomatoes.
  • Chill until ready to serve.

1 cup balsamic vinegar
¼ cup honey
3 large tomatoes, cut into 1/2-inch slices
1 (16 ounce) package fresh mozzarella cheese, cut into 1/4-inch slices
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup fresh basil leaves
¼ cup extra-virgin olive oil

Steps:

  • Stir balsamic vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 10 minutes. Set the balsamic reduction aside to cool.
  • Arrange alternate slices of tomato and mozzarella cheese decoratively on a serving platter. Sprinkle with salt and black pepper, spread fresh basil leaves over the salad, and drizzle with olive oil and the balsamic reduction.

Okay here we go... this is an appetizer that we all know and love... tomato and mozzarella, but with a twist. We're going to use some balsamic pearls to enhance the dish, and put it into another dimension... It's easy peasy and gives great presentation. So, you ready... let's get into the kitchen.

1 large tomato
8 ounce(s) mozzarella cheese, cut into four slices
1 teaspoon(s) dried, ground basil
1 tablespoon(s) olive oil, extra virgin
1 tablespoon(s) balsamic pearls

Steps:

  • Gather your ingredients.
  • Place a rack in the middle position, and preheat the oven to 450f (232c).
  • Cut the tomato into four slices.
  • Add a piece of mozzarella and a bit of dried basil to the first slice.
  • Repeat for the other slices.
  • Place in the preheated oven for 10 minutes.
  • Remove and garnish with the balsamic pearls, olive oil and additional basil. Enjoy.
