BALSAMIC MARINATED TOMATO AND MOZZARELLA SALAD
A perfectly simple salad marinated in a combination of olive oil and balsamic vinegar and kicked up with onion, garlic and basil. The longer it sits, the better it gets. Also great served over pasta.

- Mix together first five ingredients for dressing and toss in cheese and tomatoes.
- Chill until ready to serve.
CAPRESE SALAD WITH BALSAMIC REDUCTION
Tomatoes, fresh mozzarella, and basil drizzled with a sweet balsamic reduction and olive oil. Easy, impressive and delicious! Most grocery stores now sell prepared balsamic reductions. Surprisingly it's just as good!

Steps:
- Stir balsamic vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 10 minutes. Set the balsamic reduction aside to cool.
- Arrange alternate slices of tomato and mozzarella cheese decoratively on a serving platter. Sprinkle with salt and black pepper, spread fresh basil leaves over the salad, and drizzle with olive oil and the balsamic reduction.

Okay here we go... this is an appetizer that we all know and love... tomato and mozzarella, but with a twist. We're going to use some balsamic pearls to enhance the dish, and put it into another dimension... It's easy peasy and gives great presentation. So, you ready... let's get into the kitchen.

Steps:
- Gather your ingredients.
- Place a rack in the middle position, and preheat the oven to 450f (232c).
- Cut the tomato into four slices.
- Add a piece of mozzarella and a bit of dried basil to the first slice.
- Repeat for the other slices.
- Place in the preheated oven for 10 minutes.
- Remove and garnish with the balsamic pearls, olive oil and additional basil. Enjoy.
