1 loaf ciabatta, sliced in half horizontally
Olive oil
1/2 stick unsalted butter, at room temperature
8 ounces blue cheese (something really good, not prepackaged crumbles)
4 ounces whipped cream cheese
2 teaspoons Worcestershire sauce
2 teaspoons red wine vinegar
4 ounces heavy cream
2 large heirloom tomatoes
Kosher salt and freshly ground black pepper
1/2 medium white onion, thinly shaved on a mandoline

Steps:

  • Preheat the oven to 500 degrees F.
  • Drizzle the cut-side of the bread with olive oil, then put on a sheet tray and place in the oven to toast, 3 to 5 minutes. Evenly spread the butter between the 2 pieces.
  • In a non-reactive bowl, combine the blue cheese, cream cheese, Worcestershire and vinegar until well mixed. Add the heavy cream slowly and whip with a rubber spatula or whisk until smooth and mousselike. Reserve until ready to use.
  • Slice each tomato into four thick slices, then sprinkle with salt and pepper.
  • Spread a thick layer of the blue cheese mousse on the bottom half of the prepared loaf. Add the sliced tomatoes and liberally spread the shaved onion. Top with the top piece of bread and slice into servings.
  • Serve with plenty of napkins.

1 (10 1/2 ounce) can condensed tomato soup
1 1/2 tablespoons unflavored gelatin
1/2 cup cold water
2 (3 ounce) packages cream cheese, softened
1 cup mayonnaise or 1 cup salad dressing
1 tablespoon prepared horseradish
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
4 cups shrimp, cooked, peeled, deveined, and chopped (about 2 lb)
1 cup celery, finely chopped
1/3 cup onion, chopped

Steps:

  • Heat soup just to boiling.
  • Soften gelatine in cold water in a large bowl.
  • Pour hot soup over gelatine.
  • Stir until dissolved.
  • Beat in cream cheese and next 4 ingredients.
  • Stir in shrimp, celery and onions.
  • Pour mixture into a 1 1/2 quart mold.
  • Chill until firm.
  • Can be refrigerated over night or 24 hours.
  • Unmold on platter.
  • This can be used as a spread for crackers for hors d' oeuvres or molded in a square Pyrex casserole and cut out in separate servings as an entree for luncheon or dinner.
  • Serve on lettuce leaf with a green vegetable and fresh fruit.

For mousse
3 firm-ripe California avocados (1 1/2 to 1 3/4 lb total)
1 tablespoon plus 1 teaspoon fresh lemon juice
1 (500-mg) vitamin C tablet, crushed to a powder
1/2 teaspoon salt
1 1/4 teaspoons unflavored gelatin (from a 1/4-oz envelope)
3 tablespoons whole milk
1/3 cup chilled heavy cream
For relish
3 tablespoons tarragon white-wine vinegar
1 to 2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 lb grape tomatoes, cut into 1/4-inch dice (1/2 cup)
1/2 lb papaya, peeled, seeded, and cut into 1/4-inch dice (1/2 cup)
2 tablespoons chopped red onion
1 teaspoon finely chopped fresh tarragon

8 (3-oz) ramekins

Steps:

  • Make mousse:
  • Lightly oil ramekins and line bottoms with wax paper or parchment, then oil paper.
  • Quarter, pit, and peel 2 avocados. Purée avocado quarters with 1 tablespoon lemon juice, vitamin C, and salt in a food processor until smooth.
  • Sprinkle gelatin over milk in a small heavy saucepan and let soften 1 minute. Heat over low heat, stirring, until gelatin is dissolved, 1 to 2 minutes, then remove from heat. Add to avocado purée and blend until smooth.
  • Halve, pit, and peel remaining avocado. Cut into 1/4-inch dice and toss with remaining teaspoon lemon juice in a small bowl. Beat cream in a bowl with an electric mixer at medium speed until it just holds soft peaks. Fold in avocado purée gently but thoroughly, then fold in diced avocado. Spoon mousse into ramekins, smoothing tops. Cover surface of each mousse with a piece of plastic wrap, then cover ramekins with plastic wrap. Chill mousse until set, at least 2 hours.
  • Make relish:
  • Whisk together vinegar, sugar (to taste), salt, and pepper in a bowl until sugar is dissolved, then stir in tomatoes, papaya, onion, and tarragon. Let stand at room temperature 1 hour (for flavors to develop).
  • Unmold mousse by running a knife around edge of each ramekin, then invert each onto a plate, discarding paper. Serve with relish.

1 8 oz package cream cheese
2 envelopes unflavored gelatin
1 cup cold water
1 cup mayonnaise
1/2 cup finely diced green pepper
1/4 cup grated onion
1/2 cup finely chopped celery
2 cups shrimp (frozen or canned), mashed

Steps:

  • Heat soup to just below boiling, then add cream cheese and stir until dissolved. In a separate bowl, soften gelatin in cold water, then stir into soup mixture. Add remaining ingredients and pour into lightly oiled 1 1/2 qt mold. Refrigerate at least 4 hours to set. Unmold and serve with crackers.

For the mousse mozzarella
125g mozzarella with its whey
1 tsp olive oil
1 egg white
Salt

1 sheet of gelatin
Zest of half an organic lemon
For the tomato tartare
3 tomatoes Rose Berne
1 small red onion
1 clove of garlic
1 tbsp olive oil
2 tbsp balsamic vinegar cream
Salt
Pepper
For pearls basil
15cl sunflower oil
2 g of agar
9g basil leaves
22 ounces of water

Steps:

  • 1 Fill a small bowl of sunflower oil (for example) and place it in the freezer a few hours before. 2 Soften the gelatin in cold water. Coarsely chop the mozzarella cheese, then add the lemon zest, olive oil, salt and pepper. Heat 1.5 cl whey filtered through a coffee filter to melt into the softened gelatine. Mix the rest then finely chop the mixture in a blender. Install the white snow and incorporate mozzarella. Garnish the top third of glasses and refrigerate for at least an hour. 3 Place the tomatoes a few minutes in hot water. Peel the tomatoes, remove the seeds, rinse under water and cut into small cubes. Chop the onion, crush the garlic and add to the tomatoes. Add olive oil and balsamic cream vinegar and season. Refrigerate. 4 Bring to boil water and agar. Add the basil leaves and stir until they are cooked, then use the hand blender. Remove the oil frozen in the freezer. Fill the syringe with the juice of basil, and drop frozen in oil, drop by drop. Rinse basil ball under water using a small strainer, drain and leave them on the jar

I made this as an appetizer, but if you would like to make it as a dessert, please increase the amount of sweetener. For this recipe, you need to peel the tomatoes to create smooth, creamy texture. 100 ml milk (I used almond milk)
50 ml heavy cream (I used coconut milk creamer.) or 50 ml non-dairy coffee creamer (I used coconut milk creamer.)
3 tomatoes (large)
6 strawberries, stems removed
2 teaspoons agar-agar, powder
2 tablespoons lemon juice
2 tablespoons honey
1/8 teaspoon salt

Steps:

  • In a measuring cup, pour 100 ml milk or milk alternative and heavy cream or heavy cream alternative. Set it on the kitchen counter to bring it to room temperature. You can also use 150 ml milk or milk alternative.
  • Peel the tomatoes (See the above note) and cut them into large chunks.
  • Place tomato chunks and strawberries in a blender and blend until it become a smooth liquid.
  • In a sauce pan, place 100 ml water and agar-agar powder and bring to a boil while whisking.
  • Add about 1 cup of the tomato mixture and keep whisking for a couple of minutes. If you use agar-agar flakes instead of a powder form, you might have to whisk longer (5 - 10 minutes) to let it dissolve. Turn off the heat.
  • Add the remaining tomato mixture, milk mixture, lemon juice, salt and honey. Mix well.
  • Pour into a container (about 8 x 8 inches).
  • When the mixture is cool enough, cover and place the container in the refrigerator to let it set for about 2 hours or overnight.
  • When ready to eat, scoop into a dish, decorate as you like, infuse love and serve!
