Chorizo, Tomato and Cannellini Bean Salad image

This Spanish-inspired salad will bring a tasty summery Mediterranean flavour to your table. The key to this recipe is really good quality chorizo and deliciously ripe vine tomatoes.

1 lb cherry tomatoes, halved
4 scallions, sliced on the diagonal
1 (14 ounce) can cannellini beans, rinsed and drained
extra virgin olive oil
2 tablespoons red wine vinegar
9 ounces chorizo sausage, sliced
1 bunch flat leaf parsley

Steps:

  • Put the tomatoes in a mixing bowl with the scallions and drained cannellini beans.
  • Season with sea salt and a little freshly ground black pepper; then drizzle with some extra virgin olive oil and the vinegar and mix to combine.
  • Heat a frying pan (without any oil - chorizo simply does not need it) and add the chorizo.
  • Cook gently for a couple of minutes on each side. The chorizo will secrete a lot of oil. Do not throw it away! It is delicious if you want to fry a few potatoes in it. Or, add some of the oil to the salad!
  • To serve; transfer the tomato, bean and onion mixture to a serving dish and top with the hot chorizo. Scatter over the chopped parsley and serve at once.

Adapted from The Wine & Food Lover's Diet, this couldn't be simpler. You could start from dried beans and use fresh peas, but it's delicious with beans from th can and peas from the freezer. The cooking time is macerating time.

1/2 cup baby peas (if frozen,thawed)
1 (15 ounce) can cannellini beans, rinsed and drained
1/2 cup mint leaf, packed fresh chopped
1/2 red bell pepper, seeded and chopped
1/2 yellow bell pepper, seeded and chopped
1 garlic clove, minced
2 tablespoons extra virgin olive oil
1 teaspoon red wine vinegar
1 1/2 teaspoons oregano, fresh, f inely chopped (optional)
1/4 cup feta cheese, crumbled
kosher salt & freshly ground black pepper

Steps:

  • In a large serving bowl, combine peas, beans, mint, red and yellow peppers, garlic, oil, vinegar, oregano and feta.
  • Taste for seasoning and adjust with salt and pepper.
  • Let the salad stand for 30 minutes.
  • Toss gently before serving.

A wonderfully refreshing bean salad, great served alongside BBQ meats. Every now and again I'll add in a chopped tomato or two.

3 (400 g) cans cannellini or 3 (400 g) cans butter beans
2 garlic cloves
1/2 cup extra virgin olive oil
1 lemon, juice of
1/2 cup basil leaves
1/2 cup fresh parsley leaves
1 teaspoon ground cumin
sea salt
fresh ground black pepper

Steps:

  • Drain the beans and rinse under cold water, drain well.
  • Into a food processor or blender, put the garlic, olive oil, lemon juice, basil leaves, parsley leaves, cumin, salt and pepper.
  • Pulse for a few seconds so that there is still texture. Put the beans into a bowl and pour over the dressing, toss well.
  • If possible leave for at least 30 minutes at room temperature before serving -- but can be eaten right away and still be very flavoursome.

2 cans (15 ounces each) cannellini beans, rinsed and drained
3 celery ribs with leaves, sliced
3/4 cup chopped red onion
1/2 cup chopped sweet red pepper
1/2 cup minced fresh parsley
1/4 cup chopped green onions
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, toss the beans, celery, red onion, red pepper, parsley and green onions. In a small bowl, combine the oil, vinegar, salt and pepper. Pour over salad and toss to coat. Cover and refrigerate for 1 hour or until chilled.

4 ripe tomatoes
2 (400 g) cans cannellini beans, drained and rinsed
2 garlic cloves, finely chopped
2/3 cup mint leaf, torn
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar

  • Blanch 4 ripe tomatoes in boiling water for 30 seconds, drain and rinse under cold running water.
  • Remove skins and coarsely chop.
