1 small fennel bulb
2 tablespoons good olive oil
2 tablespoons fresh lemon juice
1 tablespoon cider vinegar
1 teaspoon kosher salt

Steps:

  • Core the tomatoes and cut into wedges. Remove the top of the fennel (save some fronds for garnish) and slice the bulb very thinly crosswise with a knife or on a mandoline.
  • Toss the tomatoes and fennel in a bowl with the olive oil, lemon juice, vinegar, salt, and pepper. Garnish with 2 tablespoons chopped fennel fronds, season to taste, and serve.

Sunny's Easy Grilled London Broil with Tomato and Fennel Salad image

2 tablespoons chili powder
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
One 2- to 3-pound London broil
Olive oil, for drizzling
2 pints cherry tomatoes, halved
1/2 cup fresh Italian parsley leaves, gently chopped
2 fennel bulbs, sliced thin on a mandoline, fronds chopped
1 clove garlic, grated on a rasp grater
2 tablespoons agave nectar
2 tablespoons red wine vinegar
2 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the steak: In a small bowl, mix together the chili powder, salt and pepper. Sprinkle it all over the London broil and rub. Wrap tightly with plastic wrap and rest for 2 hours.
  • For the salad: In a large bowl, add the tomatoes, parsley, fennel bulb and fronds and garlic. In a small bowl, whisk together the agave nectar, red wine vinegar, olive oil, a pinch of salt and a few grinds of black pepper. Pour this mixture over the vegetables and toss. Rest at room temperature, tossing halfway through, for about 2 hours.
  • Preheat a grill to high heat and leave one side of the grill off for indirect heat. Unwrap the steak and drizzle it with olive oil. Place the steak over the direct heat of the grill and cook for 5 to 6 minutes. Flip the steak, moving it to the indirect heat side, close the grill and cook until the internal temperature registers 130 degrees F for medium rare. Remove from the grill, cover gently with aluminum foil and rest for 10 minutes.
  • Slice the meat against the grain, top with the tomato salad and serve.

1 tablespoon toasted fennel seed
1 tablespoon toasted coriander seed
2 teaspoons whole white peppercorns
1 fennel bulb, cleaned, cored and julienned
1 medium red onion, julienned
12 French breakfast radishes, thinly sliced (these radishes, longer and milder than familiar round radishes, are sold at the Union Square Greenmarket)
Fine sea salt to taste
Freshly ground pepper to taste
Dashes of balsamic vinegar
1/2 cup herb olive oil or plain extra-virgin olive oil
1 1/2 pints tiny heirloom tomatoes (at least 3 kinds, like Sweet 100's, Sunburst or Yellow Gens)
1 minced shallot
10 basil leaves, shredded
1 yellow beefsteak tomato
1 red beefsteak tomato
2 bunches arugula, stemmed, washed and dried
3 to 4 tablespoons minced garlic
chives
6 double sprigs basil
1 baguette, optional

Steps:

  • With the side of a sharp heavy knife, or with a mortar and pestle, crush the fennel seed, coriander seed and peppercorns. Put the julienned fennel bulb, red onion and sliced radishes in a bowl and mix with half the spices. Add a pinch of salt and pepper, a dash of balsamic and a tablespoon of olive oil.
  • Wash and dry the tiny heirloom tomatoes and add to the fennel mix, with the minced shallot and the basil. Adjust the seasoning again, adding more ground spices to taste. Toss together and chill.
  • Cut the yellow and red beefsteak tomatoes into 8 wedges each. Season with salt, pepper and a little olive oil. Set aside.
  • Toss the arugula with a little olive oil and place on a large platter. Transfer the fennel and tomato salad and all of its juices to the middle of the bed of arugula. Arrange the yellow and red beefsteak wedges around the salad. Sprinkle minced garlic chives over the whole salad. Garnish with double basil sprigs.
  • If using the baguette, cut into small slices, toast them if desired and arrange as a border around the salad.

10 ounces tuna belly or fluke, sliced diagonally with the grain as thinly as possible
3/4 pound fennel bulb
3 scallions, trimmed and thinly sliced, including a bit of green ( 1/4 packed cup)
3 tablespoons plus 1/3 cup extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon chopped spearmint
Fine sea salt to taste
Freshly ground pepper to taste
1 pint wild or cultivated currant tomatoes
13 ounces Tangerine or yellow tomatoes
1 tablespoon sherry vinegar
1/8 to 1/4 teaspoon ground cumin
1/4 teaspoon minced garlic
3 ounces mesclun, washed and dried
3 tablespoons sherry vinegar

Steps:

  • Put the fish slices in a large bowl. Pull off and discard the two tough outer layers of the fennel bulb. Cut off and discard the stalks. Cut out the tough core; cut the bulb in half and then across in paper-thin slices. Add the fennel and the scallion slices to the fish. In a small bowl, mix together 3 tablespoons olive oil with the lemon juice, the chopped mint and a pinch of salt and pepper. Mix gently with the fish. Cover and set in a chilled place for 10 minutes, no longer.
  • Set aside 36 of the tiny currant tomatoes. Put the rest, along with the pieces of Tangerine tomatoes, through a food mill set over a 2-quart stainless-steel bowl. In a small bowl, mix the sherry vinegar, 1/8 teaspoon of cumin and minced garlic. Slowly whisk in 1/3 cup olive oil until emulsified. Whisk into the liquefied tomatoes. Add more cumin if needed and sea salt to taste.
  • To assemble, divide the Tangerine tomato coulis among six 10-inch dinner plates, making a neat pool on the bottom of each plate. Mix the mesclun with the marinated tuna, adding 3 tablespoons of the sherry vinegar or to taste.
  • Divide the tuna salad among the plates, putting a mound in the center of each. Near the edge of each plate, make a border of 6 evenly spaced currant tomatoes.

2 lemons
2 tbsp extra virgin olive oil
pinch of sugar
500g mixed tomatoes (I used cherry tomatoes and some larger ones)
3 fennel bulbs
100g pomegranate seeds
1⁄2 small pack tarragon leaves
1⁄2 small pack parsley leaves
1⁄2 small pack mint leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Slice 1 lemon into thin rounds and spread out on the baking tray, drizzle over 1/2 tbsp oil and sprinkle over the sugar. Roast for 20-25 mins until shrivelled and caramelised in places. Keep an eye on them - you may have to take some out the oven before the others are done. These can be made in the morning and kept at room temperature.
  • While the lemons are cooking, roughly chop the tomatoes and thinly slice the fennel, saving the fronds. Put in a bowl with the remaining olive oil, juice from the other lemon and pomegranate seeds. Season to taste, then give everything a good mix.
  • When you're ready to serve, roughly chop all the herbs and mix them into the salad along with the roasted lemons and fennel fronds.

1/2 cup extra virgin olive oil
2 tablespoons wine vinegar

1/4 teaspoon oregano
1/4 teaspoon crushed red pepper flakes
2 cups diced tomatoes
1 green bell pepper, diced
1 small bunch green onions, chopped
1/4 cup chopped basil leaves
Garnish: Romano cheese shavings

Steps:

  • Brush corn and fennel slices with 2 tablespoons of the olive oil. Place vegetables on a heated grill and grill until corn is a light golden brown and fennel is crisp tender. Remove vegetables from grill and set aside to cool. Meanwhile, in a large bowl whisk together the remaining olive oil, vinegar, lemon juice, honey, salt, black pepper, oregano and crushed red pepper flakes. When corn and fennel are cool, cut off the corn kernels and add to bowl with vinaigrette. Then coarsely chop the fennel and add to the bowl along with the remaining ingredients, except for the Romano cheese shavings. Mix lightly to coat evenly. Spoon onto serving platter, top with Romano cheese shavings and serve room temperature. Serves 6.

Steps:

  • For pickled fennel:
  • Toast star anise, aniseed, coriander seeds, fennel seeds, and cumin seeds in a small skillet over medium-low heat, stirring often, until fragrant, about 3 minutes. Bundle toasted spices, lemongrass, and orange zest in a piece of cheesecloth and tie with kitchen twine to make a sachet. Place sachet and fennel in a 1-quart jar or bowl.
  • Bring vinegar, sugar, salt, and 1/2 cup water to a boil in a medium saucepan, stirring to dissolve sugar and salt. Pour vinegar mixture over sachet and fennel and let cool; discard sachet. Cover fennel and chill at least 12 hours.
  • DO AHEAD: Pickled fennel can be made 2 weeks ahead. Keep chilled.
  • For assembly:
  • Combine large and cherry tomatoes, vinegar, and 6 tablespoons oil in a medium bowl; season with salt and pepper. Let sit at room temperature 30 minutes.
  • Before serving, heat remaining 1 tablespoon oil in a medium skillet over high heat. Cook Cubanelle peppers, tossing often, until charred in spots, about 4 minutes.
  • Serve tomato salad topped with peppers, pickled fennel, and fennel fronds.

8 ounces roma tomatoes, seeded and thinly sliced lengthwise
1/2 teaspoon lemon zest, finely minced
1 1/2 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons pickled capers, drained
1 1/2 ounces feta cheese, crumbled

Steps:

  • Trim the top of each fennel flush with the bulb, discard stalks; remove and discard tough outer portion (usually just the first layer).
  • Quarter bulbs lengthwise, then slice lengthwise as thinly as you can (with a knife, mandoline is not necessary).
  • Combine in the bottom of a large bowl the capers, lemon zest, lemon juice, olive oil, salt and pepper and mix well.
  • To this dressing, add in the capers and the feta.
  • Add sliced fennel and tomatoes, and mix well.

1 small clove garlic, finely minced
1 tablespoon fresh lemon juice
3 tablespoons extra-virgin olive oil
2/3 cup halved cherry tomatoes or 1 medium, ripe tomato cut in small wedges
1/3 cup very finely sliced fennel bulb
2 medium boneless, skinless chicken breast halves
1/4 cup all-purpose flour
1 egg, beaten
1 cup panko bread crumbs
2 tablespoons olive oil
1 tablespoon butter
About 3 cups salad greens (baby arugula, spinach, tatsoi and other full-flavored but tender greens are nice)
Small handful fresh, tender herb sprigs, such as parsley, dill, chervil, basil or mint (optional)
2 wedges lemon

Steps:

  • In a small bowl, whisk together the mustard, some salt and pepper, garlic and lemon juice. Taste to see that the seasoning is zippy enough, then whisk in the extra-virgin olive oil. Toss the dressing with the tomatoes and fennel. Set aside. If the chicken breasts are very thin, pound them to an even thickness of about 3/8 inch. If they're on the thick side, butterfly them by placing them on the work surface and, with your knife parallel to the counter, cutting them almost in half but not all the way through, so they open like a book. Then pound out any uneven spots so the whole thing is about 3/8 inch thick. Get set up for coating the chicken because this can be messy if you're not organized: Put the flour on a plate, the egg in a shallow bowl or plate, and the crumbs on another plate. Season both sides of a chicken cutlet with salt and pepper, then dredge in the flour, shaking off excess, then in the egg, and then right into the crumbs, patting to coat the whole thing. Repeat with the other cutlet. Heat a very large skillet over medium-high heat, and add the oil and butter. When the butter stops foaming, add the chicken. (If your skillet isn't large enough to hold both cutlets comfortably, cook them separately, adding more oil and butter as needed.) Saute cutlets until the crust gets nicely browned (about 2 minutes), carefully flip and cook the other side. If the cutlets are thin, they will cook quickly. Be careful not to overcook them. Drain the cutlets for a few seconds on paper towels, then transfer to dinner plates. Red Wine Vinaigrette:

  • Heat grill to medium-high heat.
  • Lightly brush fennel slices with oil; season with salt and pepper, to taste. Grill 14 to 15 minutes, turning once, or until tender crisp. Cut slices in half.
  • Combine salad blend, tomatoes from pouch, fennel and bacon in large bowl. Toss with Red Wine Vinaigrette, to taste.
  • Red Wine Vinaigrette:
  • Whisk together 2 tablespoons lime juice, 2 tablespoons orange juice, 2 tablespoons olive oil, 2 teaspoons sugar, 1 teaspoon red wine vinegar, 1/8 teaspoon ground cayenne pepper and salt, to taste until well blended. Makes about 1/3 cup.

How to make Sunny's Easy Grilled London Broil with Tomato and Fennel Salad

2 tablespoons chili powder
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
One 2- to 3-pound London broil
Olive oil, for drizzling
2 pints cherry tomatoes, halved
1/2 cup fresh Italian parsley leaves, gently chopped
2 fennel bulbs, sliced thin on a mandoline, fronds chopped
1 clove garlic, grated on a rasp grater
2 tablespoons agave nectar
2 tablespoons red wine vinegar
2 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the steak: In a small bowl, mix together the chili powder, salt and pepper. Sprinkle it all over the London broil and rub. Wrap tightly with plastic wrap and rest for 2 hours.
  • For the salad: In a large bowl, add the tomatoes, parsley, fennel bulb and fronds and garlic. In a small bowl, whisk together the agave nectar, red wine vinegar, olive oil, a pinch of salt and a few grinds of black pepper. Pour this mixture over the vegetables and toss. Rest at room temperature, tossing halfway through, for about 2 hours.
  • Preheat a grill to high heat and leave one side of the grill off for indirect heat. Unwrap the steak and drizzle it with olive oil. Place the steak over the direct heat of the grill and cook for 5 to 6 minutes. Flip the steak, moving it to the indirect heat side, close the grill and cook until the internal temperature registers 130 degrees F for medium rare. Remove from the grill, cover gently with aluminum foil and rest for 10 minutes.
  • Slice the meat against the grain, top with the tomato salad and serve.

2 yellow tomatoes, sliced into 8 pieces
2 red tomatoes, sliced into 8 pieces
1 head fennel, shaved
2 ounces red onion, shaved
4 teaspoons basil, chiffonade
4 ounces extra-virgin olive oil
4 ounces red wine vinegar
kosher salt
coarse black pepper

Steps:

  • Place fennel in the center of serving plate. Surround with the tomatoes, alternating colors.
  • Drizzle with oil and vinegar, salt and pepper. Garnish with red onion and basil.

1 1/2 # heirloom tomatoes
1 small fennel bulb
2 T good olive oil
1 T cider vinegar
1 t salt
1/2 t freshly ground black pepper

Steps:

  • Core the tomatoes and cut into wedges. Remove the top of the fennel (save some fronds for garnish) and slice the bulb very thinly crosswise with a knife or mandoline. Toss the tomatoes and fennel in a bowl with the olive oil, lemon juice, vinegar, salt, and pepper. Garnish with 2 T chopped fennel fronds. Season to taste.
