Oatmeal Thins image

My aunt sends these cookies every Christmas and they are quickly devoured! They have a nice, buttery, cinnamon, oatmeal taste, and taste really good frozen (mmm...my favorite!). Sometimes these end up crispier and sometimes they're softer, but anyway they come out they're delicious!

Number Of Ingredients 10

1 cup butter or 1 cup margarine
1 cup sugar
1/2 cup brown sugar
1 egg (beaten)
1 teaspoon baking soda
1 teaspoon cinnamon
1 1/2 cups flour
1 teaspoon vanilla
1 1/2 cups quick oats
3/4 cup pecans (finely chopped)

Steps:

  • Cream together butter, sugar, and brown sugar.
  • Mix in egg.
  • Mix in baking soda, cinnamon, and flour.
  • Stir in vanilla.
  • Blend in oats and nuts.
  • Roll into walnut sized balls (about 1 inch).
  • Chill at least 1 hour.
  • Place balls on greased cookie sheet and press flat with glass buttered and dipped in sugar.
  • Bake at 350 for 10 minutes.
  • I'm not sure how many this makes, but it always seems to be a lot!
