This is Day 21: Breakfast, on the 21 Day Wonder Diet. These are totally delicious, and easily doubled to feed the family! This breakfast is to be followed by a mid-morning snack of 1 muesli muffin (See day 20: Breakfast, Recipe #366085 ).

2 slices shortcut bacon, rashers chopped finely
2 eggs
2 slices rye bread, toasted
1 small tomatoes, chopped finely

Steps:

  • Preheat oven to 200°C.
  • Divide bacon between 2 muffin pan holes. Crack an egg into each hole. Bake about 15 minutes, or until egg is set. Loosen edges of pies from pan.
  • Serve pies on toast, sprinkled with tomato.

1/2 cup bran and cranberry muesli, Bran & Cranberry Muesli (21 Day Wonder Diet: Day 4)
1 teaspoon vegetable oil
1/2 cup skim-milk natural yogurt
1 egg
2/3 cup self-rising flour
2 teaspoons orange rind, finely grated
1/4 teaspoon mixed spice
1 tablespoon demerara sugar
1 tablespoon low-fat ricotta

Steps:

  • Preheat oven to 180°C Spray 6 muffin pan holes with cooking oil, or line with paper cases.
  • Combine muesli, oil, yogurt, egg, flour, rind and spice in medium bowl. Mix with fork.
  • Divide mixture among pan holes; sprinkle with sugar. Bake about 25 minutes.
  • Serve 2 muffins each with cheese.

1/3 cup brown rice
cooking spray
1 small brown onion, finely chopped
1 garlic clove, crushed
180 g ground beef
1 teaspoon ground cumin
1 teaspoon dried chili pepper flakes
400 g diced tomatoes
2 tablespoons tomato paste
1/2 cup beef stock
125 g four-bean mix, rinsed and drained
2 tablespoons skim-milk natural yogurt
1/4 cup flat leaf parsley, coarsley chopped

Steps:

  • Cook rice in medium saucepan of boiling water until tender; drain.
  • Meanwhile, spray medium frying pan with cooking oil; cook onion and garlic over heat, stirring, until onon softens. Add beef and spices; cook, stirring, until beef is browned.
  • Add undrained tomatoes, paste and stock; bring to a boil. Reduce heat; simmer, covered, 10 minutes. Uncover; simmer about 10 minutes or until mixture thickens slightly. Stir in beans.
  • Serve rice and chilli con carne topped with yogurt. Sprinkle with parsley.

240 g baby new potatoes, about 6
100 g green beans, trimmed & halved crossways
2 tablespoons skim-milk natural yogurt
1 teaspoon finely grated lemon rind
2 teaspoons lemon juice
185 g tuna in water, drained and flaked
3 green onions, sliced finely
1 tablespoon flat leaf parsley, coarsley chopped
2 eggs, hard-boiled and quartered

Steps:

  • Boil, steam, or microwave potatoes and beans, seperately, until tender;drain, cool.
  • Meanwhile, make dressing by combining yogurt, rind and juice in medium bowl.
  • Quarter potatoes; add to dressing with tuna, onion and parsley, stir to combine. Serve salad topped with egg.

2 tablespoons low-fat ricotta cheese
1 tablespoon fresh dill, coarsely chopped

20 g baby spinach leaves

  • Combine tuna, celery, onion, dill and capers in medium bowl.
