Italian Chicken and Vegetables Over Rice image

4 skinless boneless chicken breasts
3 Tbsp olive oil
3 cups rice
2 Tbsp Italian seasoning
1 tsp garlic powder
2 package s frozen vegetables (preferably stir fry varieties)
1 cup water
2 cans cream of mushroom soup

Steps:

  • Cut clean dry chicken into small chunks, set aside. Start oil heating and start cooking rice.
  • Cook chicken until cooked on both sides evenly. Sprinkle on Italian seasoning and garlic powder.
  • Add vegetables and water, cook until vegetables are tender. Add soup and mix well. Cook for additional 5-10 minutes. Serve chicken mixture over cooked rice.
