- Bring a large pot of water to a boil (about 4 quarts). Add rice and boil for 30-40 minutes, or until rice is tender. Drain and rinse rice under cold water.
- In a large bowl add cooked rice, cucumber, tomatoes, feta, basil, and parsley; set aside.
- In a small mixing bowl add the juice of the lemon (discarding any seeds), vinegar, salt, and pepper. Slowly pour in the olive oil while whisking to make the dressing.

- 1. Preheat oven to 350, spread walnuts on a baking sheet and toast for about 10 minutes. Let cool and then chop. 2. Peel and core the cucumber and cut into 1/2 inch cubes. Core the peppers and cut into 1/2 inch pieces. Set aside. 3.Fill a large sauce pan 2/3 full of water, bring to a boil.Drop in the pasta and simmer 3-5 minutes. - Bring quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, simmer until tender, about 10-15 minutes. Tip: Do not overcook. Chill in the refrigerator to cool. - In a small frying pan, saute the garlic in the 1 tbls. olive oil over medium high heat. Stir often, until the garlic is caramelized and slightly crunchy. Watch carefully! Set aside and allow to cool to room temperature.

GREEK CUCUMBER AND TOMATO SALAD WITH FETA AND PISTACHIO NUTS

- Place garbanzo beans in a large gallon size zip-loc bag. Then in a small mixing bowl, whisk the olive oil and vinegar. Pour dressing over the garbanzo beans, and marinate beans in refrigerator 4-6 hours or overnight. When you're ready to prepare and serve the salad, remove beans from refrigerator and drain them in a colander, reserving all the dressing. Taste dressing for seasoning, and if you don't have at least 3 T dressing, add a bit more balsamic vinegar and olive oil. Then, dice the tomatoes. Cut cucumbers into fourths lengthwise, and then into pieces about 1/2 inch wide. Wash basil, spin dry, and then coarsely chop. Combine tomatoes, cucumbers, garbanzo beans and basil and toss with reserved salad dressing. Next, season the salad with salt and fresh ground black pepper. To serve, divide equal portions among individual serving plates, and top with crumbled Feta cheese and pistachio nuts.

- Garnish with the lemon verbena leaves.
- Tip: do not garnish the salad with the verbena leaves until just before serving. Cut lemon verbena leaves wilt very quickly. Keep cut verbena leaves fresh by placing them in a bowl of water until ready to garnish.
TOMATO SALAD WITH CUCUMBER AND FETA
Serve this on a large fancy serving dish and sprinkle generously with salt and pepper. I have served this many times at my dinner parties... not only is this beautiful to look at, it is absolutely delicious!. Olives can be replaced with capers if desired, and oregano can be replaced with fresh basil. Plan ahead this salad needs to be left out at room temperature for 1 hour or refrigerated for 3 hours before serving. Another variation for this salad is layer mozzarella cheese in between the veggies and omit the feta, it is just as good both ways, but I have to say that the feta is better. Be certain to only use an firm English cucumber for this, otherwise the salad will get watery. This salad should serve up to 6 people, increase all ingredients if serving more. If you are serving this chilled I strongly suggest to let the salad sit out for 1 hour at room temperature before serving, the tomatoes will soften and taste better, tomatoes really should not be refrigerated, they permanently loose their taste and texture. You will love this salad!
