1/4 cup all-purpose flour
1 large onion, chopped
1 large green pepper, chopped
2 celery ribs, chopped
3 green onions, chopped
2 teaspoons canola oil
3 garlic cloves, minced
2 cups water
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
2 cups cooked brown rice
2 cups cubed cooked chicken breast
1 can (14-1/2 ounces) diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried thyme
1 bay leaf
3/4 teaspoon salt

Steps:

  • In a small nonstick skillet, brown flour over medium-high heat; set aside. In a Dutch oven, saute the onion, green pepper, celery and green onions in oil until tender. Add garlic; cook 1 minute longer. Stir in flour until blended. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Discard bay leaf.

This is a soup my mom used to make for me any time I caught a cold. She used to call it French Canadian penicillin (she was 100% French Canadian). This is one of my favorite comfort foods and is truly wonderful when feeling under the weather. You'll want to play with it to get the thickness and garlic level right for your tastes, but it is well worth it.

6 cups water, or as needed
1 cup uncooked white rice
1 small onion, chopped
2 tablespoons chicken bouillon granules
1 tablespoon dried parsley
1 pinch garlic powder, or to taste
2 (14.5 ounce) cans stewed tomatoes
1 (10.5 ounce) can condensed chicken rice soup

Steps:

  • Place water, rice, onion, bouillon granules, parsley, and garlic powder in a large pot. Bring to a boil; reduce heat and simmer until rice is tender, about 20 minutes.
  • Stir tomatoes and chicken rice soup into rice mixture; return to a boil. Thin soup with water as desired.

1 tablespoon olive oil
24 ounces boneless skinless chicken breasts
1 yellow onion, finely chopped
3 carrots, peeled and sliced 1/4 inch thick
3 garlic cloves, minced
1 teaspoon dried thyme
1 cup long grain rice
4 cups chicken stock
1 (28 ounce) can diced tomatoes
1 1/2 teaspoons salt
1 teaspoon black pepper
1/4 cup fresh parsley, chopped
2 celery ribs, sliced 1/4 inch thick

Steps:

  • Pre-heat pressure cooker on the Brown setting.
  • Dice chicken into bite-size pieces.
  • Add the olive oil to the pressure cooker and brown the chicken pieces briefly, seasoning with salt and pepper.
  • Add the onion, carrots, celery, garlic and thyme; saute for 2 to 3 minutes.
  • Stir in the rice, and pour in the stock and tomatoes.
  • Season with salt and pepper to taste.
  • Lock lid in place, and cook on HIGH for 8 minutes.
  • Reduce the pressure with the quick-release method, and carefully remove the lid.
  • Add the parsley, adjust seasoning if needed and serve.

◾4 Large Boneless Skinless Chicken Breasts, cut into 1 inch cubes
◾1 Can (46 oz.) V-8 Tomato Juice
◾1 Medium Onion, diced and sautéed
◾1 Tablespoon Olive Oil
◾2 (14.5 oz.) Cans Diced Tomatoes, with liquid
◾1 Roasted Red Pepper, diced
◾2 Tablespoons Montreal Chicken Spice
◾3 Tablespoons Freshly Ground Black Pepper
◾4 Cups Cooked Rice

Steps:

  • 1. In a medium skillet sauté the Onions in the Olive Oil until tender. Then add them to the slow cooker. 2. Next add the Tomato Juice, Chicken, Roasted Red Pepper, Canned Tomatoes, Montreal Chicken Spice and Pepper to the slow cooker and stir all ingredients together. 3. Set the slow cooker on low for 4-6 hours. Continue to stir the Soup as it cooks every hour or so. The newer slow cookers cook differently than the older models so look for the soup to be bubbly-not boiling and the Chicken to be cooked. 4.
