- In a small saucepan, bring water to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5-10 minutes or until water is absorbed. Fluff with a fork; cool., In a large bowl, combine the couscous, tomatoes and basil. In a small bowl, whisk the oil, vinegar, salt and pepper. Pour over salad; toss to coat. Refrigerate until chilled.

TOMATO BASIL SALAD

- In a small skillet, heat the olive oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute and removing from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed.
TOMATO, CANTALOUPE, AND BASIL SALAD WITH TOMATO WATER
Use only perfectly ripe tomatoes for this dish. They will yield much more liquid to ladle around each colorful serving.

- Puree beefsteak tomatoes and 3 tablespoons salt in a food processor until smooth. Line a bowl with double thickness of cheesecloth; transfer puree to bowl. Using a melon baller; scoop out as much cantaloupe as possible into balls; set aside. Scrape out remaining cantaloupe; puree in a food processor. Add to tomato puree. Gather cheesecloth and tie into a bundle. Suspend bundle from a large wooden spoon; hang over bowl to collect the juices for 2 hours (to yield 4 cups liquid).
- Core heirloom tomatoes; slice into wedges and rounds. Slice cherry tomatoes in half. Place tomatoes in a bowl; add melon balls, basil, and olive oil, and season with salt and pepper. Toss to combine.
- Divide among shallow bowls, mounding salad in center of each. Ladle tomato water around salad and serve immediately.

- Cut tomatoes in quarters or eighths, depending on size.
- Roughly chop basil and place in glass container.
- Add garlic.
- Mix together thoroughly balsamic vinegar and olive oil.
- (A couple of tbsp of each), and pour over basil-garlic mix.
- Season with salt and pepper.
- Cover tightly and marinate at room temperature for 6-8 hours.
- Do not refrigerate before serving.
