FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

Steps:
- Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
- Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
- Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

Steps:
- Prepare Tomatoes: Boil a large pot of water and prepare a bowl of ice water.
- Cut an X in the bottom of each vine ripe totmatoe.
- Place in boiling water for 30 seconds or until skin begins to peel back.
- Immediately remove and place in ice water.
- When all tomatoes are prepare, remove skins, core, cut each in half, and squeeze to remove seeds and pulp.
- Coarse chop tomatoes and set aside.
- In a large saute pan or skillet brown sausage and prosciutto.
- Add onions and galic and saute until onions begin to appear translucent.
- Deglaze pan with 1/4 cup of white wine and allow to reduce until liquid is almost gone.
- Add tomatoes and herbs and allow to simmer for 45 minutes.
- About 15 minutes before done add a generous amount of parmesan cheese to help thicken and flavor sauce.
- Prepare Angel Hair Pasta per directions cook until al dente.
- Drain and add to sauce, mix and transfer to large pasta bowl.
- Serve with fresh grated parmesan cheese.

Steps:
- Place a large heavy skillet over medium heat, allow pan to heat up.
- Add oil and heat 1 minute.
- Add garlic and sauté 2 minutes, stirring constantly.
- Add scallops, season with salt, pepper, and seasonings to taste, and cook for 3 minutes or until opaque.
- Add tomatoes and basil and heat until throughly warmed, about 3 minutes, stirring constantly.
- Remove from heat, taste and adjust seasonings per your preference.
- Add pasta to the pan, toss to combine well, and enjoy.

- Sauté garlic and shallot in oil over medium heat until garlic golden and shallot wilted.

20 MINUTE CHERRY TOMATO AND BASIL ANGEL HAIR PASTA
Steps:
- 1.Bring a large pot of water to a rolling boil. Add in a good handful of salt. Add pasta. Cook aldente or until pasta is slightly undercooked. Using tongs remove pasta from water into a colander. Reserve cooking liquid. 2.While pasta is cooking, add garlic and olive oil to a very large skillet. Turn the heat on medium and cook until garlic becomes soft, about two minutes. 3.Turn the heat to a medium-high and add tomatoes and salt. Cook two minutes. 4.Add 1/2 cup of starchy cooking liquid leftover from pasta. Bring the mixture to a boil and reduce to a simmer for five minutes - the tomatoes should be starting to burst. If they haven't gently push on them using the back of a wooden spoon. You only want about half to burst. Add pasta, cook another two minutes. 5.Turn the heat off, add basil and parmesan cheese. Toss to coat. If needed add more starchy pasta water. 6.Season to taste with salt and pepper. 7.Serve with extra grated parmesan cheese.

Steps:
- Cook bacon in large skillet until crisp. Meanwhile, cook pasta in large saucepan as directed on package, omitting salt.
- Remove bacon from skillet; drain on paper towels. Discard drippings from skillet. Add onions to skillet; cook 5 to 6 min. or until crisp-tender, stirring occasionally. Drain tomatoes, reserving 1/2 cup liquid. Add tomatoes, reserved liquid and crushed red pepper to onions; simmer 3 min. or until heated through, stirring occasionally.
- Drain pasta; return to pan. Add tomato mixture, bacon and basil; toss to coat. Add mozzarella; mix lightly. Serve topped with Parmesan.
