1/2 medium ripe avocado, peeled and mashed
4 slices whole wheat bread, toasted
1 medium tomato, sliced
2 tablespoons finely chopped shallot
1/4 cup hummus

Steps:

  • Spread avocado over 2 slices of toast. Top with tomato and shallot. Spread hummus over remaining toast slices; place on top of avocado toast, facedown on top of tomato layer.

2 to 3 tablespoons creamy Dijon mustard-mayonnaise spread
1 medium avocado, pitted, peeled and thinly sliced
1 medium tomato, thinly sliced
4 slices (1 oz each) Colby-Monterey Jack cheese blend
2 tablespoons butter or margarine

Steps:

  • Spread each slice of bread with mustard-mayonnaise spread. Top 4 slices with avocado, tomato and cheese. Top with remaining bread slices, spread side down.
  • In 12-inch skillet, melt butter over medium heat. Add sandwiches; cover and cook 4 to 5 minutes, turning once, until both sides are crisp and cheese is melted.

Steak Sandwiches With Tomato-Avocado Salsa image

This take on a barbecue basic will not only make your brown-bag lunch jealous, but will also have the neighbours lining up for seconds and thirds. Rustic and easy to make, this feast (as seen in Walmart Live Better magazine) offers a satisfying meal for both parents and kids.

2 strips loin steaks
1 cup cherry tomatoes
1/4 cup finely chopped red onion
1/2 teaspoon dried chili pepper flakes
1 large garlic clove, minced
1/2 teaspoon ground cumin
1 pinch salt and black pepper
1 tablespoon Worcestershire sauce or 1 tablespoon hot pepper sauce
2 tablespoons butter, at room temperature
4 -8 thick slices italian-style white bread
1 ripe firm avocado
2 teaspoons lime juice

Steps:

  • Remove steaks from refrigerator and let warm to room temperature. For salsa, quarter tomatoes and place in a bowl. Sprinkle with onion, chili peppers, garlic, cumin and 1/4 tsp salt. Stir and set aside.
  • Oil grill and preheat barbecue to medium-high. Season both sides of steak with a sprinkle of salt and pepper, and Worcestershire, if using; rub inches Barbecue until meat gives slight resistance when pressed, about 4 minutes per side for 1inch thick steaks if you like them medium-rare.

ounces reduced-fat Monterey Jack cheese, sliced

Steps:

  • In a small bowl use a fork to mash together avocado, lemon juice, cumin, and salt until smooth. Stir in parsley. Set aside. Top four of the bread slices with the cheese. Spread with the avocado mixture and top with tomato slices. Place the remaining bread slices on top of tomato slices. Spread top of the bread slices lightly with half of the butter. Heat a large nonstick griddle or 12-inch skillet over medium-high heat. Carefully add sandwiches, buttered sides down. Very carefully spread tops with the remaining butter. Cook for 4 to 6 minutes or until golden, turning once.
